SPICY SHRIMP PASTA IN GARLIC TOMATO CREAM SAUCE
Italian-style pasta with spicy shrimp smothered in a homemade garlic tomato cream sauce. Easy shrimp pasta recipe that you can make at home any time with easy ingredients!

- Heat olive oil in a large skillet on medium-high heat. Add shrimp and cook on one side for about 1 minute, until shrimp turns pink on that side. While it cooks, sprinkle the top of shrimp with crushed red pepper, paprika and salt to cover every single shrimp. Make sure not to crowd the shrimp in the skillet, otherwise moisture will form and shrimp won't sear right. And, don't skimp on spices. Using spatula turn shrimp over to the other side and cook for about 2 more minutes.
- Remove shrimp to a plate, being careful to leave all the oil in the skillet.
- To the same skillet, add chopped onion and minced garlic and cook on medium high heat in the olive oil that will have a nice reddish color from paprika and crushed red pepper. Cook for about 2 minutes, occasionally stirring, until onions soften.
- Add crushed tomatoes and chicken bullion cube dissolved in 1/4 cup boiling water. Add basil and oregano, mix, bring to boil and reduce to simmer. Simmer for about 10-15 minutes, mixing occasionally and crushing all tomatoes into very small bites, until the sauce reduces just a bit. Season with more red pepper and salt, if needed. In the end, while on simmer, add heavy cream, mix it in, and immediately remove from heat.
- In the mean time, bring a large pot of water to boil and cook pasta al dente according to the package instructions. Drain.
- Add back the cooked shrimp and cooked and drained pasta to the skillet with the sauce. Mix everything well to combine. Reheat on low simmer, if needed. Do not bring to boil or high heat as it might affect the sauce texture. Add more salt and pepper if necessary.
- When serving, I like to sprinkle the top of pasta with just a touch of crushed red pepper.

- Heat a large pot of water to the boil, add 1 tsp salt and pasta (cooking time about 11 minutes), then start your sauce.
- When pasta is done, usually at the most critical point of cooking the sauce, reserve 1/4 cup of pasta water, and drain the pasta.
- Put butter and olive oil into a large frying pan over medium-high heat and add the garlic when the butter melts.
- Cook garlic, stirring constantly, until it becomes soft, but not browned at all, about 3-4 minutes.

- In a large saute pan, heat 1/4 cup oil and cook garlic and shallot until translucent, about 2 minutes. Deglaze the pan with the wine, and add parsley, basil and thyme and let the liquid reduce by half. Using a fine strainer, strain the reduction into a clean saucepan and add the cream. Over low heat, let the sauce reduce to medium thickness. To the now empty saute pan, add 2 tablespoons olive oil, saute scallops, cook until opaque and remove to a utility platter in a warm place. Then use the same pan to saute shrimp just until pink, and remove to the utility platter. Add cream sauce to saute pan to toss the drained pasta or rice with the cream sauce and seafood, reserving a few scallops and shrimp for the top. - Slice shrimp in half length-wise, remove vein, and rinse under cold water. Drain in colander.
- Dissolve the tomato paste in the wine and have ready.
- Put the olive oil and the garlic in a saucepan and turn the heat to medium. Cook and stir the garlic until it is a pale gold.
- Add the wine/tomato mixture all at once to avoid splattering. Cook for 3 or 4 minutes, stirring occasionally.
- Add the shrimp and season with salt and a liberal grinding of pepper.
- Increase heat to medium high and cook shrimp for 2 minutes, just until done, turning them frequently to coat them in the sauce.
- Remove saucepan from heat.
- With a slotted spoon, remove about half of the shrimp and puree them using a blender or food processor (careful, they are hot!).
- Return the pureed shrimp to the saucepan and turn the heat to medium.
- Add the cream and cook about 1 minute, stirring constantly till the cream thickens slightly and the sauce is hot.
- Taste and correct seasonings, if necessary.
- Toss the sauce with cooked drained pasta.
- Sprinkle with the fresh parsley.
- Serve at once.

- Season shrimp with salt and pepper. Melt butter over medium heat in a large skillet. Add shrimp to skillet and saute for 3-4 minutes, or until shrimp have just turned pink on both sides (stirring frequently). Transfer shrimp to a plate and set aside.
- Add chicken broth, pasta sauce and Italian seasoning to skillet and stir to combine. Increase heat to high and bring to a boil. Add pasta and return to a boil. Reduce heat to low. Cover and simmer for approximately 12 minutes, or until pasta is tender.

- Melt butter in a large skillet over medium high heat. Add shrimp and cook for approximately 1-1/2 minutes on each side, or until shrimp have just turned pink on both sides. Transfer shrimp to a plate and set aside (leave any juices in the skillet).
- In the same skillet, add garlic and cook until fragrant, stirring constantly (about 30 seconds).
- Add heavy cream and diced tomatoes with juices, Parmesan cheese and Italian seasoning. Stir well to combine.
