QUINCE-GINGER MARMALADE (JAM)

Quince-Ginger Marmalade (Jam) image

This is the easiest, quickest spread I have ever made. I didn't have a recipe so I improvised and it worked. The quince sets beautifully so you need no pectin. The ginger gives it a lovely flavor for your wakeuo toast. This recipe can be doubled. I believe there are some quince that need longer cooking time than the ones I have. I have looked at several recipes on the Internet and they say to boil for 2 hours so you will have to boil until softened

PUMPKIN AND GINGER JAM

Pumpkin and Ginger Jam image

Found this recipe online and decided to post it here for safe keeping. Make sure you cook the pumpkin well before adding the sugar or the pieces will remain hard. I grated the pumpkin.

Provided by Wild Thyme Flour

Categories     Jellies

Time 30m

Yield 3 jars

Number Of Ingredients 5

1 kg chopped up pumpkin flesh
50 -70 g peeled and grated fresh ginger
1 lemon
200 ml water
500 g jam sugar (with added pectin)

Steps:

  • Wash the lemon, pat dry and grate the zest. Remove the white pith and discard. Cut the lemon flesh into smaller pieces.
  • Place pumpkin, water, lemon flesh and grated ginger into a heavy-bottomed saucepan and cook on a low heat, covered, until the pumpkin flesh is softened. Remove the lid for the last 5 to 10 minutes, so the extra moisture could evaporate.
  • Smash the pumpkin flesh with a wooden spoon until broken (or press through a fine sieve, if you want a very smooth jam).
  • Add the jam sugar and grated lemon zest, and cook for another 10 minutes.
  • Spoon the hot jam into sterilised jars and close immediately.

QUINCE JELLY

Quince jelly image

Serve this rose-coloured quince jelly as part of a cheeseboard, or alongside pork or game dishes. It's a great way to use up a glut of the fruit

Provided by Katy Gilhooly

Time 2h20m

Yield Makes 2 x 350ml jars

Number Of Ingredients 4

1.5kg ripe quince, chopped
1 lemon, zest peeled into strips, juiced
900g preserving sugar (you may need less)
1 tbsp orange blossom water (optional)

Steps:

  • Put the quince and lemon peel and juice in a large, deep saucepan. Cover with water (you'll need about 3.2 litres) and bring to the boil. Reduce to a simmer and cook for 1 hr 30 mins until the quince is very soft.
  • Line a colander with muslin cloth, and put over a very large saucepan or heatproof bowl. Tip the quince into the lined colander, cover with a clean tea towel and leave to strain for 4-8 hrs until all the juice has dripped out. Discard the pulp, then measure out the strained juice and transfer to a large, deep saucepan (the jelly will bubble up high as it cooks). Add 500g sugar for every 600ml juice.
  • Bring to the boil over a low heat, stirring to dissolve the sugar. Bring to a rapid bubble and cook until the temperature reaches 105C on a sugar thermometer. Remove from the heat and stir in the orange blossom water, if using. Ladle into hot sterilised jars and seal. Will keep in a cool, dark place for up to a year.

ZUCCHINI GINGER JAM

Zucchini Ginger Jam image

This zucchini jam tastes just like marmalade. The recipe was given to me by my Aunt many years ago, however, I improvised and made it taste even better. For a different flavor you may wish to try using a combination of Jello's, apricot and orange, peach and orange or raspberry and orange. This jam also freezes well.

  • Core and cut the quince into big pieces. Quince skin contains high level of pectin, do not peel the quince.
  • Then use a food processor to chop the quince into desired size for the jam, not too big and not too smooth either, for a chunky texture. I process the quince to the size of half to a full grain of rice.
  • In a sauce pan, bring the chopped quince and water to a boil. Turn to medium heat, cover the sauce pan with a lid, and simmer the quince for about 30 minutes.
  • Check the quince and stir often near the end, to ensure the quince sauce is not burned. If the quince sauce is not thick enough, remove the lid and continue cooking while stirring until the sauce is a little thicker than what you desire (it will thin out more later after adding sugar and lemon juice). I like my quince jelly thick, so I let as much water evaporate as possible.
