HOMEMADE PUMPKIN SPICE WAFFLES
Using just 2 bowls, make these homemade Pumpkin Waffles a part of your Fall breakfast tradition. With warm spices and yummy pumpkin they're a must make!

Steps:
- Heat your waffle iron.
- In a large bowl, whisk together the flour, baking powder, baking soda, pumpkin pie spice and salt.
- In a medium bowl whisk together the pumpkin, eggs, butter, brown sugar and milk until well combined.
- Make a well in the dry ingredients, and pour in the wet mixture. Mix together until JUST combine, being careful not to over mix.
- Your mixture will be thick but pourable. If too thick add 1/3 cup extra milk.
- Pour batter into waffle iron, and cook according to waffle iron directions (my Belgian waffle maker will take longer than a regular iron).
- Remove from waffle iron, serve with butter and maple syrup.

PUMPKIN WAFFLES
This pumpkin waffle recipe is our favorite fall breakfast! If you have any leftovers, store them in the freezer for quick breakfasts throughout the week.

- Preheat a waffle iron.
- In a medium, mix the almond milk and the apple cider vinegar. Set aside.
- In a large bowl, mix the flour, baking powder, flaxseed, cinnamon, nutmeg and salt.
- To the medium bowl, add the pumpkin puree, coconut oil, maple syrup and vanilla and whisk together. Pour the wet ingredients into the bowl with the dry ingredients and stir until just combined.
- Scoop an appropriate amount of batter onto your waffle iron and cook until the edges are crisp (I cook mine for about 5 minutes). Serve hot with maple syrup. (Note: these freeze well, just pop them in the toaster to reheat).
PUMPKIN-CHIPOTLE WAFFLES
We serve these sweet and spicy Southwestern-inspired waffles with an orange-and cayenne-infused maple syrup for a citrus kick.

- For the syrup: Whisk together the maple syrup, cinnamon, salt and cayenne in a small saucepan. Bring to a simmer over medium-low heat and whisk until the cinnamon is dissolved, about 1 minute. Remove from the heat and stir in the orange zest. Cover and keep warm.
- For the waffles: Preheat a waffle maker to medium-high. Preheat the oven to 200 degrees F. Whisk together the flour, baking powder, baking soda, chipotle powder, cinnamon and salt in a medium bowl. Whisk together the buttermilk, pumpkin puree, oil, sugar, egg and white. Pour the buttermilk mixture into the flour mixture and gently stir until just incorporated (it's ok if there are lumps).
- Lightly brush the top and bottom of the waffle iron with oil. Fill each section about three-quarters of the way full (there should still be some waffle iron showing). Close and cook until the waffles are golden brown and slightly crisp, 6 to 10 minutes. Keep the waffles warm in the oven or covered with foil on a plate while you cook the remaining batter.
- Serve the waffles with butter, drizzle with the orange syrup and sprinkle with the pepitas.
PUMPKIN SPICE WAFFLES
Nothing says good morning on a crisp fall day like these pumpkin spice waffles. Chopped pecans and a drizzle of pure maple syrup are the perfect topping, but truth be told, I've been known to devour them plain, straight from the waffle iron.

- Preheat a waffle maker.
- Whisk together the milk, pumpkin puree, oil, maple syrup and egg yolks. In a separate bowl, whisk together the flours, baking powder, pumpkin pie spice, baking soda and salt.
- Slowly mix the flour mixture into the pumpkin mixture and stir until smooth, taking care not to overmix.
- In a separate large bowl, add the egg whites and beat with an electric mixer (or whisk vigorously by hand) until stiff peaks form, 3 to 4 minutes. Gently fold the egg whites into the batter until just combined.
- Lightly spray your waffle iron with cooking spray or oil, then ladle the waffle mixture in. Cook per the manufacturer's instructions and repeat with the remaining batter. Serve with maple syrup and chopped pecans.

SPICED PUMPKIN WAFFLES
These waffles are my kids new favorite waffles. They're delicious! They have a light texture and the pumpkin flavor is not overpowering. The serving size is for Belgian waffles, but they will work fine in a regular waffle iron also.

- In a second bowl, add eggs, sugar, pumpkin, milk, and butter; beat well.

- I do these in my belgian waffle iron and it uses about 1 cup batter and takes 4-5 minutes to bake.
- They come out a nice deep, golden brown.
- These are great with a little bit of syrup, but would also be great with honey butter.
