This sweet bread recipe makes a beautiful, soft, lightly sweetened and buttery bread loaf that's delicious as a toast with your morning coffee or tea.

1 cup warm milk (heated to no higher than 100F)
2 tsp Instant dry yeast or active dry yeast ((I use Platinum Superior Baking Yeast))
3 cups all-purpose flour ((bread flour or Canadian flour works best))
1/3 cup granulated sugar
4 egg yolks
2 tbsp sour cream
1 tbsp vanilla extract
3 oz unsalted butter, ( softened, room temperature)
1/4 tsp kosher salt
1 egg yolk
1 tbsp water
3 to 4 tbsp sesame seeds or poppy seeds ((optional))

Steps:

  • Check the yeast: (see footnotes if you'd like to make this dough in the breadmaker)Dissolve 2 tsp of yeast with 1/2 cup milk and 1 tsp of sugar from the overall amount and leave in a warm location until frothy, about 10-15 minutes. If the mixture does not froth up and rise, discard the yeast and start over when you have a fresh batch of dried yeast.
  • Combine all ingredients:Into a bowl of a mixer sift 3 cups of flour. Then add 1/3 cup sugar, remaining 1/2 cup warm milk, 4 egg yolks, 2 tbsp sour cream, 1 tbsp vanilla extract, and the risen yeast mixture. By hand, using a spoon or the hook of the mixer quickly mix the ingredients until a rough, shaggy mixture forms.
  • Knead: Then, attach the hook back to the mixer and knead on low speed (speed 2 to 3 on a Kitchenaid mixer) for about 20 minutes or until the dough stops sticking to the side of the bowl, feels elastic, and is tacky to touch. If the dough is properly kneaded a small piece can be stretched into a see through "window" without tearing.Pro tip: Do not overknead past a point where the dough is elastic and stretchy. If the gluten is overworked it will tear, leaving you with a chunky dough that doesn't have the strength to hold a good rise of the dough.
  • Add 3 oz of butter and 1/4 tsp of the salt and knead it into the bread until no streaks of butter are seen, (~5-7 minutes). Sometimes tearing the dough into chunks helps to incorporate the butter easier/faster.
  • 1st Rise: Oil the sides of the bowl and the dough. Cover the bowl with a kitchen towel and leave in a warm place to rise until doubled in size, about 1.5 hours. Boil a cup of water in a microwave for several minutes. Remove the cup with water. Place the bowl with the dough in the warm microwave for the dough to rise. This gives the dough a nice warm place without being too hot.
  • Shape: This recipe makes one large braid. To make two smaller sweet yeast bread loaves divide the dough into two, then shape two separate braids instead of one like the recipe instructs.Once risen, divide the dough into 3 equal pieces. Weighing the dough is the best way to divide the dough evenly. Next, roll each piece into a tight ball, then into a 20-inch log. If the dough is hard to stretch or it springs back too much, cover with a tea towel leave for 10-15 minutes. This will relax the gluten and make it easy to roll.Pinch the ends of the 3 strands together at one end, then braid them into a braid pinching the ends together as well. Now, tuck both ends of the braid underneath itself slightly to give it a better shape.
  • 2nd Rise: Transfer the sweet yeast braids to a 12"x18" baking sheet pan. Space them evenly. Cover with a clean tea towel. Transfer to a warm place once again until the braid doubles in size.
  • Prep before baking: Once doubled in size preheat the oven to 350F with the baking rack centered. Brush the braid with a whisked egg yolk and water and sprinkle with sesame seeds or poppy seeds if you wish. Applying the egg yolk mixture several times will give you a darker glaze once baked.
  • Bake the braid for about 30-35 minutes or until the top is golden brown. You can also check for doneness with a thermometer. The center of the thickest part should register 195°F. If the top starts to brown before the inside registers 195F, loosely tent the sweet yeast bread with foil.Once baked, remove from the oven to a cooling rack and cool completely before cutting or eating.

If you don't have a bread machine, this is the easiest yeast dough recipe by far. There is no overbearing yeast flavour and it is a good dense bread. Please note: time to make includes rising time.

5 cups all-purpose white flour
2 tablespoons yeast (or 2 x 7g pkts)
2 teaspoons sugar
1 teaspoon salt
2 cups warm-hot water
1/4 cup cooking oil

Steps:

  • Put 4 cups of the flour, yeast, sugar and salt into large bowl.
  • Pour in hot water and oil and mix until combined- it will be sticky.
  • Add the remaining flour in increments until dough is no longer sticky.
  • Knead for about 5 minutes until dough is elastic and smooth.
  • Place dough back into bowl and cover with a damp teatowel and let it rise until double its size- about 1/2 hour.
  • Punch it down and divide dough into two pieces.
  • Roll pieces long enough to fill two well oiled loaf pans and leave to rise until dough has reached the rim of the pan.
  • Bake at 400F for 40 minutes.
  • Rub hot breads with water and wrap in a teatowel to'sweat' to soften the crust.

3 tablespoons white sugar
1 cup hot water
1 (.25 ounce) package active dry yeast
1 egg, beaten
1 teaspoon salt
2 ¼ cups all-purpose flour

Steps:

  • In a large bowl, mix the shortening, sugar, and hot water. Allow to cool until lukewarm, and mix in the yeast until dissolved. Mix in the egg, salt, and flour. Allow the dough to rise until doubled in size.
  • Grease 8 muffin cups. Divide the dough into the prepared muffin cups, and allow to rise again until doubled in size.
  • Preheat oven to 425 degrees F (220 degrees C).
  • Bake for 10 minutes in the preheated oven, or until a knife inserted in the center of a muffin comes out clean.

3 cups (450g) flour (, bread or plain/all purpose (Note 1))
2 tsp instant or rapid rise yeast ((Note 2 for normal / active dry yeast))
2 tsp cooking / kosher salt (, NOT table salt (Note 3))
1 1/2 cups (375 ml) very warm tap water (, NOT boiling or super hot (ie up to 55°C/130°F) (Note 4))
1 1/2 tbsp flour (, for dusting)

Steps:

  • Mix Dough: Mix flour, yeast and salt in a large bowl. Add water, then use the handle of a wooden spoon to mix until all the flour is incorporated. Dough will be wet and sloppy - not kneadable, but not runny like cake batter. Adjust with more water or flour if needed for right consistency (see video at 17 sec, Note 5).
  • Rise: Cover with cling wrap or plate, leave on counter for 2 - 3 hours until it doubles in volume, it's wobbly like jelly and the top is bubbly (see video at 24 seconds). If after 1 hour it doesn't seem to be rising, move it somewhere warmer (Note 6).
  • Optional - refrigerate for flavour development (Note 9): At this stage, you can either bake immediately (move onto Step 5) or refrigerate for up to 3 days.
  • Take chill out of refrigerated dough - if you refrigerated dough per above, leave the bowl on the counter for 45 - 60 minutes while the oven is preheating. Cold dough does not rise as well.
  • Preheat oven (Note 7) - Put dutch oven in oven with lid on (26cm/10" or larger). Preheat to 230°C/450°F (220° fan) 30 minutes prior to baking. (Note 8 for no dutch oven)
  • Shape dough: Sprinkle work surface with 1 tbsp flour, scrape dough out of bowl. Sprinkle top with 1/2 tbsp flour.
  • Using a dough scraper or anything of similar shape (cake server, large knife, spatula), fold the sides inwards (about 6 folds) to roughly form a roundish shape. Don't be too meticulous here - you're about to deform it, it's more about deflating the bubbles in the dough and forming a shape you can move.
  • Transfer to paper: Slide a large piece of parchment/baking paper (not wax paper) next to the dough, then flip the dough upside down onto the paper (ie seam side down, smooth side up). Slide/push it towards the middle, then reshape it into a round(ish) shape. Don't get too hung up about shape. In fact, lopsided = more ridges = more crunchy bits!
  • Dough in pot: Remove piping hot dutch oven from oven. Use paper to place dough into pot, place lid on.
  • Bake 30 minutes covered, then 12 minutes uncovered or until deep golden and crispy.
  • Cool on rack for 10 minutes before slicing.

The easiest yeast bread I've ever made. So good that I make it several times each month. Makes 2 loaves, so you can share or freeze one for later.

1 tablespoon active dry yeast
1 tablespoon sugar
1 tablespoon salt
2 cups warm water (not over 110°F)
5 1/2 to 6 cups All-Purpose Flour
cornmeal or flour for dusting
boiling water

Steps:

  • In a large bowl mix together the yeast, sugar, salt and water. Let this stand until the yeast is dissolved. Gradually add the flour, one cup at a time to the liquid and mix thoroughly until the dough pulls away from the sides of the bowl. Turn the dough out onto a floured surface to knead. (This may be a little messy, but don't give up!)
  • Knead It: Fold the far edge of the dough back over on itself towards you. Press into the dough with the heels of your hands and push away. After each push, rotate the dough 90°. Repeat this process in a rhythmic, rocking motion for 5 minutes, sprinkling only enough flour on your kneading surface to prevent sticking. Let the dough rest while you scrape out and grease the mixing bowl with a few drops of olive oil (preferred) or non stick baking spray. Knead the dough again for 2 to 3 minutes.
  • Let It Rise: Return the dough to the bowl and turn it over once to grease the top. Cover with a damp towel and keep warm until the dough doubles in bulk, about 1 to 2 hours.
  • Shape it: Punch down the dough with your fist and briefly knead out any air bubbles. Cut the dough in half and shape into two Italian- or French-style loaves. Place the loaves on a cookie sheet generously sprinkled with cornmeal. Let the loaves rest for 5 minutes.

1 (1/4 ounce) package fast rising yeast
1/2 cup sugar
1/2 cup warm water (115 degrees)
3 cups all-purpose flour
3 tablespoons unsalted butter, room temperature
1/2 teaspoon salt
2 large eggs

Steps:

  • Place yeast, 1 T. sugar, and the warm water in food processor fitted with steel blade. Process mixture briefly and let stand until yeast is foamy, about 5 minutes.
  • Add flour, butter, salt, and the remaining sugar to processor. With motor running, pour eggs through feed tube. Process just until dough gathers into ball, 15-20 seconds; it will very sticky.
  • Coat inside of large bowl with vegetable oil or butter. Place dough in bowl and turn to coat entire surface. Cover bowl with oiled plastic wrap and let dough rise in warm place until doubled in bulk, 25-35 minutes.
  • Punch down dough. Turn out onto lighly floured surface and knead dough 1 minute.
  • With sharp knife, cut dough in half and use one half as directed in either of my recipes. Keep second half of dough covered at room temperature up to 1 hour and punch down again before using.

1/2 ounce dried yeast
1/2 teaspoon sugar
1 cup lukewarm water
1 pound strong bread flour, plus 1/2 cup for sprinkling
1 1/2 ounces soft butter
2 teaspoons salt
2 tablespoons olive oil (for greasing)

Steps:

  • Gather the ingredients. You can make the bread by hand or use a stand mixer with a dough hook to speed up the process.
  • Place the dried yeast in a small jug, add the sugar, and 1/4 cup of the lukewarm water. Stir and put to one side. Keep checking the jug and within 10 minutes, it should be bubbling and foamy. If it is not, leave a little longer, the speed is often dependent on the ambient air temperature; on a cold day, it can take longer.
  • Put the flour and butter into a large baking bowl. Add the salt and once the yeast is foaming, add this to the bowl and gently stir with a spoon until everything is combined.
  • Add half the remaining lukewarm water and mix with your fingers, then gradually add more water a little at a time until you have a soft but not sticky dough. The precise amount of water you will need depends on several things, including the flour you are using, sometimes even the weather. The most important thing is to stop once the dough once it is as described above.
  • Now is the time to knead the dough . You can use a stand mixer for 6 to 8 minutes or knead on the work surface as follows. Gather the dough into a ball and fold it in half towards you. Press down and away from you firmly, but lightly with the heels of your hands. Turn dough 1/4 turn and repeat process. Do this for about 4 or 5 minutes, working quickly until the dough is smooth and stretchy. It is ready when it is soft and pliable without any stickiness.
  • Using a little olive oil, lightly grease a clean mixing bowl and put the dough in. Cover the bowl with a towel and set in a warm spot to proof , this will take about an hour. Once doubled, press fingers gently into the dough and the indentation will remain when you remove your fingers.
  • Line a baking sheet with either a silicone mat or paper. Scrape the dough from the bowl onto a lightly floured surface and knock out the air by quickly kneading for a few turns. Once flattened, roll up the dough, turn 45 degrees, and roll up again. Do this twice more the gently smooth the dough into a loaf shape.
  • Put the loaf onto the baking tray, cover again with a damp towel, and leave to prove for another hour.
  • Preheat the oven to 425 F.
  • Remove the cloth, sprinkle a little flour over the surface of the bread, and ever so gently rub it in with losing any air or height from the loaf. With a thin, sharp knife, slash the surface, no more than a quarter-inch deep, 3 or 4 times, then criss-cross the opposite creating a diamond pattern.
  • Bake in the center of the hot oven for 30 minutes until beautifully risen and golden brown. You will know the bread is cooked when it makes a hollow sound when tapped on the bottom. Note: If you want a crustier loaf, read the notes below on adding steam to your oven.
  • Remove from the oven and leave to go cold on a cooling rack. Eats with lots of butter and enjoy. The bread is best eaten fresh the day it is made, though it does make delicious toast. The loaf also freezes well, defrost slowly overnight in the fridge when you want to eat it.
