DATE NUT SPICE BREAD
Steps:
- Preheat the oven to 350 degrees F. Butter the bottom of an 8 1/2 by 4 1/2 by 2 1/2-inch loaf pan. Line the bottom with parchment paper, then butter and flour the pan.
- Combine the dates and orange liqueur in a small bowl and set aside for 30 minutes. Stir occasionally.
- In the bowl of an electric mixer fitted with the paddle attachment, beat the butter and brown sugar together on medium speed for 1 minute. Scrape down the bowl. With the mixer on low, add the egg, vanilla, and orange zest. Sift together the flour, baking powder, baking soda, cinnamon, nutmeg, cloves, and salt. With the mixer still on low, add the flour mixture alternately with the orange juice to the creamed mixture, beating only until combined. By hand, stir in the dates with their liquid, and the pecans.
- Pour the batter into the prepared loaf pan and smooth the top. Bake for 50 to 60 minutes, until a toothpick comes out clean. Cool in the pan for 10 minutes, then turn out onto a wire rack and cool completely.
- Meanwhile, in the bowl of an electric mixer fitted with the paddle attachment, cream the cream cheese, sugar, and orange zest on medium speed until just combined.
- Slice the bread and serve with the orange cream cheese on the side for spreading.
DATE NUT BREAD
Steps:
- Preheat the oven to 350.
- Grease an 8 1/2 x 4 1/2 x 3 inch loaf pan.
- Put the dates, walnuts, baking soda, salt and shortening in a bowl. Pour the boiling water over and stir. Let the mixture stand for 15 minutes.
- Using a fork, beat the eggs and sugar together in a bowl. Add the flours and stir; the batter will be too stiff to mix well. Add the date mixture and mix briskly until the batter is well blended. Spoon into the loaf pan and bake 40 to 50 minutes. Check the loaf often; it is done when a few moist crumbs cling to a straw inserted in the middle of the loaf. The bread will continue to bake after it is removed from the oven. Do not overbake, or the loaf will be dry.
- When the loaf is done, slide a knife around the edges of the pan and turn the loaf onto a rack to cool completely. This bread freezes well.
DATE NUT LOAF CAKE
Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x5 inch loaf pan. In a saucepan over medium heat, bring dates and water to a boil. Stir in 1/2 cup butter and 1 cup sugar until melted. Remove from heat and stir in baking soda. Let cool for 10 minutes.
- Place date mixture into a large bowl. Blend in flour, eggs and vanilla. Stir in chopped walnuts. Pour batter into prepared pan.
- Bake in the preheated oven for 50 to 60 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely. Serve slices with Warm Sauce.
- To make Warm Sauce: In a saucepan over medium heat, combine 1/4 cup butter with cream and brown sugar. Heat, stirring constantly, until mixture boils and sugar is dissolved.

MOIST DATE CAKE
This cake becomes more moist each day that it is covered. This recipe was my Grandmother's and we always had this cake at Christmas. I know the recipe is at least 60 years old.

- Preheat oven to 350 degrees F (175 C). Grease and flour two 8 inch round cake pans. Set aside. Put dates in a bowl with soda and pour boiling water on top. Set a side.
- In a large mixing bowl, mix together 1 cup sugar, 2 1/2 cups flour and 1 cup chopped walnuts. Add egg, 1 teaspoon vanilla, pinch of salt and tablespoon butter. Mix to combine. Finally, stir in chopped dates with liquid. Mix well. Pour batter into prepared pans.
- Bake for 25 to 30 minutes. Cake will pull away from sides of pans and be golden brown.
- In a medium saucepan, combine buttermilk, 1 cup sugar, pinch of salt and 4 tablespoons flour. Cook on medium heat until thickened. Stir in 1 teaspoon vanilla and remaining cup of walnuts.
- Spread mixture between layers and on top of cake. Let filling run down the sides of cake.

- Mix nuts, dates and cherries in a large bowl.
- Combine flour, sugar, salt, and baking powder.
- Sprinkle flour mixture over fruit; mix well.
- Add beaten eggs and vanilla.
- Mix throughly.
- Bake in tube pan at 275 degrees fahrenheit for 1 hour and 15 minutes.
IRAQI DATE AND NUT CAKE GILACGI
Bottom and top crust is made from either semolina, farina or cream of wheat cereal and filled in the middle with dates, walnuts, honey, lemon, cinnamon and chopped dates.

CHOC CHIP DATE NUT CAKE
This is an easy home made cake with a delicious crunchy topping on a super moist cake! It is not super sweet but rather you taste the cocoa. People tend to put to much of the toppings on, big mistake stick to the recipe amounts! Dates are some times hard to find, so I order my chopped dates on line in 8oz pks. Dromedary are my favorite, but Sun Maid , or Dole are good too.Enjoy!

- First pour baking soda and boiling water over chopped dates set aside to cool.
- Cream together 3/4c shortening, 1c sugar, & 2eggs. Set aside.
- Date mixture-Sift together 1 1/2c flour, 2tbl sp Coacoa, 1/2 tsp salt.
- now add the date mixture to the creamed mixture and stir in the cooled dates.
- Put into a sprayed and lightly floured 9 X 13 pan. I just use Pam w/ flour nonstick spray.
- Topping- Stir together 1/2c sugar, 1c choc chips, 1/2c chopped walnuts. Mix together and sprinkle over cake.
- Bake at 350 for 35-40 min or untill toothpick comes out almost clean. Do not over bake!
EGGLESS MILKLESS DATE NUT CAKE

DATE TRUFFLES (MADGOOGA)
This recipe is easy to make and popular in Iraq since one of the things that Iraq is famous for is dates. We have lots of varieties and kinds of dates from chewy to very hard. It is better to use this recipe with hard type of dates (called kasab) not soft, but you could use soft dates if you didn't find hard dates. Sometimes Ii use already-crushed dates from the market and it goes well too. There are lots of varieties for the coating of the truffles, use as many coatings as you like according to your personal taste.

- Put all ingredients in a bowl.
- Grind the mixture with meat grinder finely.
- Shape the dates into small balls 2 cm in diameter with slightly oiled hand with vegetable oil (I like to shape them roughly so they are not so perfect balls).
- Roll the truffles in your selected coating and place on parchment paper or tray.
- Put the truffles in small decorative paper cups and arrange them in the serving plate.
- If you bought dates that are already ground and pitted, you don't need to grind them in the meat grinder, simply knead ingredients together by hand or you can grind it again by the meat grinder.

- Preheat oven to 250 degrees.
- Butter and flour an angel food pan or bundt pan.
- Cream butter and sugar.
- Drop in eggs, one at a time, and stir after each addition.
- Sift flour, baking powder and nutmeg together, reserving 1/4 cup flour to dredge the nuts.
- Add the flour mixture, bourbon, almond and vanilla alternately.
- Flour the nuts, dates and coconut; fold into cake batter.

- Place a pan of water in the oven to prevent cracking.

- In a large bowl, cream butter and sugar. Add eggs; mix well. Combine flour and baking soda; add to creamed mixture alternately with buttermilk. An easy Egyptian recipe. This tasty cake is from the kitchen of one of my students. Lovely to have with coffee.

Steps:
- .Whisk eggs and sugar with vanilla sugar until thick and creamy.
- Add the melted butter and the water to the egg mixture.
- Beat for another minute.
- Sift the flour and gently fold it into the mixture, adding the dates and the chopped walnuts. Add the cinnamon to the mixture.
- Spoon the mixture into a greased tin measuring 28cm x 18cm.
- Bake in a preheated 180C oven for 20 to 30 minutes.
- When ready, the slices will be golden brown on the surface and cooked through when tested with a skewer.
- Prepare the lemon icing.
- Sift the icing sugar into a bowl.
- Add the lemon juice and the softened butter.
- Mix these ingredients together until smooth in consistency.
- When the slices are cool, spread the lemon icing on top.
- Allow to cool.
- Cut into approximately 16 slices.
