RESTAURANT-STYLE WHITE QUESO DIP
Rich, creamy, with bits of spice and tang from jalapeno peppers--this dip is just like the good stuff you get in restaurants but you'll get 3 to 4 times the amount for the same price. Serve with crispy light tortilla chips, or over nachos, a burrito, or heck, even a shoe it's so good!

Steps:
- Combine American cheese and half-and-half in a medium microwave-safe bowl. Microwave on high power in 1 1/2 minute intervals, stirring in between each interval, until melted and creamy, 5 to 7 minutes.
- Stir in jalapenos, jalapeno juice, cumin, and cayenne. Microwave for 30 seconds. Stir and serve immediately.

Steps:
- Heat 1/2 and 1/2 over medium/high heat in a small saucepan.
- Once simmering (bring to JUST before boil -- when it starts bubbling up the sides it is ready), reduce heat to low.
- Immediately stir in the cheese in batches, starting with the White American cheese, then fontina or mozzarella. As you stir in the cheese, increase heat to medium and whisk CONSTANTLY while the cheese melts. Once each batch is melted/creamy, add more. Don't stop stirring, you have to whisk the entire time while adding cheese.
- Once all the cheese is melted, stir in the jalapenos, chili powder, nutmeg, red pepper, and salt and pepper.
- Top with cilantro, tomatoes, and more jalapenos if desired.
- Serve with tortilla chips.

- Toss all ingredients into a large microwave-safe bowl. Microwave on high for 5 minutes, stopping to stir after every minute. The mixture might seem watery during the first few stirs, but should come together as a nice runny dip after all the cheese is melted.
- Serve immediately as a dip with tortilla chips or as a sauce over your favorite Mexican dish.
- *Recipe Note: White American cheese is found at most deli counters in your local grocery store.
- *Reheat Instructions: Store any leftover cheese dip in the fridge. Reheat in the microwave, stirring every 30 seconds until creamy and hot.
