Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Arrange the asparagus on a baking sheet. Coat with cooking spray, and season with salt and pepper.
  • Bake asparagus 12 minutes in the preheated oven, or until tender.

2 garlic cloves, sliced
2 ounces butter
3 tablespoons balsamic vinegar
3 tablespoons water

8 ounces firm tofu, cut into 4 slices
1 teaspoon thyme

Steps:

  • Heat the oil in a pan over medium heat. Add garlic and cook 1 minute.
  • Add butter, vinegar and water; cook another minute then add asparagus and pepper. Cook 4 more minutes, until tender.
  • Place the asparagus in bowls.
  • Put tofu slices in the pan with the sauce, add thyme, and cook until heated through.
  • Place on the asparagus, and serve with the remaining sauce.

2 tablespoons butter, melted
2 tablespoons balsamic vinegar
1 teaspoon chopped fresh thyme
1/4 teaspoon salt
1/2 teaspoon grated fresh lemon rind
2 lbs asparagus spears
cooking spray

Steps:

  • Combine shallots, butter, vinegar, thyme salt and rind, stirring well with a whisk.
  • Preheat oven to 450 degrees.
  • Snap off woody ends of asparagus.
  • Arrange spears in a single layer on a shallow baking pan coated with cooking spray.
  • Cover with foil and bake for 5 minutes.

1 tablespoon honey
1 tablespoon butter

1 lb asparagus, trimmed

  • Preheat outdoor grill or indoor grill pan to medium high.
  • In a small saucepan, bring vinegar and honey to a boil and cook until reduced by half, whisking occasionally, about 3 minutes.

1 tablespoon cornstarch
1/2 teaspoon sugar
1-1/4 cups vegetable broth
4 teaspoons reduced-sodium soy sauce

1 pound fresh asparagus, trimmed and cut into 1-inch pieces
1 medium yellow summer squash, halved and sliced
2 green onions, thinly sliced
1 package (14 ounces) extra-firm tofu, drained and cut into 1/2-inch cubes

1/4 teaspoon pepper
2 cups hot cooked brown rice
2 tablespoons sliced almonds, toasted

Steps:

  • In a small bowl, combine the cornstarch, sugar, broth and soy sauce until smooth; set aside. , In a large nonstick skillet or wok, stir-fry 1 teaspoon ginger in 1 teaspoon oil for 1 minute. Add asparagus; stir-fry for 2 minutes. Add squash; stir-fry 2 minutes longer. Add onions; stir-fry 1 minute longer or until vegetables are crisp-tender. 2 lbs asparagus spears (trim or peel any stalks that seem tough)
1 tablespoon olive oil
1/4 teaspoon salt (I use kosher salt)
1/8 teaspoon black pepper
2 tablespoons unsalted butter
2 teaspoons soy sauce
1 teaspoon balsamic vinegar

Steps:

  • Arrange asparagus in a single layer on baking sheet; toss to coat with olive oil.

6 tablespoons butter

2 tablespoons lemon juice
1/2 teaspoon lemon zest

1 teaspoon chopped tarragon, plus more for garnish
1 tablespoon chopped dill, plus more for garnish (optional)

Steps:

  • Snap off and discard the tough bottoms of the asparagus spears. If using large, thick asparagus, peel the lower ends with a vegetable peeler.
  • Put butter in a wide skillet over medium-high heat. Add asparagus in one layer and season with salt and pepper. Add 1/2 cup water, cover, and bring to a simmer. Cook until the asparagus is firm-tender, about 3 minutes. Take care not to overcook them; they should still be bright green. (They will continue to cook a bit once the heat is off.) Remove the asparagus from the pan and place on a serving platter.
