NANA'S HEAVENLY HASH

Nana's Heavenly Hash image

This is my mother's gelatin salad that she always made for holidays -- my sisters and I have continued this tradition since 1968. Please do not leave out the extra sharp cheddar cheese -- the cheese makes this salad! Cook time is the approximate chill time. The number of servings is also approximate. This is pretty served in a trifle bowl, or a large clear glass bowl. -- NOTE: 1/3 cup sour cream can be folded-in with the cool whip to make the fruit salad less sweet --

Categories     Gelatin

Time 4h20m

Yield 16-18 serving(s)

Number Of Ingredients 10

1 cup pecans (Toasted and chopped)
2 (3 ounce) packages orange gelatin (can be sugar free)
1 (8 ounce) can crushed pineapple (drained ~ save juice)
2 cups miniature marshmallows
1 1/4 cups extra-sharp cheddar cheese (freshly grated ~ DO NOT OMIT CHEESE)
1 (8 ounce) can mandarin orange segments (drained ~ save juice)
1 cup maraschino cherry (drained and chopped)
1 cup flaked coconut
1 (8 ounce) carton Cool Whip (can be fat free)
1/3 cup sour cream (to cut the sweetness) (optional)

Steps:

  • Stirring constantly, toast pecans in a dry medium-hot iron skillet until fragrant! Be careful not to scorch them! Set aside to cool, then chop!

  • Add 2 cups cold water and cool until partially set.
  • Add all ingredients EXCEPT cool whip.
  • When thickened but not completely set, fold sour cream into cool whip, then into jello-fruit mixture until well combined.
  • Pour into a pretty clear glass bowl, or trifle bowl ~ this makes a large amount!
  • Chill for several hours before serving.

HEAVENLY JAM

Heavenly Jam image

This is an old recipe that has been in my family for a very long time. Again, as in many Mennonite recipes the measurements aren't exact since it's hard to expect how many cups chopped fruit with be. You will need equal cups for sugar to cups of fruit. Ex. 4 cups of fruit and 4 cups of sugar.

Provided by BK GeeGee

Categories     Fruit

Time 10h

Yield 4-6 serving(s)

Number Of Ingredients 6

6 apples
6 pears
6 peaches
2 oranges
1 lemon
1/3 cup maraschino cherry

Steps:

  • Wash the oranges and lemons and slice thinly. Put them in a pot with just enough water to cover the fruit. Let it stand in the water overnight. Don't drain the water but cook them in it until they're soft. Wash and peal the remaining fruit. Add to the citrus mixture starting with the firmest fruit first. Cook a bit longer until all the fruit is tender. Measure the fruit and add equal amounts of sugar to the fruit. Boil it slowly until it's thick like a syrup. The jam with thicken more as it cools. Stir in quartered maraschino cherries for colour. Pour into hot sterilized jam jars and seal with the lid. The lids should pop on their own if the jars were hot prior to pouring the jam into them.

GELATIN HEAVENLY HASH (JELL-O BRAND)

Gelatin Heavenly Hash (Jell-O Brand) image

I bought a bunch of jello on sale and didn't know what to do with it. I discovered Favorite Recipes Jello Brand Fun and Fabulous Recipes, and oila! I used orange gelatin, but you can use whatever flavor you want. I also substituted blueberries for the crushed pineapple (I didn't have any). Next time I'd like to try this with real whipped cream. I used sour cream (I didn't try it with non-dairy whipped topping). Very tasty stuff and simple to make. Cook time excludes chill time.
