This is a wonderful crabdish for a dinner party. I usually cut it in half for my family. It is wonderful.

1 cup butter
1 cup onion, chopped
1 cup celery, chopped
1/2 cup bell pepper, chopped
1 tablespoon pimiento, chopped
1/4 cup all-purpose flour
1 cup half-and-half cream, heated
1/2 cup dry white wine
salt
cayenne pepper
1 cup American cheese, grated
2 lbs crabmeat

Steps:

  • Melt butter. Add onions, celery, bell pepper and pimiento and saute until soft.
  • Stir in flour and blend well.
  • Add hot half and half, stirring; cook, stirring until sauce thickens.
  • Add wine, salt, and cayenne.
  • Spread crabmeat in buttered baking dish; spoon sauce over crabmeat and sprinkle with grated cheese.
  • Bake in preheated 375 degree oven 15 to 20 minutes, or until bubbly.

1 1/2 cups milk
1 tablespoon butter
2 tablespoons flour
2/3 cup cheddar cheese, grated
2 lbs purple potatoes, unpeeled and sliced thinly
1 cup shallot, sliced
1 tablespoon olive oil
4 slices bacon
1/2 cup parmesan cheese, grated
salt and pepper, to taste

Steps:

  • Begin by making the gratin sauce. In a small pan place the butter and melt. Over medium heat add the flour and stir to combine, approximately one minute. Slowly whisk in the milk and stir until thickened. Add cheese and when melted remove pan from heat. Add salt and pepper to taste.
  • Add the olive oil to a frying pan and heat. Add shallots and saute until slightly brown and caramelized. Remove from the pan and set aside. Place bacon in same skillet and cook through but do not let bacon get crispy. Remove from pan and cut into one inch pieces.
  • Grease a gratin dish or shallow baking dish and add one half of the sliced potatoes. Sprinkle the shallots over the potatoes and then add the remaining potato slices. Pour the gratin sauce over the potatoes and spoon into visible cracks and crevices. Top with parmesan cheese and bacon. Bake for 40 minutes in a preheated 350 degree oven. Serve immediately.

2 tablespoons butter
1/2 cup shallots, thinly sliced
4 ounces fresh Shiitake mushrooms, stemmed, caps sliced
Salt and freshly ground pepper
2 pounds purple potatoes, peeled, thinly sliced
1 teaspoon coarse salt
1/2 teaspoon freshly ground black pepper
1/8 teaspoon ground nutmeg
1 cup whipping cream
1/2 cup chicken stock or vegetable stock
1 cup grated Fontina cheese

Steps:

  • Preheat oven to 400 degrees F. Melt butter in heavy large skillet over medium heat. Add shallots and mushrooms and saute until tender, about 5 minutes. Season to taste with salt and pepper. Arrange half of mushroom mixture in bottom of 13x9 inch glass baking dish. Arrange half of potatoes over. Combine salt, pepper and nutmeg in small bowl. Sprinkle half of mixture over potatoes. Spoon remaining mushroom mixture over. Arrange potatoes over mushroom mixture. Sprinkle remaining salt mixture over. Combine cream and stock in large bowl. Pour over vegetables. Cover tightly with foil. Bake until vegetables are almost tender, about 45 minutes. Increase oven temperature to 450 degrees F. Uncover pan. Bake until juices thicken, about 10 minutes. Sprinkle with cheese. Bake until cheese melts and is golden brown, about 10 minutes. Cool gratin 15 minutes before serving.

1 garlic clove
1 1/2 cups heavy cream
freshly grated nutmeg
sea salt
freshly ground white pepper
1 pound lump crab meat (preferably from Maine)
3 pounds purple potatoes*
*available at specialty produce markets

Steps:

  • Preheat oven to 450°F. Brush bottom and side of a 3-quart gratin dish (about 15 by 10 by 2 inches) with olive oil. With flat side of a heavy knife lightly crush garlic and rub over bottom and side of dish.
  • In a small bowl stir together cream and nutmeg, sea salt, and white pepper to taste. Pick over crab meat to remove any bits of shell and cartilage and divide into 3 portions. Peel potatoes and with a mandoline or other manual slicer cut crosswise into 1/8-inch-thick slices. Divide potatoes into 4 portions. In gratin dish evenly arrange 1 portion potatoes and top with 1 portion crab, spreading evenly. Season crab layer with sea salt and white pepper. Repeat layering with remaining portions of potatoes and crab, seasoning each crab layer and ending with potatoes. Pour cream evenly over gratin and press down on top layer of potatoes to briefly submerge them in cream.
  • Bake gratin, covered with foil, in middle of oven 20 minutes. Remove foil and bake gratin until potatoes are tender and lightly browned, about 25 minutes more.

1/2 cup chopped onions
4 garlic cloves, minced
2 cups heavy cream
2 tablespoons salt, or to taste
2 cups shredded Cheddar
1/2 cup shredded Parmesan
1/2 cup panko bread crumbs

Steps:

  • Slice the potatoes 1/4-inch thick.
  • Melt the butter in a skillet over low heat. Add the onions and saute until almost translucent. Add the garlic just before onions are done. Stir in the cream and bring to a simmer. Add the salt along with most of the Cheddar and Parmesan.
  • Preheat the oven to 450 degrees F.
  • In a baking dish make multiple layers of sliced potatoes and cream sauce ending with a layer of cream sauce. Sprinkle with the remaining Cheddar, Parmesan, and panko.
  • Bake the potatoes for 60 minutes. Cook's Note: Cooking time may be decreased by deep- frying the potato slices for 3 minutes and simmering the cheese sauce until the dish is ready to be assembled.

1/2 pound fresh chanterelle mushrooms*
1 1/2 tablespoons olive oil
1 teaspoon minced garlic
1/3 ounce fresh black truffle* (about 9 grams)
3 shallots
sea salt
six 5-ounce skinless halibut fillets
1/4 cup fresh lemon juice
1 tablespoon fresh thyme leaves
1 tablespoon packed fresh tarragon leaves
1 1/4 cups fish stock**
1 cup vin jaune or dry Sherry
parchment paper

Steps:

  • Preheat oven to 375°F. Have ready a bowl of ice and cold water. Trim beans. In a saucepan of boiling salted water cook beans until crisp-tender, 3 to 5 minutes, and with a slotted spoon transfer to ice water to stop cooking. Drain beans well and pat dry. With a pastry brush gently brush chanterelles to remove any grit and discard any tough stems. In a large saucepan heat 1 tablespoon oil over moderate heat until hot but not smoking and cook chanterelles and garlic, stirring, until liquid mushrooms give off is evaporated and mushrooms are softened. With a truffle slicer slice truffle into paper-thin slices. Finely chop shallots.
  • In a 3-quart gratin dish (about 15 by 10 by 2 inches) toss together beans, chanterelles, and sea salt and pepper to taste. Arrange beans and chanterelles around edge of dish. Arrange halibut fillets about ․ inch apart in dish and drizzle with lemon juice. Sprinkle fillets with thyme, tarragon, truffle, and sea salt and pepper to taste. Pour stock and vin jaune or Sherry down side of dish, being careful not to disturb fillets. Sprinkle shallots over fillets and vegetables. Brush 1 side of parchment paper with remaining 1/2 tablespoon oil and arrange parchment, oiled side down, on top of fillets.
  • Bake fillets in middle of oven until just cooked through, about 10 minutes. Carefully tilt gratin dish and pour cooking liquid into a small saucepan. Simmer liquid until reduced to about 1 cup and stir in sea salt and pepper to taste.
  • Serve fish and vegetables over gratin and top with sauce.

2 tablespoons minced celery
2 tablespoons minced red bell peppers
1 tablespoon unsalted butter
1/2 cup chicken broth
1/4 cup dry white wine
1/4 teaspoon dried tarragon, crumbled
1/2 cup heavy cream
1 1/2 cups fresh lump crabmeat, picked over
fresh lemon juice, to taste
1/3 cup freshly grated parmesan cheese, divided

Steps:

  • Preheat broiler.
  • In a small heavy saucepan cook carrot, celery, and bell pepper in butter over moderate heat, stirring, 1 minute.
  • Add broth, wine, and tarragon and boil mixture until liquid is reduced to about 1 tablespoon.
  • Add cream, ¼ cup Parmesan, and boil sauce until thickened, 1- 2 minutes.
  • Stir in crab meat, lemon juice, and salt and pepper to taste and divide mixture between two 1-cup shallow baking dishes.
  • Sprinkle remaining Parmesan over mixture and set dishes in shallow baking pan.
  • Broil gratin about 4" from heat 2 minutes, or until bubbling and golden, and serve with toasts.
  • Serve with thinly sliced French bread, lightly toasted.
  • Variation: Using Portabello Mushrooms: Remove gills and broil (gill side down) about 2 minutes. With gill side up fill with mixture and return to broiler until golden on top.

This fab recipe is from The Vegan Table by Colleen Patrick-Goudreau. She served them at her wedding and says the guests still talk about how good they are. I think you'll agree!

30 small potatoes
2 tablespoons olive oil
salt and pepper
1 tablespoon Earth Balance margarine (14g)
1 yellow onion, chopped
3 garlic cloves, minced
1 teaspoon brown sugar
4 large sage leaves
1/2 cup walnuts, toasted (60g)
1 cup unsalted raw cashews, toasted (125g)
1 tablespoon nutritional yeast (12g)
1 cup vegetable stock (235 ml)

Steps:

  • Pre heat oven to 425.
  • Toss potatoes with oil and roast until soft (20-30 minutes), salt and pepper to taste.
  • While the potatoes roast, saute the onion and garlic in the Earth Balance margarine. Add brown sugar and a bit of salt and continue to cook until golden brown and sweet (20-25 minutes).
  • While both of those are cooking in you can toast the sage leaves in oil quickly to crisp them and then drain on a paper towel. Chop or food process the sage and walnuts to a coarse crumble. Set aside.
  • When the onions are ready add to them to a food processor along with the cashews, nutritional yeast and veggie stock. Blend until creamy. Add more cashews or stock to get the right consistency.
  • Add salt to taste.
  • Now that the potatoes have cooled cut them and half and hollow out a little bit to allow for the cream. Cut the bottom flat so they sit level. Fill with cashew cream.
  • Sprinkle with the sage and walnut topping.
  • Serve warm or at room temperature.

1/8 teaspoon white Worcestershire sauce
1 (10-ounce) package frozen chopped spinach, thawed and drained
2 teaspoons chopped fresh tarragon
1/2 teaspoon kosher salt
Pinch of freshly ground white pepper
Mornay Sauce
3 tablespoons unsalted butter
3 tablespoons flour
2 cups milk
1 teaspoon freshly grated nutmeg
1 teaspoon grated lemon zest
1/2 teaspoon salt
1/8 teaspoon freshly ground white pepper
1 cup shredded Gruyère cheese
2 tablespoons dry sherry
1/2 cup toasted bread crumbs
3/4 cup shredded Gruyère cheese
2 pounds unpeeled red or Yukon Gold potatoes, very thinly sliced
Kosher salt and freshly ground white pepper

Steps:

  • Prepare a medium heat fire (375°F) in a wood-fired oven or cooker.
  • Heat half of the olive oil in a small skillet over medium heat and sauté the leeks until wilted, about 7 minutes. Blend together with the crabmeat, mustard, chili powder, and Worcestershire sauce in a bowl and set aside. Heat the remaining olive oil in a saucepan over medium heat and sauté the spinach until most of the moisture has evaporated. Stir in the tarragon, salt, and white pepper. Remove from the heat, stir in the crab mixture, and set aside.
  • To make the Mornay sauce, melt the butter in a skillet over medium heat. When it has stopped foaming, stir in the flour and cook, stirring, for 3 minutes. Whisk in the milk, nutmeg, zest, salt, and pepper. Add the Gruyère and sherry. Cook, stirring, until thickened. Remove from the heat and set over a pot of simmering water.
  • In a small bowl, combine the bread crumbs and 1/2 cup of the Gruyère. Coat an 8-cup clay casserole or gratin dish with olive oil. Dust the bottom of the dish with the bread-crumb mixture. Line the dish with one-third of the potatoes, overlapping the slices lengthwise.
  • Blend one-third of the Mornay sauce into crab mixture. Lightly salt and pepper the potatoes in the gratin dish and cover with half of the crab mixture. Add another one-third of the potatoes, then cover with the remaining crab mixture. Layer with the remaining potatoes and then the remaining Mornay sauce. Bake for 25 to 30 minutes. Top with 1/4 cup Gruyère and bake for 10 minutes, or until the potatoes are tender and the cheese is browned. Remove from the oven and let stand for 10 minutes before serving.
