3 eggs
1/2 cup 2% milk
1 green onion, chopped
1 tablespoon butter, melted
1/4 teaspoon salt
Dash pepper
1/2 cup shredded cheddar cheese
1 bacon strip, cooked and crumbled

Steps:

  • In a bowl, whisk the eggs, milk, onion, butter, salt and pepper. Pour into a shallow 3-cup baking dish coated with cooking spray. Sprinkle with cheese and bacon. Bake, uncovered, at 400° for 12-15 minutes or until eggs are set.

1/2 cup KRAFT Shredded Triple Cheddar Cheese with a TOUCH OF PHILADELPHIA
1/3 cup OSCAR MAYER Real Bacon Bits
3 green onions, sliced
6 eggs
1/4 cup milk
1/3 cup MIRACLE WHIP Dressing
1/4 tsp. black pepper

Steps:

  • Heat oven to 350°F.
  • Place potatoes in 9-inch pie plate sprayed with cooking spray; top with cheese, bacon and onions.
  • Whisk eggs and milk in medium bowl until blended. Add MIRACLE WHIP and pepper; mix well. Pour over potato mixture.
  • Bake 25 to 30 min. or until center is set. Let stand 10 min. before cutting into wedges to serve.

This family-sized fritatta is jam-packed with all of your favorite breakfast ingredients, but that doesn't mean you can't eat it for any meal of the day!

10 ounces bacon
6 cups frozen grated hash brown potatoes, thawed
1/3 cup finely grated parmesan cheese
2 cups grated cheddar cheese, divided
24 eggs
1/3 cup milk
3 cups roughly chopped fresh spinach
1/4 cup sliced scallion (to garnish)
cayenne pepper sauce, for topping (Frank's)
kosher salt
ground black pepper

Steps:

  • Preheat oven to 425 degrees F. Line a baking sheet with parchment paper and place the bacon in an even layer on the baking sheet. Bake until crisp, turning once halfway through, about 20 minutes.
  • Remove the baking sheet from the oven and transfer the bacon to a towel-lined plate. When cool enough to handle, roughly chop the bacon and set aside. Reserve 1/2 cup bacon for garnish.
  • In a large bowl, toss to combine the hash brown potatoes, parmesan cheese, 1/3 cup grated cheddar cheese, salt and pepper.
  • Spread the hash browns in an even layer on the parchment paper with the bacon grease. Bake until the hash browns are lightly crisp, about 20 minutes.
  • In a large bowl, whisk to combine the eggs, milk, salt and pepper. Fold in the chopped bacon, 1 cup shredded cheddar cheese and spinach. Pour into the hash brown crust and spread to make even. Top with 2/3 cup shredded cheddar cheese and place in oven. Bake until eggs are puffed and cooked through, about 25-30 minutes.
  • Top with reserved chopped bacon, scallions and drizzle with hot sauce to serve.

A really easy frittata with cheese and bacon that will come in from brunches to late suppers.

Number Of Ingredients 9

700g/1lb 9oz large salad potatoes, peeled and halved
175g/6oz smoked bacon, roughly chopped
1 tbsp olive oil
1 garlic clove
½ red pepper, thinly sliced
6 large free-range eggs
25g flatleaf parsley, roughly chopped
30g/1oz cheddar, grated
salt and freshly ground black pepper

Steps:

  • Parboil the potatoes in lightly salted water for 6-10 minutes, until almost cooked but still firm. Cut them into slices. Preheat your grill to medium-high.
  • Using a large ovenproof non-stick frying pan, fry the bacon in its own fat, stirring, for 4-5 minutes, or until cooked. Transfer to a plate and set aside.
  • Heat the oil in the same pan. Add the garlic and peppers and fry for 4-5 minutes, or until just cooked.
  • Add the potatoes to the pan, stir gently, then fry for 2-3 minutes, until lightly browned. Return the bacon to the pan and stir gently again.
  • Crack the eggs into a jug and lightly beat using a fork. Stir in the parsley and season well. Pour over the potato-and-bacon mixture, then sprinkle the cheese on top. Cook for 5 minutes.
  • Transfer to the grill and cook for 5 minutes, or until cooked through. Serve in slices, with salad if you like.
