2 cups all-purpose flour
2 1/4 teaspoons baking powder
1 teaspoon coarse salt
1/4 teaspoon ground cinnamon
3 extra-ripe bananas, mashed (1 cup)
3/4 cup light brown sugar
1 stick unsalted butter, melted
1 large egg
1/4 cup milk
1 cup semi-sweet chocolate chips

Steps:

  • Preheat oven to 350 degrees. Line a standard 12-cup muffin tin with baking cups. In a medium bowl, whisk together flour, baking powder, salt, and cinnamon. In a separate bowl, whisk together banana, sugar, egg, butter, and milk. Stir wet ingredients into dry ingredients then stir in chocolate chips.
  • Divide batter evenly between prepared cups, adding a scant 1/4 cup to each. Bake until tops spring back when lightly touched, about 20 minutes. Cool in pans 5 minutes, then remove to wire rack to cool completely.

1 teaspoon baking soda
½ teaspoon salt
¾ cup sugar
1 cup mashed bananas (about 3 medium)
1 large egg (room temperature)
½ cup vegetable oil
1 teaspoon vanilla extract
½ cup semi-sweet chocolate chips
¼ cup milk chocolate chips

Steps:

  • Preheat oven to 375°F. Line a muffin pan with paper liners.
  • Combine flour, baking soda, and salt in a small bowl. Stir in chocolate chips.
  • Combine sugar, bananas, egg, oil, and vanilla in a medium bowl.
  • Add dry ingredients and mix just until combined.
  • Pour into prepared muffin tin and bake 18-20 minutes or until a toothpick comes out clean. Do not overbake.
  • Cool 5 minutes in the pan before removing and cooling on a baking rack.

3 ripe bananas (about 1 1/3 cups/325 mL) mashed
2 eggs
½ cup ( 125 mL ) vegetable oil
1 tsp ( 5 mL ) vanilla
1 cup ( 250 mL ) granulated sugar
1 1/2 cups ( 375 mL ) all-purpose flour
1 tsp ( 5 mL ) baking soda
½ tsp ( 2.5 mL ) salt
½ cup ( 125 mL ) chocolate chips

Steps:

  • Preheat oven to 350°F (180°C). Line 12 muffin cups with paper liners; set aside.
  • In large bowl, mash bananas; whisk in eggs, oil and vanilla until well blended. Whisk in sugar until combined.
  • Stir in flour, baking soda and salt just until combined. Fold in chocolate chips.
  • Spoon into prepared muffin cups. Bake until tester comes out clean, about 30 to 35 minutes. Let cool in pan on wire rack for 10 minutes before turning out muffins. Let the muffins cool completely and then store in airtight containers for up to 2 days or freeze for up to 1 month.

1 egg, beaten

1 cup semisweet chocolate chips

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Lightly grease a 12-cup muffin tin.
  • In a medium bowl blend the banana, oil, egg and vanilla together.
  • In a large bowl, combine the flour, sugar, cocoa, baking powder and salt. Stir in the banana mixture until just blended. Fold in the chocolate chips. Spoon the batter into the prepared muffin tin, filling 3/4 full.
  • Bake in the preheated oven for 15 to 20 minutes. Remove muffins to a wire rack to cool completely.

2 -3 tablespoons chocolate chips
2 tablespoons chopped walnuts (optional)

Steps:

  • Preheat oven to 350 degrees.
  • Lightly coat 12 muffin tin liners with cooking spray and place in muffin tin.

  • Whisk in egg, milk, granulated sugar, and brown sugar.

3 bananas (ripened)
2 eggs, lightly beaten
2 cups flour
3/4 cup sugar
1 teaspoon salt
1 teaspoon baking soda
1/2 cup semi-sweet chocolate chips

Steps:

  • Preheat oven to 350*.
  • Mash banana's in a bowl. Add the 2 lightly beaten eggs. Mix well.
  • In a seperate bowl, sift together flour, sugar, salt and baking soda. Add about 1/2 cup at a time to banana and egg mixture. Mixture will be thick and a bit sticky.
  • Place cupcake liners in a muffin pan. Fill muffin cups 3/4 of the way.
  • Bake at 350* for 15-20 minutes.
