3 cups water
1-3/4 cups sliced carrots
1/2 cup chopped onion
2 celery ribs, sliced
1 package (12 ounces) frozen egg noodles
3 cups chopped cooked turkey
1 package (10 ounces) frozen peas
2 envelopes chicken gravy mix
1/2 cup cold water

Steps:

  • In a large saucepan, bring the broth, water, carrots, onion and celery to a boil. Reduce heat; cover and simmer for 4-6 minutes or until vegetables are crisp-tender. Add the noodles. Simmer, uncovered, for 20 minutes or until noodles are tender., Stir in turkey and peas. Combine gravy mixes and cold water until smooth; stir into soup. Bring to a boil; cook and stir for 2 minutes or until thickened.

1 stick butter or margarine
1 c sliced thin carrots
1 c sliced thin celery
1 c all-purpose flour
2 c cooked turkey or chicken, diced
1 gal chicken stock
2 pkg chicken Ramen noodles plus the seasoning packs
1 Tbsp salt and pepper
1 Tbsp fresh or dried parsley
1/2 c diced onion

Steps:

  • 1. In a large stockpot, add butter and melt. Add the onions, carrots, and celery. Saute until almost tender.
  • 2. Add the flour.
  • 3. Brown for a few minutes (like making gravy).
  • 4. Add the stock and stir until the flour is dissolved and the mixture is creamy.
  • 5. Add the salt, pepper, Ramen noodle packs, and seasoning. Cook for a few minutes.
  • 6. Then add the chicken or turkey.
  • 7. Let simmer until the veggies are tender.
  • 8. Sprinkle in the parsley before serving. This is very good just served with bread or crackers,

2 -3 cups chopped cooked turkey
2 (3 7/8 ounce) boxes Chicken & Herb Classico Rice-A-Roni, savory whole grain blend
1 (14 1/2 ounce) can chicken broth
1 (10 1/2 ounce) can cream of chicken soup, condensed
1 -1 1/2 cup frozen corn (any variety)
1 cup milk, depending on consistency you like
1 -2 teaspoon dried parsley

Steps:

  • In a large stock pot.
  • Prepare Rice a Roni as instructed on the box (add water as called for, I add a tiny bit of olive oil, not the entire amount that it calls for, you can do either).
  • Once the water has started to boil, and rice is half cooked, I add the rest of my ingredients except the milk and parsley.
  • Let everything come to a low boil and turn on low to simmer for 10-15 minutes or until the rice is completely cooked.
  • The rice will continue to absorb your liquids as it cooks, so right before I'm ready to serve I stir in enough milk to make it the consistency I like for soup (I prefer a thick soup!) and stir in the parsley for some color.
  • Great with warm rolls or crackers!

140g medium egg noodles
200g/7oz shredded, cooked turkey or chicken
200g frozen peas
1 bunch spring onions , sliced, white and green parts separated

  • Bring the stock to the boil and throw in the carrots. Boil for 4 mins, then add the noodles and simmer for 3 mins. Stir in the turkey, peas and the white part of the spring onions, heat for 1 min or until everything is hot through. Ladle into bowls, scatter with the green part of the onions to serve.

1 tablespoon (14 grams) butter
2 large carrots (peeled and cut into 1/4" pieces)
2 medium stalks of celery (sliced and cut into 1/2" pieces)
1 medium onion (diced)
1 cup button mushrooms (sliced into 1/4" pieces)
3 large cloves garlic (minced)
1 teaspoon fresh sage (minced)
4 cups (946 ml) chicken stock
2 cups shredded cooked turkey
2 cups uncooked egg noodles
1 teaspoon kosher salt
¼ teaspoon black pepper
1 dried bay leaf

Steps:

  • Turn on the Saute function of the Instant Pot.
  • Add the butter and once it's melted, add the carrots, celery, onion, and mushrooms.
  • Stir to coat all of the vegetables with the melted butter.
  • Cook the vegetables for 5 minutes, or until the vegetables are tender and have started to brown.
  • Add in the garlic and sage and cook for another minute.
  • Add in the chicken stock, turkey, noodles, salt, pepper, and bay leaf, and give it a stir.
  • Attach the lid and make sure the valve is in the sealing position.
  • Choose Manual, High Pressure and set it for 3 minutes.
  • When it's done cooking, do a manual release by switching the valve to the venting position. Be careful!
  • Remove the bay leaf and add more salt and pepper, to taste. Serve warm.
  • Refrigerate leftover soup in an airtight container in the fridge for up to three days.

8 oz cremini or white mushrooms (sliced or *see Note 1 for alternatives)
salt and pepper
1 clove garlic (thinly sliced)
1/2 teaspoon ginger paste (or 1/4 tsp freshly grated ginger)
Pinch red pepper flakes (optional)
4 cups chicken or other broth (*see Note 2 for alternatives)
2 Tablespoon soy sauce (can add more, to taste)
2 teaspoon fish sauce (or mirin)
2 teaspoon sesame oil
400 g frozen or shelf-stable udon noodles (2 blocks frozen or 2 individual packages of shelf stable 400-500g total)
2 cups baby spinach (and/or other greens *see Note 3 for other options)
1 green onion (thinly sliced, plus more for garnish)
1/4 cup cilantro (leaves and tender stems, coarsely chopped)
1-2 teaspoon Asian chili garlic sauce (plus more, to taste (optional) *see Note 4 for alternatives)
Juice of 1/2 lime + lime wedges to serve
Additional salt (as needed)

Steps:

  • Add cooking oil to a large soup pot and heat over medium-high heat on the stove top. Add the mushrooms and season with a bit of salt and pepper. Cook, stirring, until golden. Remove to a bowl and set aside.
  • In the same pot, add a touch more oil, if it is dry, then add the garlic, red pepper flakes and ginger (or ginger paste) and cook, stirring, about 30 seconds. Add the broth, soy sauce, fish sauce and sesame oil. Bring the broth to a simmer. Add udon noodles and cook until tender (frozen udon will take longer than shelf-stable).
  • Add spinach (or other greens) to the pot, together with the reserved browned mushrooms, green onion and cilantro. Stir in Asian chili garlic sauce, if using, to taste. Cook soup a bit longer to allow the flavours to blend. *If soup becomes too thick, add a bit more broth or water, as needed.
  • To finish, add juice of 1/2 lime to the soup. Stir in. Taste soup and salt well, as needed (and/or alternately, add a bit more soy sauce, which will add some saltines to the soup, as well).
  • To serve, ladle soup into bowls and serve with additional green onion, cilantro, sesame seeds and additional Asian chili garlic sauce.
