- In a Dutch oven, cook beef and sausage over medium heat until no longer pink, 5-7 minutes, breaking into crumbles; drain. Add the remaining ingredients; bring to a boil. Reduce heat; simmer, uncovered, for 30 minutes, stirring frequently. If desired, serve with additional jalapeno and sour cream.

Steps:
- Place the beef in a skillet over medium heat, and cook until evenly brown. Drain grease.
- In a large pot, mix the beans, corn, tomato sauce, tomato paste, and water. Bring to a boil, and reduce heat to low. In a food processor, finely chop the jalapenos, habanero, onion, and garlic. Mix into the pot. Mix in the cooked beef. Stir in masa flour. Season with cayenne pepper, chili powder, salt, black pepper, and sugar. Cook 45 minutes to 1 hour, stirring occasionally.

QUICK SPICY CHILI
Add a little beef and a little beer and a little chipotle, and you've got chili in no time.

Steps:
- Heat the olive oil in a large heavy skillet over medium-high heat. Add the onions, garlic, chili powder, oregano, 1 teaspoon salt and a few grinds of pepper. Cook, stirring occasionally, until the onion is soft, 3 to 5 minutes. Stir in the tomato paste, the chipotle chiles and sauce, and cook for 1 minute. Add the beef and cook, breaking it up with a wooden spoon, until no longer pink, about 3 minutes.
- Add the beer and simmer until reduced by about half, about 8 minutes. Add the tomatoes and beans and bring to a boil. Cook, uncovered, stirring occasionally, until thick, about 10 minutes. Adjust the seasoning with salt and pepper and serve with desired assorted toppings.
QUICK SPICY KIMCHEE
Steps:
- Remove outer leaves from cabbage. Cut cabbage in quarters and remove the tough inner core. Slice across sections into 1/2-inch slices. Put into a colander, add salt, and mix well. Place over a bowl and let drain, covered, until wilted, about 2 hours.
- In a large bowl combine the vinegar and sugar and stir to dissolve. Add the chili paste, ginger, garlic, and scallions and stir. Rinse the salt off the cabbage with a couple of changes of water. Dry well and add to the vinegar mixture; stir well to combine. Put into a sterilized glass jar and pack the cabbage down; add enough water to cover. Close the jar and refrigerate for at least 4 hours. This is spicy and gets spicier the longer it sits - add or subtract chili paste to your taste.

- Heat dressing in large saucepan on medium heat. Add onions, red peppers and garlic; cook and stir 3 min. or until vegetables are crisp-tender. Add meat; cook 5 to 7 min. or until done, stirring frequently.
- Add beans, salsa, broth and chipotle peppers; mix well. Bring to boil, stirring frequently; cover. Simmer on medium-low heat 10 min. or until meat is tender, stirring occasionally. Serve topped with sour cream.

- Place cooking oil, chilies, garlic cloves and gingerroot into an ovenproof glass bowl with lid.
- Bake in 300 oven for 1 hour until garlic cloves and gingerroot are golden brown.
- Remove to wire rack to cool for 30 minutes.
- Line strainer with coffee filter or several layers of cheesecloth, strain oil into glass jar. Chill.
- Oil should be clear. Chill makes about 7/8 cups.
