Steps:
- How to cut the beef for the beef teriyaki.Since you will need to cook the beef very quickly, on high heat, follow the following instructions to prepare the beef for the stir-fry. Choose the right cut of beef(mentioned above). Cut against the grain. Keeping in mind, that beef shrinks in size when cooked, cut the beef into very thin bite-size pieces. How to marinate the beef for the teriyaki stir-fry.Place the beef in a bowl then marinate the beef slices with salt(1/2 tsp)and pepper(1/2 tsp) for 10-20 minutes. How to prepare the vegetables for the beef teriyaki. For the vegetables, in beef teriyaki, you can use, any type of vegetable that cooks fast. I used cauliflower because that's what I had. For example, broccoli, button mushrooms, green peas, asparagus and green beans are great options instead of cauliflower. How to cut the cauliflower for the beef teriyaki.Wash the cauliflower. break the cauliflower into large florets and then cut them into smaller florets. Cut the bell pepper into thin slices and discard the seeds. Making the teriyaki sauce. Into a small pan add, sugar(1/4 cup), water(1/2 cup), soy sauce(1/4 cup). minced ginger and garlic(1 tbs), oil(1 tbs). Over low heat, cook the ingredients until sugar dissolves. 2 minutes. While the sauce is still cooking over low heat. dissolve cornstarch with 2 tablespoons of warm water and add the cornstarch mixture to the teriyaki sauce. Slowly stir until the teriyaki sauce thickens, check if the sauce is seasoned to your preference like salt and sugar. Add oil to the wok/frying pan, once the oil is warm add the beef and stir-fry the beef until they are cooked through, regulate heat between medium, high and medium again. Stir-fry between 5-10 minutes. Once done, transfer the beef slices to a plate. Wipe or wash away any dark bits leftover by stirfrying the beef. Add oil(1 tablespoon) followed by cauliflower, bell pepper slices into the wok, season with a pinch of salt and stir-fry the vegetables for 3-5 minutes over low-medium fire. The vegetables need to be a little soft and crispy. You can add a few tablespoons(2-3) of water to soften them if need be. Add the crispy stir-fried beef into the wok and combine well over low heat. Reduce heat and add the homemade teriyaki sauce onto the beef slices and vegetables. cook over medium heat. Check for seasoning and serve warm. Always serve the beef teriyaki warm.

- Place the beef in a bowl and top with 1 tablespoon soy sauce and black pepper. Stir to coat then set aside to marinade while you prepare the rest of the ingredients.
- Prepare the sauce: In a medium mixing bowl or large measuring cup, stir together the soy sauce, water, maple syrup, rice vinegar, garlic, ginger, red pepper flakes, and cornstarch. Set aside.
- Continue with the stir fry: In a large, deep sauté pan or wok, heat 1/2 tablespoon oil over medium-high heat. Once the oil is hot but not smoking, add the beef. Cook until the beef is browned on all sides and fully cooked through, about 4 minutes. Remove the beef and any juices that have collected in the skillet to a plate and set aside.
- Heat the remaining 1/2 tablespoon oil. Add the bell pepper and other vegetables. Cook for 4 minutes, or until slightly softened and lightly browned.
- When the vegetables are ready, add the water chestnuts and return the beef and juices to the pan. Pour in the sauce and toss to coat. Let simmer 3 to 4 minutes to thicken and warm the beef through. TERIYAKI BEEF STIR-FRY OR MARINADE
Yet another recipe from Chatelaine, but this was originally in the magazine as a salad. The salad didn't appeal to me, but I used it as a base for a great stirfry and used the dressing as a marinade. I then added some things here and there to give it a unique flavor. Cooking time does not include marinating in fridge.

Steps:
- Mix all ingredients together for the marinade.
- Cut the beef into one inch strips and add to the marinade.
- Put in a plastic container or Ziploc bag in refrigerator for 3 to 4 hours, stirring/shaking often.
- To make stirfry, heat sesame oil in a non-stick skillet or wok skillet.
- Add the sesame seeds, garlic and ginger and mix together until seeds are slightly toasted and flavors blended.
- Add sliced Spanish onion, green peppers, 1/4 cup of marinade, mix well and stirfry until onions are slightly translucent.
- Add the beef, mixing well to blend all the flavors and ingredients.
- If you want, you can add some more of the marinade with the beef.
- Stir fry about 5- 7 minutes on medium heat for medium rare or longer for your tastes.
- It went great with a bottle of Cabernet Shiraz Merlot red wine.
- Note: I reduced the measurement for the teriyaki sauce because it was a tad salty when I originally made it.
- If you don't mind the salty flavor, you can add more for your taste.

- Wash pea pods and pinch off the ends.
- Chop the green onions and slice ginger.
- Heat large skillet on high heat.
- Drop 1 tbsp olive oil onto skillet.
- Put meat and marinade in skillet and fry until brown.
- Add more olive oil if necessary.
- Add ginger and green onions to skillet.
- Fry 1 minute.
- Add the pea pods and water chestnuts.
- Fry until pea pods are hot but not soggy.
- The rice should be finished by now.
- Serve stir-fry over rice.
- NOTES: I use small package of Green Giant frozen Sugar Snap Peas so I don't have to wash and prepare the fresh vegetables.
- I microwave them for 2 minutes to defrost them.
- You could also substitute other vegetables for the pea pods such as chopped broccoli or chopped green peppers.
- You can also add more vegetables, such as carrots and/or peppers.
- I also buy the steak "thin sliced", and cut those slices up.
- Makes it cook really fast and a bit more fun to eat.
