- In a large saucepan, cook the beef, onion and green pepper over medium heat until the meat is no longer pink; drain. Add the next 6 ingredients; cover and simmer for 20 minutes. Serve with cheese if desired.

QUICK & EASY CHILI
This is a very easy chili recipe I got from a Pampered Chef recipe called Hearty Six-Can Chili I found a few years ago and just leave out the 10 3/4 oz can of condensed cream of mushroom soup. I love to make this and serve with tortilla chips, sour cream and cheddar cheese. Yummy!

- Place ground beef and onion in Dutch (6-qt.) Oven. Cook and stir over medium heat 8-10 minutes or until beef is no longer pink, breaking beef into small crumbles. Drain, if necessary.
- Open chili beans, tomatoes and black beans, Drain and rinse black beans.
- Add all ingredients including chili powder to meat mixture in Dutch Oven. Bring to a boil; reduce heat and simmer, covered, over low heat 30 minutes, stirring occasionally.

QUICK CHILI I

- In a large stock pot lightly brown ground beef, and drain if needed.
- Add onion and garlic and cook until onion is translucent.
- Add tomatoes, diced tomatoes with chile peppers, tomato sauce, water, kidney beans, pinto beans, chili powder, cumin, sugar, salt, pepper and hot sauce. Simmer for 30 minutes and then serve.

- Place the ground beef in a large pot and throw in the garlic. Cook over medium heat until browned. Drain off the excess fat, and then pour in the tomato sauce, chili powder, cumin, oregano, salt and cayenne. Stir together well, cover, and then reduce the heat to low. Simmer for 1 hour, stirring occasionally. If the mixture becomes overly dry, add 1/2 cup water at a time as needed.
- After an hour, place the masa harina in a small bowl. Add 1/2 cup water and stir together with a fork. Dump the masa mixture into the chili. Stir together well, and then taste and adjust the seasonings. Add more masa paste and/or water to get the chili to your preferred consistency, or to add more corn flavor. Add the beans and simmer for 10 minutes. Serve with shredded Cheddar, chopped onions, tortilla chips and lime wedges.

- Add the oil to a Dutch oven and set over medium heat. When hot, add the beef and cook, stirring to break up the meat, until browned, 8 to 10 minutes. Add the garlic and stir, then add the tomato sauce, chili powder, ancho chile powder and salt and pepper to taste. Cook for a minute, then add the kidney and pinto beans and the chili sauce. - In a large skillet over medium-high heat, cook ground beef until evenly browned. Drain off grease, and season to taste with salt and pepper.
- In a slow cooker, combine the cooked beef, kidney beans, tomatoes, celery, red bell pepper, and red wine vinegar. Season with chili powder, cumin, parsley, basil and Worcestershire sauce. Stir to distribute ingredients evenly.

CHRIS' CHILI
This is my personal recipe, and it has won over 12 chili cook-offs, and I figured I'd share. It is a medium steak and bean chili. If I had to compare it, it would be similar to Steak N' Shake's chili, but better! It's rather involved, but trust me. Worth every minute! Try it. You will not be disappointed!

- Prepare soup from a packet of onion soup mix according to the package directions, and set 1 1/2 cups aside.
- Place bacon grease into a large stainless steel soup pot over medium-high heat, and cook and stir the cubed round and sirloin steak meat in the bacon fat until well browned, about 10 minutes. Pour in the reserved onion soup, bring to a boil, then reduce to a simmer and cook for 7 minutes, stirring to dissolve any browned flavor bits from the pot.
- Stir in salt, chili powder, cumin, black pepper, kidney beans, tomato paste, and tomato sauce. Bring the mixture to a boil, stirring frequently to avoid burning the bottom, then cover, reduce heat to low, and simmer for 1 hour, stirring occasionally. EASY CROCK POT CHILI
My latest chili recipe - I've found it tastes best if made the day before. Adjust the heat by using hot, medium or mild picante sauce and taco seasoning (I use hot for both). Red pepper flakes are optional, but I like it hot and use 2 teaspoons.

- Saute onions in olive oil until translucent. add minced garlic and continue to saute until fragrant, about 30 seconds.
- In dutch oven, brown ground beef. Drain and add onions and garlic.
- Add spices and tomatoes with juice -- DO NOT DRAIN. Heat to boiling and simmer for one hour.
- Add beans (also DO NOT DRAIN) and heat through, approximately 20 minutes.
- Top with cheese and serve with hot biscuits or corn bread.
- If in a hurry, you can cook onions and garlic with the beef, and also add the kidney beans at the beginning and simmer the whole thing for as little as half an hour. It turns out fine, it's just that the flavor is not as developed.
MOM'S EASY CHILI
This chili goes together fairly quickly--it only simmers for about 45 minutes to an hour, instead of for several hours like some chili recipes. It makes a good weeknight dinner; I love it best with cornbread, although biscuits are nice, too. Usually by the time the cornbread or biscuits are done, so is the chili.

- Heat oil in saute pan or deep skillet and brown beef. Drain any extra fat. Add garlic and cook 1-2 minutes longer.
- Add onion and celery and saute 3-4 minutes or until onions are just tender.
- Add beans (with liquid from one can), one can of tomato sauce, chili powder, and bay leaf and stir to combine. If not saucy enough or not tomatoey enough, add another can of tomato sauce.

- Brown your hamburger meat in a skillet with the chopped onions and drain fat. Add your drained meat/onions, beans, Rotel and tomato sauce to a 3qt. sauce pan over medium heat. After a few minutes add all the spices and stir frequently. Add more of each spice until you reach your desired flavor. Once you have the flavor to your liking just cover with lid and simmer for 10-15 minute.
- Serve over corn chips and top with cheese, sour cream and jalepenos.
