1 cup bread flour, plus more for rolling out the dough
1/2 teaspoon salt
1/3 cup warm water, plus more if necessary
1 teaspoon extra-virgin olive oil

Steps:

  • Mix the flour and salt in the food processor.
  • Stir together the water and oil and pour over the flour mixture.
  • Process until a soft dough ball forms. If the dough is too stiff, add another tablespoon of water and continue to process until the dough is well kneaded, 15 - 20 seconds.
  • Lightly dust your hands and a clean surface with flour. Turn out the dough onto the lightly floured surface and cut the dough into quarters.
  • Working with 1/4 of the dough at a time, roll each out to a 12 x 4 - inch rectangle, dusting with flour and turning as necessary to prevent it from sticking.
  • Line a large cookie sheet with parchment paper or a silicone mat. (All four flatbreads should fit crosswise on the same sheet.)
  • Top as desired and bake in a hot (450F-500F degree) oven until the crust is golden and crisp (10 - 15 minutes).

  • Pour 1 1/2 cups warm water into a large bowl; sprinkle with yeast and let stand until foamy, about 5 minutes.
  • Whisk sugar, oil, and salt into yeast mixture. Add flour and stir until a sticky dough forms. Transfer dough to an oiled bowl and brush top with oil. Cover bowl with plastic wrap and set aside in a warm, draft-free place until dough has doubled in bulk, about 1 hour. Turn out onto a lightly floured surface and gently knead 1 or 2 times before using.
  • Dough can be stored in an oiled bowl, covered with plastic, in refrigerator up to 2 hours. To freeze, wrap dough in plastic and freeze in a resealable freezer bag up to 3 months. If you plan to use it in a recipe that calls for half a batch, divide it before freezing.

  • Mix warm water, sugar and yeast together. Let that sit for 5 minutes.
  • Add flour and salt to the water, sugar, and yeast. Mix this until smooth and let it raise for 10 minutes. I used my kitchenaid mixer with the dough hook and it was so easy and worked great!
  • Prepare the dough for what you will be making and let rest for another 10 minutes before putting into the oven.
  • Bake at 400 degrees for 15-20 minutes.
  • *If making a pizza, you can cut the dough recipe in half and make a thinner crust pizza and breadtwists. That is what we like to do.

Steps:

  • *If baking immediately, preheat oven to 425 degrees F. Lightly grease a perforated pizza pan.
  • In a medium bowl, stir together 1 cup of flour, yeast, salt, sugar, oregano and garlic.
  • Add water and oil and stir until combined -- it will be a very wet dough.
  • Add just enough of the remaining flour so that a soft but not sticky dough forms. Add the flour gradually and knead briefly until combined so that you can feel when it is ready -- it will still be soft (not feel firm or tough) but won't stick to your hands. To knead, simply press the flour into the dough, fold the dough and press, fold and press.

  • Whisk 1 1/3 cups warm water (105 degrees F) and the sugar in a bowl; sprinkle the yeast on top. Set aside until foamy, about 10 minutes. Stir in the olive oil.

With the help of two allies in the kitchen - your food processor and your freezer - now homemade pizza dough is nearly as simple as taking a chicken breast out of the freezer to thaw on your way out the door in the morning.

2 3/4 cups/390 grams bread flour
2 1/2 teaspoons/7 grams active dry yeast (1 packet)
2 teaspoons sea salt
1/4 cup extra-virgin olive oil
1 cup warm water
2 or 3 tablespoons medium or coarse cornmeal

Steps:

  • Put the flour, yeast and salt in a food processor. With the machine running, pour the oil through the feed tube, then add the water in a slow, steady stream. Continue to process for 2 to 3 minutes (the dough should form a rough ball and ride around in the processor). The finished dough should be soft, slightly sticky and elastic. If too dry, add a bit more water; if too wet, a tablespoon or so more flour.
  • Lay a 12-inch-long piece of plastic wrap on a clean work surface. Work the dough into a rectangle on the plastic, about 8 inches long and 6 inches wide. Press your fingers into the top of the dough all over, making indentations as though it were a focaccia. Fold the left third of the dough over (as you would a letter) and repeat the indentations. Fold the right third over and make the indentations again. Cover the folded dough with plastic wrap and let rise for 20 minutes.
  • Cut the dough in half, form each piece into a neat ball, wrap tightly in plastic wrap and transfer to the freezer. The morning before you want to make pizza, transfer the dough to the refrigerator to thaw.
  • Bring the dough to room temperature, 15 to 20 minutes. Put a pizza stone in the oven and preheat to 550 degrees. (If you don't have a stone, oil a rimmed baking sheet and set aside.) Dust a peel or the greased baking sheet generously with cornmeal. Working with the dough in your hands (not flat on a work surface), gently begin to stretch the dough into a circular shape, pressing your fist into the center of the dough and pulling at the edges with your other hand. With both hands, stretch the dough, being careful not to tear it. Working in a circular motion, pull the thicker edges of the dough outward, letting gravity help you. Continue to stretch the dough until it's relatively even in thickness (the edges will be thicker) and you have the size you want. Carefully lay it on the peel or baking sheet.
  • Top the pizza as desired and either slide it off the peel and onto your heated stone, or place the baking sheet into the oven. Cook the pizza for 6 to 10 minutes or until the crust is golden and the cheese is bubbling.

2 cups room-temperature water

Steps:

  • Place flour in a large mixing bowl.
  • Add sugar.
  • Add salt.
  • Add olive oil.
  • Add yeast.
  • Add water.
  • Stir all ingredients together with a wooden spoon, or place in electric mixer.
  • Once combined, set the dough aside to rest for 5 minutes.
  • Stir again for 3 to 5 minutes, adding more water or flour as needed.
  • Dough should be wetter and stickier than typical bread dough. Dry enough to hold together and pull away from the side of the bowl when mixed, but doesn't need to be dry enough to knead by hand.
  • Divide dough into 4 pieces.
  • Lightly coat each one with olive oil.
  • Place each piece in a separate freezer bag.
  • Refrigerate dough over night or at least six hours prior to use.
  • Dough should be at room temperature before spreading and using.
  • Freeze remaining dough for up to a month in your freezer.
  • Frozen dough should be moved from freezer to refrigerator the night before use then allowed to reach room temperature for a couple of hours before spreading and using.

QUICK PEPPERONI PIZZA

300g/10½oz strong white bread flour, plus extra for dusting
2 tsp baking powder
½ tsp sea salt
2 tsp rapeseed oil
150-175ml/5-6fl oz lukewarm water
freshly ground black pepper
120g/4½oz passata
1 tbsp tomato purée
½ tsp dried mixed herbs
½ tsp sea salt
1 mozzarella ball, torn into small pieces
10 pepperoni slices
30g/1oz cheddar, grated

Steps:

  • Preheat the oven to 200C/180C Fan/Gas 6 and place a large baking tray upside-down on a shelf.
  • To make the dough, sift the flour and baking powder into a large bowl. Add the salt and a pinch of pepper, then stir in the oil. Make a well in the centre, then stir in the warm water and mix to a soft dough, drawing the flour in from the side of the bowl a little at a time - you might need to add another 25ml/1fl oz water if the dough is a little dry; you want it to be slightly sticky and soft.
  • Tip the dough onto a lightly floured work surface and knead for 2 minutes, until smooth and springy.
  • Place a sheet of greaseproof paper on the work surface, then dust with a little flour and place the dough on top of it. Carefully roll the dough out into a 30cm/12in disc, roughly the thickness of a pound coin. Pick the paper up and carefully slide it onto the hot baking tray in the oven. Bake for 3 minutes.
  • Meanwhile, pour the passata into a bowl, then add the tomato purée, mixed herbs and sea salt and black pepper and mix.
  • Remove the dough tray from the oven. Cover the base with the tomato sauce, using the back of a spoon, leaving a small gap around the edges of the dough. Scatter the mozzarella over the tomato sauce, then top with the pepperoni and cheddar (you can add any other toppings you fancy at this point - see tips below.)
  • Bake for 15 minutes, or until the base has puffed up and is cooked through and the cheese is golden and bubbling. Cut into wedges and serve immediately.

2 tsp (7 gr) fine sea salt or kosher salt
1 TBSP (15 gr) olive oil (can sub a different oil if desired)
1 cup (237 gr) warm water (not hot, should be warmer than body temperature about 115-120F)

Steps:

  • Prep your oven: Before starting any of your dough or pizza ingredient prep, preheat your oven to the hottest setting. This is 500F for most ovens. Position your oven rack on the lowest position in your oven. Place your baking stone, baking steel, or a sheet pan turned upside down on the lowest rack.
  • Combine dough ingredients: Combine all of the ingredients for your pizza dough in a bowl with a spoon or rubber spatula. The ingredients can go in all at once, no need to hydrate your yeast separately. Stir until the ingredients are coming together.

If you do not have a stand mixer, knead the dough by hand on a clean work surface for about 8-10 minutes. Until the dough is smooth and elastic.
  • Rest the dough: Divide the dough into two equal pieces. Place a piece of plastic wrap or a clean kitchen towel right on top of each piece of dough and let it rest for at least 20 minutes. This will relax the gluten structure and make it easier to stretch out. You can rest the dough for up to 1 hour at room temperature before shaping the dough. It will develop more yeast flavor with a longer resting time.

  • Pre-heat your oven to 220ºC/430ºF. If you have a pizza stone, let it preheat in your oven.
  • Mix together the warm water and yeast. I mix it right in the bowl of my stand mixer.
  • Add in your other ingredients, and mix them together with the dough hook attachment, if you have one, for several minutes. If you aren't using a stand mixer, knead with your hands for several minutes.
  • Form a ball with the dough, and leave it alone for 8-10 minutes.
  • Roll the dough out into the desired shape(s). I used to always make one round pizza that fits on my pizza stone, but now prefer making several individual pizzas. You could also make one large, rectangular one, depending upon the baking tray or pizza stone you are using. Leave the edges a bit thicker than the center, forming your crust. To keep the pizza from sticking, I sprinkle the pan with corn meal, and place the dough round over it.
  • Brush your dough round with olive oil.
  • Bake your dough in the oven for around 8-10 minutes.
  • Remove the partially baked pizza dough, and add your sauce, cheese, and toppings.
  • Bake for another 10-12 minutes, or until your pizza crust is a beautiful golden brown color.
