Steps:
- Adjust your grill, charcoal, gas, pellet, etc. to a temperature between 300°F (149°C) to 350°F (176°C). For charcoal you will probably need to move your coals to one side for 2 zone grilling, gas grills just turn the gas off one side, and for pellet grills you will just need to just adjust the temperature control.
- Place brats on the grill for about 20 minutes, turn the sausages every so often to get a nice caramelization. The brat temperatures should have an internal temperature of at least reach 160°F (72°C).
- Remove from grill and serve on buns, with a great German mustard and sauerkraut.
- Pour beer into a skillet (with a cover), add in brats bring to a simmer/low boil, and cook in the beer for about 15 minutes or until your brats are at a temperature of 160° (72C).
- Place directly on the grill for 2 to 3 minutes to get a nice brown caramel color. Be sure to rotate them often , do not let them sit too long as they can quickly burn over direct heat.
- Remove from grill, serve and enjoy!

Steps:
- Combine the milk, onion, bay leaf, cloves and nutmeg in a heavy-gauge, non-corrosive saucepan over medium heat. In a separate pan create a roux by cooking the butter and flour for a few minutes, stirring continuously, without browning, until it emits a nutty aroma. Remove from the heat. When the milk is fairly hot, pour a small amount of it into the cooled down roux, stirring until the milk is thoroughly blended. Return this to the remaining milk, and simmer for 15 minutes, stirring frequently. Remove from heat and season, to taste, with salt and white pepper. Whisk in mustard and cover with a piece of plastic wrap to prevent a skin from forming.
- Heat the grill to medium heat. Prepare the tortillas by laying 1 or 2 slices of cheese on top of each and set aside briefly. Slowly cook the bratwurst over medium heat, turning as needed to prevent them from getting charred. (They tend to split when the heat is too high.) When they are browned and cooked through, which takes 10 to 15 minutes, transfer them to the cheese lined tortillas, and roll up the bratwursts so that the cheese will melt and hold everything together. Place the rolled bratwursts in a skillet over medium heat, allowing the tortillas to toast slightly. Serve with mustard sauce.

Steps:
- Preheat grill to 350 degrees F. (This grill temperature is crucial for maintaining the juiciness and flavor and keeps you from having to poke holes in the brats).
- Place pre cooked brats directly on grill grates over the heat and cook for 20 minutes (up to 30 minutes), flipping them about every 5 minutes. When grilled brats temperature reaches 160°F, as measured with an internal meat thermometer, then they are ready to come off the grill.
- Remove brats from the grill and rest on a cutting board for about 10 minutes. During this time, prepare condiments so they are ready to serve.
- Toast your beer brat sandwich buns if desired. We like to toast sausage buns on the grill for 1-2 minutes, until a lite char is formed on the outside. Or, we just pop the buns in the air fryer at around 350 degrees F for 3 minutes to lightly brown.
- Assemble grilled brats sandwiches by placing each brat into a bun and topping with dijon mustard and ketchup, or your favorite condiments. Enjoy!
