SIMPLE TOMATO SAUCE

Simple Tomato Sauce image

Provided by Giada De Laurentiis

Time 1h30m

Yield 6 cups

Number Of Ingredients 10

1/2 cup extra-virgin olive oil
1 small onion, chopped
2 cloves garlic, chopped
1 stalk celery, chopped
1 carrot, chopped
Sea salt and freshly ground black pepper
2 (32-ounce) cans crushed tomatoes
4 to 6 basil leaves
2 dried bay leaves
4 tablespoons unsalted butter, optional

Steps:

  • In a large casserole pot, heat oil over medium high heat. Add onion and garlic and saute until soft and translucent, about 2 minutes. Add celery and carrots and season with salt and pepper. Saute until all the vegetables are soft, about 5 minutes. Add tomatoes, basil, and bay leaves and simmer covered on low heat for 1 hour or until thick. Remove bay leaves and check for seasoning. If sauce still tastes acidic, add unsalted butter, 1 tablespoon at a time to round out the flavors.
  • Add half the tomato sauce into the bowl of a food processor. Process until smooth. Continue with remaining tomato sauce.
  • If not using all the sauce, allow it to cool completely and pour 1 to 2 cup portions into freezer plastic bags. This will freeze up to 6 months.

SAN MARZANO TOMATO SAUCE

San Marzano Tomato Sauce image

A famous family recipe - San Marzano Tomato Sauce. A luscious red sauce simmered for several hours to develop the most rich and hearty tomato sauce. Fresh herbs, authentic Italian flavors, and the most inviting aroma. Easily the best tomato sauce I've ever had! From my family to yours.

Provided by A Simple Palate

Categories     Main Course     Side Dish

Time 4h5m

Number Of Ingredients 7

8 cloves minced garlic
2 tbsp extra-virgin olive oil
4-5 28oz cans San Marzano Peeled Tomatoes ((with juices))
2-3 tbsp amore sun-dried tomato paste
1/2 tsp (each) salt & black pepper
3 Tbsp fresh basil ((for dried basil - 1 Tbsp))
2 Tbsp fresh oregano ((for dried oregano - 2 tsp))

Steps:

  • Cook garlic: In a large pot on LOW-MEDIUM heat sauté garlic in olive oil for 30-60 seconds. Stir constantly to keep garlic from burning.
  • Add tomatoes and simmer: pour canned tomatoes with juices in with the garlic. Add tomato paste, salt, and black pepper. Mix ingredients together, partially cover with lid - but not completely, and simmer on LOW heat for 4+ hours. Stir every so often to avoid burning. Note: if using a parmesan rind, add it in this step and let it simmer with sauce until finished. Remove and discard rind when ready to serve.
  • For smooth sauce: when sauce is finished cooking, use a hand immersion-blender to puree. Note: If you prefer a chunkier/thicker sauce (like I do), you can skip this step as the San Marzanos naturally break down while cooking.
  • Add herbs: when sauce is finished, mix in chopped fresh herbs. Season with additional salt & black pepper if needed and serve!

SAN MARZANO PERFECT MARINARA SAUCE RECIPE

San Marzano Perfect Marinara Sauce Recipe image

Instructions are for a Big Batch of Marinara Sauce utilizing a huge can of Nina San Marzano Tomatoes 106 ounces which you can purchase for less than four dollars at Costco. The price of yearly membership is worth it just to be able to buy these cans of tomatoes. When you open up this can look at how beautifully bright red the tomatoes are. Also, note that there is a nice beautiful tomato sauce not a watered down version like you find in most canned tomatoes. After I tried the San Marzano tomatoes I couldn't go back to regular canned tomatoes. This is a very flavorful simple marinara sauce. I usually make up a batch when I'm making lasagna and then the extra sauce goes into the freezer to use later. Don't rate this recipe negatively if you choose to make it with other types of tomatoes rather than San Marzano. I have received so many complements on my sauce. Try this you won't be sorry. Categories     < 4 Hours

Time 1h40m

Yield 10-12 cups, 12 serving(s)

Number Of Ingredients 7

106 ounces san marzano tomatoes (Nina San Marzano Imported Canned Tomatoes)
8 garlic cloves (finely sliced)
8 garlic cloves (crushed)
20 basil leaves (sliced)
1 cup olive oil
2 teaspoons sea salt (or to taste)
splash white wine

Steps:

  • Open the can of Nina San Marzano tomatoes, being very careful since the large size of the can makes it awkward. The lid is very sharp be careful not to cut yourself. Pour the tomatoes into a large pot. Mash them a few times with your potato masher and set aside.Slice your garlic with a garlic slicer or use a sharp paring knife to cut very thin slices.
  • Now you'll need a fairly large saute pan. Heat about ¼ cup of the olive oil in the pan on medium and then add the sliced garlic. Saute only until golden brown. (Be careful not to burn it, there is nothing worse than burnt garlic. Watch your heat if it's too hot it can burn the garlic almost instantly. If you do burn the garlic you might as well start all over again.) Then add the crushed garlic, splash with some white wine if desired and saute for just a little longer.
  • Remove the saute pan from the heat and pour the garlic mixture into the large pot with the tomatoes. Pour in the remaining olive oil, salt and simmer uncovered for approximately 60 to 90 minutes. When the sauce has reduced to the thickness you like, remove from heat and add the freshly cut basil and stir.
  • There is a common misconception that you should cook the family recipe for pasta sauce "all day". Not this marinara sauce recipe!

SAN MARZANO TOMATO SAUCE RECIPE

San Marzano Tomato Sauce Recipe image

Excellent tomatoes, extra virgin olive oil and fresh basil makes a rich and luscious sauce in just 30 minutes. This sauce is simple and basic but the flavors will blow you away!

Provided by Marcellina

Categories     Main Course     Pasta

Time 30m

Number Of Ingredients 7

2 garlic cloves
1 small onion (or ½ large onion)
¼ cup extra virgin olive oil
28 oz (800 grams) canned San Marzano tomatoes
1 teaspoon salt (more or less according to taste)
¼ teaspoon freshly ground black pepper
¼ cup fresh basil (chopped)

Steps:

  • Place garlic cloves on a board and with the flat side of a knife press the cloves to slightly crush them. Remove the skins. Set aside.
  • Chop the onion very finely or alternatively mince the onion. Set aside.
  • In a cold skillet, add extra virgin olive oil and cracked, peeled garlic.
  • Place the skillet over medium heat, allowing the garlic to simmer and become pale gold stirring regularly. Don't let the garlic burn! Remove the garlic and discard.
  • Add the very finely chopped or minced onion to the garlic flavored oil and cook over medium heat for 5-8 minutes, stirring regularly. Allow the onion to soften but not color beyond golden. Check the cooking of the onion closely and adjust the temperature if you need to.
  • Add the pureed tomatoes, a sprinkle of salt and black pepper. At this stage don't add any water - you can always add some later if needed.
  • Reduce to low heat and simmer gently uncovered for 20 minutes until slightly thickened. In the last 5 minutes stir in chopped basil. Taste for salt and adjust as desired.
  • Delicious stirred through al dente pasta and topped with parmesan cheese!

SAN MARZANO TOMATO-BASIL SAUCE

San Marzano Tomato-Basil Sauce image

Make and share this San Marzano Tomato-Basil Sauce recipe from Food.com.

Provided by balpa

Categories     Sauces

Time 55m

Yield 4-5 serving(s)

Number Of Ingredients 10

1 (12 ounce) can whole peeled san marzano tomatoes (available at Italian specialty stores)
4 garlic cloves, thinly sliced
1 large yellow onion
1 tablespoon extra virgin olive oil
1 teaspoon marsala wine or 1 teaspoon sugar
fresh basil leaf, soaked
fresh oregano
salt
ground black pepper
1/2 red pepper (optional)

Steps:

  • Heat Extra Virgin Olive oil in heavy bottomed saucepan with a low to moderate flame (Add just enough to coat the bottom of the pan).
  • Add chopped onion and sliced garlic to pan, mixing evenly.
  • When the onion has turned translucent and the garlic is slightly golden you may do one of two things: If you prefer a delicate tasting sauce add just the tomatoes; If you prefer a richer, bolder sauce add half a red pepper (You may want to discard some of the pepper's seeds).
  • Cook the red pepper evenly on all sides, and then add the tomatoes.
  • When you add the tomatoes raise the flame slightly.
  • Let the tomatoes simmer for about one half an hour to forty five minutes- until most of the tomato juice has evaporated (yhe consistency will get thicker with time).
  • When the juice has mostly evaporated add a teaspoon of Marsala wine or sugar.
  • Add fresh basil, salt, pepper, and oregano.
  • Cook the sauce a few more minutes longer.
  • Serve with imported pasta (vhoose something light and not to starchy- fresh pasta is best).
  • Garnish pasta with parmesan cheese- Bon Apetite!
