1 ½ cups chicken broth
1 cup quinoa, rinsed
3 tablespoons olive oil
1 ½ tablespoons Dijon mustard
1 teaspoon maple syrup, or more to taste
¼ teaspoon ground cinnamon
salt and ground black pepper to taste
1 large crisp apple, chopped into small pieces
1 cup pecan pieces
½ cup dried cranberries
½ cup grated Parmesan cheese

Steps:

  • Stir chicken broth and quinoa together in a saucepan; bring to a boil, reduce heat to low, place cover on the saucepan, and cook until the broth is absorbed, about 10 minutes. Remove saucepan from heat and fluff with a fork.
  • Whisk olive oil, Dijon mustard, maple syrup, and cinnamon together in a bowl; season with salt and pepper. Drizzle sauce over the quinoa; stir. Add apple pieces, pecan pieces, cranberries, and Parmesan cheese; stir. Return cover to the saucepan and let the mixture steam until the sauce warms and the apples soften slightly, 5 to 10 minutes.

2 teaspoons cumin seeds
1/4 cup extra-virgin olive oil
2 1/2 tablespoons apple cider vinegar
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/8 teaspoon ground cinnamon
1/8 teaspoon ground cloves
1 large shallot, finely chopped (about 1/2 cup)
One 14.5-ounce can vegetable broth (about 2 cups)
1 1/4 cups whole-grain quinoa, preferably organic
Nonstick vegetable oil spray
One 1 1/4-pound eggplant, unpeeled, cut into 1/2-inch cubes
3 tablespoons extra-virgin olive oil
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1 large Honey Crisp or Golden Delicious apple, unpeeled, cored, quartered
3/4 cup walnut pieces, toasted, or 1/3 cup roasted salted sunflower seeds
1/2 cup dried cranberries
1 large bunch watercress

Steps:

  • For the vinaigrette: Toast the seeds over medium heat in a heavy medium skillet, stirring occasionally, until the seeds darken in color and become fragrant, 3 1/2 to 4 minutes. Place the seeds on a plate; cool for 1 minute. Grind the seeds finely in a small food mill or grinder.
  • Whisk the oil, vinegar, salt, pepper, cinnamon, cloves and the toasted seeds until thick and blended in a small bowl. Stir in the shallots. Set the vinaigrette aside.
  • For the salad: Place an oven rack in the center of the oven and preheat to 400 degrees F.
  • Bring the broth to a simmer over medium-high heat in a heavy medium saucepan. Mix in the quinoa. Reduce the heat to medium-low. Cover and simmer until the water is absorbed and the quinoa is tender, about 15 minutes. Turn off the heat and let the quinoa stand, covered, 5 to 10 minutes. Cool and fluff with a fork.
  • Meanwhile, spray a large rimmed baking sheet with vegetable oil spray. Toss the eggplant with 3 tablespoons oil, 1/4 teaspoon salt, and the pepper on the sheet. Roast until tender and browned, stirring once, about 30 minutes.
  • Transfer the quinoa to a large bowl; fluff with a fork. Add the vinaigrette, eggplant, apples, walnuts and cranberries. Toss to blend.
  • Cover the bottom of a shallow platter with the watercress. Spoon the salad on top and serve.

3 tablespoons frozen apple juice concentrate
1/4 teaspoon ground allspice
1/4 teaspoon ground black pepper
1 clove garlic, minced
1 large Red Delicious apple
1/2 cup shredded carrot
1/3 cup chopped red onion
1/4 cup chopped mint
salt
butter lettuce leaf

Steps:

  • Pour the quinoa into a fine strainer and rinse it well under cold water.
  • In a 2 quart saucepan combine the quinoa and 2 cups of water.
  • Bring to a boil over high heat, reduce heat to low and cover, simmering for 15 minutes.
  • Remove from heat.
  • In a wide shallow bowl combine vinegar, apple juice concentrate, allspice, pepper and garlic.
  • Add the quinoa and stir occasionally until cooled, around 10 minutes.
  • Core the apple and chop it into 1/4 inch cubes.
  • Mix the apple, carrot, onion and mint with the quinoa mixture.
  • Line a serving platter with the lettuce and mount the quinoa salad on top.

2 tablespoons dried currants
1 small McIntosh apple, cut into 1/8-inch-thick wedges

  • Preheat oven to 375 degrees. Spread almonds on a rimmed baking sheet; toast in oven until lightly toasted and fragrant, about 7 minutes. Let cool; coarsely chop nuts.

This is a recipe I found online, although I modified it slightly. VERY HEALTHY as it includes some of the world's healthiest foods--quinoa, apples, blueberries, walnuts, yogurt. Good for a side dish or for breakfast or whatever.

1 cup quinoa
2 cups water
2 medium apples
1 cup blueberries (frozen is fine, just let them thaw)
1/2 cup walnuts
1 cup plain fat-free yogurt
1/2 tablespoon sugar

Steps:

  • Dump quinoa and water into a pot and heat to boiling, then move heat to low, cover, and let sit for 15-20 minutes. Quinoa should be white, translucent, and soft. (Or cook it in a rice cooker the same way you'd cook rice.).
  • Dice the apples and walnuts.
  • Toss all ingredients in a large bowl and mix until even.
  • Can serve immediately; however, I prefer it chilled.

  • QUINOA: Prepare the quinoa by rinsing it in cold water in a fine mesh sieve. This removes the bitter saponin coating. Combine the quinoa and water (or broth) in a small pot over high heat. Blend or pulse until completely smooth. Slowly pour in the oil and blend just until emulsified. Do not over-blend. Transfer mixture to a mason jar and stir in the poppy seeds. Place the lid on the jar and allow dressing to chill in the fridge while preparing the other components of the salad. Re-shake to combine before dressing the salad.
  • TOAST NUTS: Meanwhile, add the sliced almonds and sunflower seeds in a single layer to a completely dry skillet (don't add any oil) and place on medium high heat. Stir the nuts and seeds every 15 seconds for about 1-3 minutes or until the color slightly darkens and they start to smell good. Watch these carefully as they can go from perfectly toasted to burned quickly!
  • APPLE and AVOCADO: If desired, peel the apple (we leave the peel on). Chop or thinly slice the apple. If using an avocado, remove the skin and thinly slice or chop. Toss both with the lemon juice.

  • QUINOA: Prepare the quinoa by rinsing it under cold water in a fine mesh sieve. This removes the bitter saponin coating. Combine the quinoa and water (or broth) in a small pot over high heat. Bring to a boil, add in a heaping 1/4 teaspoon salt (or salt to taste), reduce the heat to low, and cover the pot. Simmer for 10-15 minutes or until the liquid is absorbed. Remove from heat, keep the quinoa covered, and let stand for 10-15 minutes. Fluff with a fork and then add 2-3 tablespoons of the prepared dressing (see next step). Toss and place in the fridge to chill until at room temperature.
  • DRESSING: While the quinoa is cooking, prepare the dressing. Combine the lemon juice, lemon zest, onion powder, Dijon mustard, salt, and sugar in a small blender or food processor. Blend or pulse until completely smooth. Slowly pour in the oil and blend just until emulsified. Do not over blend. Stir in the poppy seeds, transfer to a mason jar, and allow to chill in the fridge while preparing the other components of the salad. Re-shake to combine before dressing the salad.
  • SPINACH: Remove large stems and then coarsely chop the spinach (just a few coarse cuts through all the spinach). Add to a large bowl and toss with the room temperature quinoa.
  • FRUIT: Chop or thinly slice the apple and pear. Toss both fruits with lemon juice to keep from browning too quickly. Add to the spinach and quinoa.
