1 lb ground chicken
1 TBS peanut oil
½ onion (minced)
1 cup red or green pepper (diced)
1 8 oz can water chestnuts (drained and minced)
3 TBS soy sauce*
3 TBS hoisin sauce**
1 TBS sesame oil
1 TBS rice vinegar
1 TBS peanut butter
1 TBS honey
2 tsp sweet chili sauce ((Trader Joe's!))
½ tsp garlic powder
¼ tsp powdered ginger
¼ cup peanuts (crushed.)
Lettuce or your favorite Asian salad

Steps:

  • Whisk together sauce ingredients until well combined. If you use a firmer peanut butter you may need to microwave the mixture for 30-60 seconds in order to melt it and ensure everything is well-mixed.
  • Heat 2 TBS peanut oil in a frying pan. Once hot, add ground chicken.
  • Cook until some pieces are starting to brown. Add onion and cook for 5 minutes or until the onion is becoming translucent.
  • Add the peppers and water chestnuts and cook about 5 minutes or until peppers are becoming soft.
  • Add sauce and simmer on low heat until the chicken and veggies are evenly coated and everything is heated through.
  • Serve in lettuce leaves, on top of your favorite Asian salad, or over noodles or rice!

Super easy, super flavorful, super fast Asian lettuce wraps that everyone will love! Perfect main dish for busy weeknights or make them as an appetizer for a Chinese take-out style dinner party on the weekend.

3 tsp olive oil, (divided)
1 lb 93% lean ground turkey or chicken
4 - 5 Tbsp hoisin sauce,* (to taste)
1 Tbsp soy sauce, ((low-sodium or regular))
2 tsp sriracha ((optional))
1 Tbsp rice vinegar
1 1/2 tsp sesame oil
1 tsp honey ((optional))
1 Tbsp minced fresh garlic ((3 cloves))
1 Tbsp peeled and minced fresh ginger
2/3 cup sliced green onions, (white and light green portion, plus more green portion for serving)
1 medium carrot, (peeled and shredded (1/2 cup))
1 (8 oz) can water chestnuts, (drained and chopped small)
1 large head Bibb lettuce or iceberg lettuce

Steps:

  • Heat 1 1/2 tsp oil in a 12-inch non-stick skillet over medium-high heat.
  • Add turkey or chicken in large crumbles then let cook until slightly browned on bottom, about 3 minutes, then break up and continue to cook until it's fully cooked through, about 3 minutes longer.
  • Meanwhile while turkey is cooking in a mixing bowl whisk together hoisin sauce, soy sauce, sriracha, rice vinegar, sesame oil and honey, set aside.
  • Drain of excess liquid from turkey (if there is any) then push to one far side of pan and pull that side of pan off heat.
  • Heat remaining 1 1/2 tsp oil in now empty side of skillet.
  • Add green onions and carrots and saute 1 1/2 minutes. Add in garlic and ginger and saute 30 seconds longer.
  • Pour in sauce and water chestnuts then cook and toss 30 seconds longer.
  • Serve warm in lettuce leaves garnished with sliced green onions.

16 Boston Bibb or butter lettuce leaves
1 pound lean ground beef
1 tablespoon cooking oil
1 large onion, chopped
¼ cup hoisin sauce
2 cloves fresh garlic, minced
1 tablespoon soy sauce
1 tablespoon rice wine vinegar
2 teaspoons minced pickled ginger
1 dash Asian chile pepper sauce, or to taste
1 (8 ounce) can water chestnuts, drained and finely chopped
1 bunch green onions, chopped
2 teaspoons Asian (dark) sesame oil

Steps:

  • Rinse whole lettuce leaves and pat dry, being careful not tear them. Set aside.
  • Heat a large skillet over medium-high heat. Cook and stir beef and cooking oil in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease; transfer beef to a bowl. Cook and stir onion in the same skillet used for beef until slightly tender, 5 to 10 minutes. Stir hoisin sauce, garlic, soy sauce, vinegar, ginger, and chile pepper sauce into onions. Add water chestnuts, green onions, sesame oil, and cooked beef; cook and stir until the onions just begin to wilt, about 2 minutes.
  • Arrange lettuce leaves around the outer edge of a large serving platter and pile meat mixture in the center.

2 pounds boneless skinless chicken breast halves
1/4 cup reduced-sodium soy sauce
1/4 cup ketchup
1/4 cup honey
2 tablespoons minced fresh gingerroot
2 tablespoons sesame oil
1 small onion, finely chopped
2 tablespoons cornstarch
2 tablespoons cold water
12 round rice papers (8 inches)
3 cups broccoli coleslaw mix
3/4 cup crispy chow mein noodles

Steps:

  • Place chicken in a 3-qt. slow cooker. In a small bowl, whisk soy sauce, ketchup, honey, ginger and oil; stir in onion. Pour over chicken. Cook, covered, on low 3-4 hours or until chicken is tender. Remove chicken; shred with 2 forks and refrigerate until assembly., Meanwhile, in a small bowl, mix cornstarch and water until smooth; gradually stir into honey mixture. Cook, covered, on high until sauce is thickened, 20-30 minutes. Toss chicken with 3/4 cup sauce; reserve remaining sauce for serving., Fill a large shallow dish partway with water. Dip a rice paper wrapper into water just until pliable, about 45 seconds (do not soften completely); allow excess water to drip off., Place wrapper on a flat surface. Layer 1/4 cup coleslaw, 1/3 cup chicken mixture and 1 tablespoon noodles across bottom third of wrapper. Fold in both sides of wrapper; fold bottom over filling, then roll up tightly. Place on a serving plate, seam side down. Repeat with remaining ingredients. Serve with reserved sauce.

2 tablespoons torn fresh cilantro
3 cups mixed cabbage and carrot coleslaw mix
6 ounces diced chicken breasts or 1 shredded chicken breast
3 tablespoons hoisin sauce
2 tablespoons peanut sauce, spicy
1 -2 tablespoon soy sauce
6 flour tortillas

Steps:

  • Heat oil in medium skillet. Add garlic, cilantro and cole slaw mix. Saute until cabbage is wilted and reduced.
  • Add chicken and sauces and stir until mixed through and hot.
  • Microwave tortillas for 30 seconds.
  • Divide filling between tortillas and roll up burrito style. Enjoy!

2-inch piece ginger, peeled and finely grated
2 scallions, chopped
2 cloves garlic, minced
2 tablespoons soy sauce
1 teaspoon red pepper flakes
1/4 cup hoisin sauce
1/4 cup chopped peanuts
Salt and freshly ground black pepper

Steps:

  • 1 head Boston lettuce, leaves separated, cleaned and dried In a skillet over medium-high heat, add the vegetable oil and saute beef until brown. Stir in ginger, scallions, garlic, soy sauce, red pepper flakes, and hoisin and cook for 1 minute. Remove from the heat and stir in the peanuts. Season with salt and pepper and serve warm wrapped in lettuce cups.

2 cups uncooked white rice
1 tablespoon vegetable oil
1 pound ground pork
1 bunch green onions, thinly sliced
½ teaspoon minced garlic
1 (14 ounce) package firm tofu, drained and cubed
2 carrots, shredded
3 tablespoons hoisin sauce
2 tablespoons soy sauce
1 teaspoon sesame oil
¼ teaspoon hot chile paste
1 head iceberg lettuce leaves, separated

Steps:

  • In a saucepan combine the water and rice. Bring to a boil, cover, and reduce heat to a simmer. Simmer for 20 minutes, until water is absorbed. Set aside and keep warm.
  • Heat oil in a wok over medium-high heat. Cook the pork, green onions, and garlic for 5 to 7 minutes, or until lightly brown. Add the tofu, carrot, Hoisin, and soy sauce, stirring frequently until heated through. Remove from heat, and stir in the sesame oil and chile paste.
  • To serve: spoon a small amount of rice into each lettuce leaf, top with the stir-fry mixture, and drizzle with additional soy sauce or hoisin, if desired. Wrap the lettuce leaf to enclose the filling.

Just came up with this while trying to find a way to make chicken wraps that were flavorful enough to add some variety to the Atkins diet.

2 large chicken breasts
1/2 white onion
6 garlic cloves
1 -2 teaspoon Chinese five spice powder
3 -4 tablespoons hoisin sauce
1 -2 tablespoon soy sauce
1 -2 teaspoon black pepper
2 tablespoons butter
1 large leaves iceberg lettuce

Steps:

  • Cut chicken breasts into thin strips. Add butter to skillet and melt over medium to high heat. Add onion and garlic and cook 1 minute to get the flavors flowing into the butter. Add chicken, hoisin sauce and cook until chicken is white on the outside but still pink on the inside (approximately 5 minutes). Add the chinese five spice, black pepper and soy sauce and cook another 5 minutes on medium to high heat, reduce temperature and simmer covered 5-10 minutes so the chicken becomes tender.
  • Fold into lettuce wraps!
  • This is very filling, low carb and low calorie. Enjoy!
