EASY HOMEMADE YOGURT
This is a super-easy way someone taught me to make homemade yogurt that requires only 2 ingredients. Pay attention to the notes. Halve the recipe if this is your first time. Usually because store-bought yogurts have lots of additives first-time yogurts do not turn out perfectly. But save 1 cup and use it as base the next time and you will see how well it turns out.

Steps:
- Pour the milk into a pot and bring to a boil, stirring occasionally to prevent sticking. Reduce heat and simmer, about 10 minutes; do not let it boil over.
- Remove pot from heat and allow to sit for 30 to 60 minutes. Dip your finger into the milk every once in a while to determine when you can leave your finger in the milk for 10 to 15 seconds without burning. Pour in the yogurt; there is no need to stir.
- Put the lid on the pot and carefully wrap a blanket around it. Place the wrapped pot in a slightly warm place where it will be undisturbed for 6 to 10 hours; overnight is best. Transfer to the refrigerator to allow the yogurt to continue to thicken.

TZATZIKI SAUCE-- GREEK CUCUMBER/YOGURT SAUCE
This is the cool and creamy sauce that usually is served as a condiment on Greek Gyro sandwiches. The recipe calls for the thicker, Greek Yogurt, also called, "Greek Cheese". If you can't find this type of yogurt, you can use plain, regular yogurt from the grocery store. But in order to get the sauce to the desired thicker consistency, you need to suspend the yogurt in a cheesecloth for a couple of hours to drain some of the water off. If you don't mind it moderately runny, you can just make it as is and it is still delicious, just a little more messy. Steps:
- Peel cucumbers and dice. Put them in a colander and sprinkle with the tablespoon of salt (draws water out). Cover with a plate and sit something heavy on top. Let sit for 30 minute Drain well and wipe dry with a paper towel.
- In food processor or blender, add cucumbers, garlic, lemon juice, dill and/or mint, and a few grinds of black pepper. Process until well blended, then stir into yogurt. Taste before adding any extra salt, then salt if needed. Place in refrigerator for at least two hours before serving so flavors can blend.
- This will keep for a few days in the refrigerator, but you will need to drain off any water and stir each time you use it.
- ** If you can't find the thicker Greek Yogurt Cheese, you can use regular, plain yogurt that is either full fat or low fat. To thicken, spoon yogurt into cheese cloth that has been quadrupled. Draw the corners of the cloth up and tie together. Suspend above a bowl for 2 hours so that water can drip out. The consistency of the yogurt should be like that of sour cream.
- You can skip this draining process, if you want, but you will have a moderately messier, runnier result.

- Using a sharp knife butterfly the chicken breasts so they will cook more evenly. Lay them in a pan. Season with kosher salt and freshly ground pepper on each side.
- Whisk together all of the ingredients for the sauce. If using full fat strained Greek yogurt add a splash of water to make the sauce runnier or leave as is, according to your liking. Set sauce aside until you grill the chicken and cook the fries.
- Peel and rinse the potatoes. Cut into 1/2 cm (1/5 inch) thick fries. Place in a strainer. Rinse well and let them drain for 3 minutes. Season with kosher salt.
- Heat a grill or grill pan on medium-high. Add the chicken breasts and grill for about 10-15 minutes. Don't flip them before the first 5 minutes so they will sear properly on one side before flipping them on the other. Use an instant-read thermometer to cook the chicken nice and juicy and make sure you won't overcook it. The internal temperature should read 165°F / 74°C.

- Into a food processor put 1 cup of the Greek yogurt and the onion pieces, red chili, garlic, cumin, and curry powder. Puree until smooth.
- Poke each chicken thigh all over with a fork. Unroll a thigh on a cutting board. Cut it in half lengthwise so that you have two long strips of chicken meat. Thread each strip onto a wet skewer and put them into a 9″x11″pan. Repeat with the remaining chicken thighs.
- Pour HALF of the yogurt and onion mixture from the food processor over the chicken skewers (set the remaining mixture in the food processor aside. It will be used to make a sauce). Turn the chicken skewers to coat them. Cover and refrigerate for at least an hour but up to 12 hours.

- Grilled Fruit Kebabs with Yogurt and Honey. Mix Greek yogurt with honey and mint and you're basically making a delicious dessert sauce for your fruits. Think of this recipe as a deconstructed fruit yogurt, where the flavors are deeper, because your fruits are grilled and starting to caramelize.
- Yogurt Parfait. Parfaits are obvious yogurt territory, but it doesn't hurt to remind you that you can make them as indulgent as you want, and you're still probably better off eating that than you are eating a pre-flavored packaged fruit yogurt.
- Beef Stroganoff. A beef stroganoff recipe will usually have sour cream stirred into the sauce last-minute, to get that smooth creaminess that makes this comfort dish so craveable.
- Tandoori Chicken Legs. These beautifully crispy chicken legs are marinated in yogurt and spices before being roasted to perfection in the oven. A classic move in Indian cuisine, marinating chicken meat in yogurt will tenderize it and give it a delicious zesty flavor.
- Mac and Cheese. In this recipe, you'll use yogurt for your mac and cheese sauce, and you'll delight in how creamy the whole thing ends up being. If you have some cheese, macaroni, and yogurt in your fridge, you can make some version of this oven-baked pasta dish.
- Blueberry Lemon Ricotta Pancakes. The amount of ricotta in this recipe is match by the amount of yogurt, and the combo makes these pancakes lighter than air.
- Loaded Sweet Potatoes. This genius plant-based breakfast builds a yogurt and granola parfait on top of a baked sweet potato. The key here is the yogurt's zest, which cuts through the intense sweetness of the potato.
- Protein Muffins. Muffins are another baked good that benefit greatly from the use of yogurt in the batter. The yogurt will react with the baking soda to encourage leavening, and your muffins will develop a fluffy, airy texture.
- Coconut Yogurt Waffles. Here's a perfect demonstration of baking with dairy-free yogurt, too. This recipe uses a coconut and vanilla–flavored vegan yogurt which works the same magic on the texture as an actual yogurt, but also infuses the batter with a subtle flavor and sweetness.
- Turkish Fried Eggs in Herbed Yogurt. Think dairy on dairy sounds off? Not when it comes to this delicious eggs-on-yogurt breakfast flatbread. You'll turn the yogurt into an herby sauce, spread it on naan or pita bread, and top with fried eggs and a spiced butter sauce.
