Make your own vegan protein with this tasty alternative to chicken. Use in stir fries or deep-fry in batter until crispy. Serve with your favourite sides

250g firm tofu
150ml unsweetened soy milk
2 tsp miso paste
2 tsp Marmite
1 tsp onion powder
2 tsp garlic powder
160g wheat gluten
40g pea protein or vegan protein powder
1½ litres vegetable stock

Steps:

  • Blitz the tofu, soy milk, miso, Marmite, onion powder, garlic powder, 1 tsp salt and ½ tsp white pepper in a food processor until smooth.
  • Tip into a bowl and add the wheat gluten and pea protein or protein powder. Mix to form a dough. Once the dough has come together, give it a really good knead, stretching and tearing for 10-15 mins. It will be ready once the dough feels springy.
  • Pour the vegetable stock into a pan. Bring to a simmer. Flatten out the seitan to a thickness of 1cm and chop into chicken-breast-sized chunks. Simmer these in the stock for 20 mins, covered with a lid, then allow to cool in the stock. Ideally, do this the day before and leave to chill in the fridge. The seitan chunks can also be frozen if you wish. When you're ready to use the seitan in a recipe, pat it dry with kitchen paper then chop or tear into smaller pieces before cooking, if you like.

This hearty meat substitute, widely used in Asian cuisine, is a light, protein-rich addition to stir-fries, wraps, and soups.

2 1/2 cups vital wheat gluten flour
1/4 cup garbanzo bean flour
1/4 cup nutritional yeast seasoning
1 teaspoon garlic powder
1 teaspoon ginger powder
1/4 teaspoon coarse salt
1/4 teaspoon freshly ground black pepper
3/4 cup cold organic vegetable broth
3/4 cup cold water
1/4 cup Bragg Liquid Aminos or reduced-sodium soy sauce
2 tablespoons extra-virgin olive oil
4 cups organic vegetable broth
4 cups water
1/4 cup Bragg Liquid Aminos or reduced-sodium soy sauce
2 tablespoons fresh lemon juice

Steps:

  • Make dough: Combine dry ingredients in a bowl and wet ingredients in another bowl. Add wet ingredients to the dry, mixing with a fork until blended completely. Transfer dough to a clean, flat surface and knead by hand 10 times. Let rest 3 minutes. Knead 10 to 15 timesmore; let rest 15 minutes more.
  • Meanwhile, in a pot, bring broth ingredients to a boil. Reduce to a simmer and cover.
  • Roll dough into a thick log (about 3 inches wide by 8 inches long). Cut crosswise into eight 1/2-inch-thick disks and flatten with hands to about 1/4-inch thickness. Add disks to broth, cover, and simmer until the middle of the dough is as firm as the edges, 1 to 1 1/2 hours. (If the disks become exposed during cooking, add just enough water to cover. Be sure the broth does not boil; this produces spongy seitan.) Remove from heat and let cool, uncovered, in broth.

  • 1. Combine the flour and water in a bowl (it is always a 1:3 ratio so scale up or down depending on how much seitan you want to make). Knead the mixture until it comes together in a ball. Put the dough in a bowl of cool water for at least an hour (but no longer than 6 hours) to allow the gluten to form.
  • 2. Then it's time to rinse the starch away. Knead the dough under the water and every time it gets very cloudy, dump it out and add new water; use a colander here to ensure you don't lose any dough. The dough is ready when the water is almost clear, and the dough looks stringy. Let it rest in the colander for 30 minutes to an hour.
  • 3. Add in whatever flavoring you want: Spices, seasonings and other ingredients can all be incorporated at this stage. Stretch and knot the dough to help shape it. Allow the seitan to rest for at least 20 more minutes (or you can keep it in this stage for up to a day, if you'd like).
  • 4. When you are ready to cook, place a deep pan on medium high heat with a bit of oil. Cook the seitan for approximately 5 minutes on each side, or until it browns. Then add water or broth to cover and let it cook covered on a low simmer for approximately 2 hours (whatever liquid you cook it in will impart its flavor into the seitan, so use more or less flavoring as you'd like).
