Steps:
- Heat the olive oil, garlic, and onion in a large pressure cooker over medium heat, along with the thyme leaves and bay leaf until just fragrant.
- Add the ham, peas, and Mrs. Dash.
- Then add the chicken broth. Cook over medium-high heat until it starts to bubble, then attach the pressure cooker lid and lock it. Allow the pressure to build until it begins to hiss. Then turn the heat down to simmer and allow it to cook for 20 minutes.
- After 20 minutes, turn off the burner, release the pressure in the pressure cooker and remove the lid. The peas should be completely softened and should dissolve upon stirring.
- Place the pan back on the burner and turn it on to low heat. Cook for another 10 minutes on low heat, stirring occasionally. This will allow the liquid to reduce a bit and for the soup to thicken somewhat. Repeated stirrings will ensure that the peas completely dissolve and further thicken the soup.
- After cooking uncovered for ten minutes, discard the bay leaf then pour into soup bowls and garnish with some thyme and a drizzle of a high-quality olive oil (optional).
- Serve hot.
HAM AND SPLIT PEA SOUP
Steps:
- Place the peas in a large pot or bowl, cover with water by 2 inches and soak 8 hours or overnight. Drain the peas and set aside.
- Score the ham hock. Place in a pot, cover with water and bring to a boil. Reduce heat and let simmer for 1 hour. Drain and set aside.
- In a large pot, melt the butter over medium-high heat. Add the onions and cook, stirring, for 2 minutes. Add the celery and carrots and cook, stirring, until just soft, about 3 minutes. Add the garlic and cook, stirring, for 30 seconds.
- Add the ham hock and ham and cook, stirring, until beginning to brown. Add the drained peas, salt, pepper, and pepper flakes, and cook, stirring for 2 minutes. Add 8 cups of water, the bay leaf and thyme, and cook, stirring occasionally, until the peas are tender, about 1 hour. (Add more water as needed, if the soup becomes too thick or dry.)
- Remove the bay leaf and discard. Adjust the seasoning, to taste, and serve immediately with Parmesan Truffled Chips on top.
- Using a mandolin or very sharp, heavy knife, slice the potatoes into rounds as thin as possible, and place in a large bowl of water to prevent discoloration.
- Heat the oil in a large, heavy pot to between 340 and 350 degrees F.
- Pat the potatoes completely dry. Add to the oil in batches and cook until golden brown, stirring with a long handled spoon to turn and cook evenly, about 2 minutes. Drain on paper towels and place in a large bowl. Toss with the cheese, truffle oil, salt, and pepper. Serve immediately.

- Place the butter in a large soup pot over medium-low heat. Stir in onion, celery, and sliced garlic. Cook slowly until the onions are translucent but not brown, 5 to 8 minutes.
- Mix in ham, bay leaf, and split peas. Pour in chicken stock and water. Stir to combine, and simmer slowly until the peas are tender and the soup is thick, about 1 hour and 15 minutes. Stir occasionally. Season with salt and black pepper to serve.

- Rinse peas, add water, and bring to a boil simmering for 2 minutes.
- Remove from heat, cover and let sit for 1 hour.
- Add remaining ingredients and heat to a boil.
- Reduce heat, simmer, covered 2 1/2 to 3 hours or until peas are soft.
- Remove bone and slice up meat adding it to soup.

SPLIT PEA AND HAM SOUP I

- In a medium pot, saute onions in oil. Add the split peas, ham bone, and enough water to cover ingredients; season with salt and pepper.
- Cover, and cook until there are no peas left, just a green liquid, 2 hours. While it is cooking, check to see if water has evaporated. You may need to add more water as the soup continues to cook.
- Once the soup is a green liquid remove from heat, and let stand so it will thicken. Once thickened you may need to heat through to serve.

- Put all ingredients and 6 1/2 cups water in a 5 1/2-quart slow cooker.
- Cover and cook on high for 6 hours, or low for 12 hours until peas are very soft and fall apart.
- Remove ham.
- When cool enough to handle, cut meat off the bone, dice and return to soup.

SIMPLE AND GOOD HAM AND SPLIT PEA SOUP
This is simplicity at its best. Served with cornbread and brownies, you get pure comfort food. I add extra basil and if you don't like split pea soup, substitute dried navy beans for split peas. Soak the navy beans overnight and increase first cook time to 2 hours and then stir in celery and carrots and continue to cook as directed. Also I add extra vegetables. Enjoy!

Delicious soup. Quick and easy. My dad loves it this way. I usually serve it with toast and butter. This soup freezes well. I am guessing on serving sizes, I never counted.

- soak peas overnight.
- cook hm in 8 cups of water for 45 minutes. ( do not drain water).
- remove ham and when cool, cut meat off.
- chop onion and garlic in chopper.
- add oil, onion and garlic.
- cook for 5 minutes.
- add thyme, granulated garlic, salt, pepper, bay leaves, carrots, potatoes and ham and cook for another 4-5 minutes.
- add 6 cups of ham stock and peas ( drain water ).
- cook on high with cover until boiling.
- when boiling turn heat down to low and cook covered for about an hour.
- Adjust salt, pepper and if want add granulated garlic to taste.
- Cook for another half hour uncovered.

- Combine peas, rice, and water in a saucepan or small stock-pot; bring to boil then reduce heat; add vegetables, salt, pepper, and bay leaf to pot.
- Simmer for one hour; discard bay leaf and, if desired, partially mash up the soft-cooked split peas with the back a large spoon. Alternately, you may puree the soup in a blender or food-processor before serving.
- For more flavor, you may use broth or homemade stock instead of water, or use a combination of half tomato juice and half water. You may also add 1/2 teaspoon cumin for a southwestern flavor, OR (one or the other, not both) add a bit of rubbed sage for a "smoky" note.
