Homemade Peach Pie Filling image

This delicious Peach Pie Filling will really make your homemade pie shine. Syrupy, sweet, and spiced, this is the perfect dessert for summer.

5 large peaches
1/2 tsp vanilla extract
1 1/2 Tbsp lemon juice
3 tbsp cornstarch
1/2 cup white sugar
1/2 cup golden brown sugar
1/8 tsp cinnamon
1 cup water

Steps:

  • In a large saucepan combine the vanilla, lemon juice, cornstarch, sugar, brown sugar, cinnamon, and water. A whisk does the best job of whisking everything together.
  • Now bring the saucepan to a boil over medium heat stirring frequently. Let it thicken for about 2-3 minutes.
  • Now wash and slice your peaches into 1/4 inch thick slices. You can use fresh or frozen peaches here. And you can leave the skin or peel it off. That's totally optional.
  • Now add your peaches to the saucepan and simmer for about 5-7 minutes. This depends on how hard or soft your peaches are. If they are super ripe, this step may be done faster. If your peaches are on the harder side, this might take longer. You want them to soften slightly, but not get mushy.
  • Once the pie filling is done, let it cool to room temperature and place them into glass jars. Keep refrigerated for up to 2 weeks.
  • If you want to make this into a pie just roll out your first piece of pie dough and place it into a 9-inch pie pan. Then spoon the pie filling into the crust and place the second piece over it. Brush it with egg wash and bake at 375 degrees Fahrenheit for about 55-60 minutes.

pastry for a double-crust 9-inch pie
5 cups fresh peaches, sliced
1 cup sugar
1/3-1/2 cup all-purpose flour
1/4-1/2 teaspoon cinnamon
2 tablespoons butter
2 tablespoons sugar

Steps:

  • Preheat oven to 425 degrees F.
  • Stir together flour, 1 cup sugar, and cinnamon and set aside.
  • Wash, peel, and slice fresh peaches.
  • Mix together peaches with the combined dry ingredients.
  • Turn into pastry-lined pie pan and dot with butter.
  • Cover with top crust, cut slits in it, seal the edges.
  • Sprinkle top with 2 tablespoons of sugar.
  • Cover the edges with foil to prevent over browning; remove foil for the last 15 minutes of baking.
  • Bake 35 to 45 minutes or until crust is brown and juice begins to bubble through the slits in the crust.
  • Pie may be frozen for future use.

1 cup water
1 Tablespoon fresh lemon juice
1 cup granulated sugar
1/4 cup cornstarch
1/4 teaspoon vanilla extract OR almond extract
1/8 teaspoon ground cinnamon
10 or 16 ounce package of frozen peaches, defrosted ((or 4 to 5 large peaches that are peeled, pitted, and chopped))

Steps:

  • In a large saucepan over medium heat, stir together the water, lemon juice, sugar, and cornstarch. Cook until thickened and bubbly, for around 5 minutes.
  • Cook for another 3 minutes once it becomes bubbly, making sure to stir consistently.
  • Remove the pan from the heat and stir in the vanilla extract and cinnamon.
  • Add the peaches and mix until everything is well combined.
  • Make sure to cool the filling to room temperature then use right away or store in the refrigerator for a few days.

2 (29-oz) cans of sliced peaches, drained
1/2 stick (1/4 cup) butter
1/2 tsp cinnamon
1/2 tsp nutmeg
1/2 c sugar
2 pillsbury quick pie crust, place one pie crust in bottom of pie plate, save other for top.
cinnamon and sugar to sprinkle on top of crust

Steps:

  • 1. Preheat oven to 375 degrees.
  • 2. Combine drained peaches, butter, cinnamon, nutmeg and sugar in a medium size pan, bring to a soft boil, reduce heat, simmer 10 minutes.
  • 3. Pour hot pie mixture into 1st pie crust. Place 2nd pie crust on top. Pinch edge together. Pierce with fork. Brush melted butter on top of crust and sprinkle with sugar and cinnamon.
  • 4. Bake 30 to 45 minutes in preheated oven. Crust should be lighty browned. If top/edges is browning to much, remove pie from over and cover edges of crust with foil. NOTE: Mixture is pretty much cooked before you pour in pie crust. You are cooking the pie dough/crust to a nice golden brown. I don't find this pie to be runny at all but you could add a thickener if desired like a tablespoonful of flour, potato starch or other thickener.

Frozen peaches let you have peach pie anytime, but they're picked underripe and are often not the peachiest peaches around. Adding peach jam sweetens and boosts the flavor. So does cooking them first over direct heat, which caramelizes the sugars and also speeds up baking time. Use packaged cookie dough for the crust, and you have peach pie in 30 minutes.

6 ounces refrigerated sugar cookie dough, cold (about 3/4 cup)
Three 10-ounce bags frozen peaches, thawed (about 6 cups)
1 tablespoon cornstarch
2 teaspoons fresh lemon juice
1/8 teaspoon ground cinnamon
1/3 cup peach jam or preserves
1 tablespoon raw sugar

Steps:

  • Position oven racks in the center and upper third of the oven, put a baking sheet or piece of foil on the middle rack and preheat the oven to 425 degrees F.
  • In a small bowl, crumble the cookie dough into large chunks; refrigerate.
  • Strain the peaches and gently toss in the strainer to remove all excess liquid. Transfer the peaches to a medium bowl, add the cornstarch and stir until the cornstarch dissolves completely. Add the lemon juice and cinnamon, and toss to coat. Stir in the jam.
  • Mound the peaches in an 8- or 9-inch oven-safe nonstick skillet, and bring to a simmer over medium-high heat. (The skillet will be pretty full, but the peaches will cook down.) Simmer, partially covered, for about 10 minutes, gently stirring and turning the peaches up from the bottom occasionally.
  • Strew the cookie dough on top of the peaches, leaving space between chunks. Sprinkle the dough with the sugar, and bake on the upper rack of the oven until the cookie crust is golden brown, about 15 minutes. Cool for 15 minutes before serving.

1/2 cup sugar
1/4 cup packed brown sugar
4-1/2 cups sliced peeled peaches
Dough for double-crust pie
3 tablespoons cornstarch
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cinnamon
1/8 teaspoon salt
2 teaspoons lemon juice
1 tablespoon butter
Vanilla ice cream, optional

Steps:

  • In a large bowl, combine sugars; add peaches and toss gently. Cover and let stand for 1 hour. On a lightly floured surface, roll one half of dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate or iron skillet.Trim even with rim. Refrigerate while preparing filling. , Preheat oven to 400°. Drain peaches, reserving juice. In a small saucepan, combine cornstarch, nutmeg, cinnamon and salt; gradually stir in reserved juice. Bring to a boil; cook and stir until thickened, about 2 minutes. Remove from the heat; stir in lemon juice and butter. Gently fold in peaches.
