Also very versatile because you can adapt it to any occasion by virtue of added ingredients -- chopped toasted almonds or pistachios, shaved chocolate, chocolate curls, toasted coconut or maraschino cherries on top. For Christmas add chopped green and red glaceed cherries between layers and on top.

1 (3.4 ounce) package instant pistachio pudding mix
2 cups cold milk
1 pint heavy cream
2 tablespoons white sugar
1 (9 ounce) package chocolate wafers
10 chocolate-covered almond buttercrunch candies, crushed

Steps:

  • Prepare pudding with milk as directed on package. Chill in refrigerator.
  • Whip cream with sugar until stiff peaks form. Fold one-quarter of whipped cream into pudding.
  • In a 9x13 inch dish, spread a thin layer of pudding mixture. Top with a layer of wafers. Spread one-third of whipped cream over wafers. Sprinkle one-third of crushed candy over whipped cream. Repeat layers until all ingredients are used. Chill 2 hours before serving.

  • Preheat oven to 350.
  • Cut butter into flour.
  • Add cheese and seasonings.
  • Fold in cereal.
  • Drop by small spoonfuls on ungreased cookie sheets and flatten with back of spoon.

1/2 cup butter, at room temperature
2 cups grated sharp cheddar cheese
1 cup all-purpose flour
1 teaspoon salt
1/2 teaspoon grated pepper
1/4 teaspoon cayenne pepper
1 cup chopped pistachio nut

Steps:

  • In a proccesor or electic mixer beat together the butter and cheese. Then add 1 cup of flour and mix. In a seperate bowl combine the, salt and black and cayenne pepper. Add to the cheese mixture and beat until blended. Stir in the pistachios.
  • Turn the dough onto a floured surface and divide in half. Shape each piece into a log and 1 inch across. Wrap in plastic wrap and chill until firm.
  • Preheat oven to 350 degrees.
  • Cut the chilled dough into 1/4 slices and place them about 2 inches apart on ungreased cookie sheet. Bake for 10 to 12 minutes, until golden brown around the edges.
  • Transfer to a rack to cool.

1/2 cup BREAKSTONE'S Reduced Fat or KNUDSEN Light Sour Cream
1 pkg. (1 oz.) JELL-O Pistachio Flavor Sugar Free Fat Free Instant Pudding
2 eggs
1/4 cup chopped pistachios

Steps:

  • Heat oven to 325°F.
  • Place 1 wafer in each of 12 paper-lined muffin cups.
  • Beat Neufchatel, sugar, flour and milk with mixer until blended. Add sour cream; mix well. Blend in dry pudding mix. Add eggs, 1 at a time, mixing on low speed after each just until blended. Spoon into prepared muffin cups; sprinkle with nuts.
  • Bake 25 to 30 min. or until centers are almost set. Cool completely.

Everyone simply loves these because they are extra crunchy from the addition of rice cereal. I strongly suggest serving these round wafers alongside a dish of pepper jelly and a block of softened cream cheese or log of goat cheese. Smear a little cheese on a wafer and top with a dab of the jelly to form a perfect bite. Repeat often. Luckily this recipe makes about 4 dozen wafers, so you might have just enough to go around. 2 cups (8 ounces) freshly grated extra-sharp Cheddar cheese
1/2 cup butter, at room temperature
1 cup all-purpose flour
1/2 teaspoon ground cayenne pepper or to taste
1 teaspoon Worcestershire sauce
1/2 teaspoon salt
1 cup crisp rice cereal

Steps:

  • Preheat the oven to 350°.
  • Mix together cheese, butter, flour, red pepper, Worcestershire and salt in a large bowl until mixture forms a ball that lightly sticks together and pulls in all the flour. (Hands might work best for this).
  • Gently fold cereal into dough.
  • Shape mixture into 1-inch balls. Place balls about 1 inch apart on an ungreased baking sheet. Flatten each ball with a fork, making a crisscross pattern.
  • Bake 15 minutes or until firm. Cool on pan on wire rack. Store in airtight container up to 1 week.
