1 tablespoon vegetable oil
3 tablespoons butter
Two 6-ounce fillets salmon
Kosher salt and freshly ground black pepper
1 tablespoon honey
1 tablespoon soy sauce
Zest and juice of 2 limes, plus lime wedges, for serving
2 tablespoons finely chopped fresh cilantro
Steamed rice, for serving

Steps:

  • Add the oil and 1 tablespoon of the butter to a nonstick skillet and place over medium-high heat. Season the salmon on both sides with salt and pepper. Add the fish to the skillet and cook for 3 to 4 minutes per side, depending on the thickness of the fish and the degree of doneness you like. Remove from the skillet and keep warm.
  • Return the skillet to medium heat and add the honey, soy, remaining 2 tablespoons butter and half of the lime zest and juice. Cook, stirring, until the butter melts and starts to bubble. Cook for a minute until the sauce thickens a little. Add the salmon and spoon over the sauce. Cook for another minute, basting as you go. Sprinkle generously with the cilantro.
  • Stir the remaining lime juice and zest into the cooked rice. Serve the salmon with the rice, extra sauce and lime wedges on the side.

This is my quick-fix for when I have salmon in and have forgotten to do anything with it. Obviously it would taste better marinated but this is the quick fix and the flavours are reasonably strong anyway. It's not perfect and it's not the best salmon recipe you'll try but it's really quick and tasty and painless to make. I bake it with the topping/sauce, but I don't see why it wouldn't work if you would prefer to put it on afterwards.

1 salmon fillet
1/2 cup chopped fresh coriander (cilantro)
2 tablespoons lime juice
1/2 teaspoon tartar sauce
1 dash olive oil

Steps:

  • Pre-heat your oven to 200c.
  • Mix the last 4 ingredients together in a small bowl to make the sauce.
  • Put the salmon on a baking tray and cover with the sauce (you can do it all in a foil parcel if you prefer).
  • Bake for approximately 15-20mins or until the salmon is cooked through.

  • Finely chop cilantro and in a small bowl stir together with sour cream, lime juice, coriander seeds, and salt and pepper to taste. Arrange salmon on a platter and serve with cilantro cream and bread. Garnish salmon with lime halves.

  • Sprinkle garlic powder, salt and pepper on top of salmon steaks or fillets.

1 cup cilantro, leaves and tender stems, chopped
1/4 cup finely chopped chives (from about 1/2 bunch)
1 garlic clove, very finely chopped
1 tablespoon distilled white vinegar
1/4 cup olive oil

1/2 teaspoon smoked paprika
2 tablespoons olive oil

Coarse salt and freshly ground pepper
1/4 cup fresh lime juice

This works best as a starter and needs to be made around half a day ahead of when you need it. You don't cook it but instead the salmon sort of cooks itself in the lime marinade. Not yet tried.

4 limes, juice of
2 red chilies (more if you like it hotter)
2 tablespoons fresh coriander (chopped) or 2 tablespoons cilantro (chopped)
1/4 teaspoon ground cumin
2 garlic cloves (finely chopped)
4 cm grated fresh ginger

Steps:

  • Shred the salmon into smallish sized pieces and place in a wide, non-metallic bowl.
  • Pour the lime juice, chilli, corriander, cumin and garlic over the fish and season with salt & pepper.
  • Take the grated ginger and firmly squeeze the juice over the salmon. Discard the pulp.
  • Mix well (but gently), cover with cling film and refrigerate for a minimum of 4 hours before serving.
