It isn't considered Thanksgiving or Christmas in my house until these are on the table. Enjoy the flavors of pumpkin pie in easy-to-eat muffin form. &mdashCarol Hale, Sarver, Pennsylvania

Number Of Ingredients 17

1 cup all-purpose flour
1/2 cup packed brown sugar
2 teaspoons baking powder
1 teaspoon pumpkin pie spice
1/2 teaspoon salt
1/4 teaspoon baking soda
1 large egg, room temperature, lightly beaten
3/4 cup canned pumpkin
1/4 cup 2% milk
1/4 cup canola oil
1 cup old-fashioned oats
1/2 cup raisins
TOPPING:
1/3 cup packed brown sugar
1 tablespoon all-purpose flour
3/4 teaspoon pumpkin pie spice
1 tablespoon cold butter

Steps:

  • Preheat oven to 375°. In a large bowl, combine the first 6 ingredients. Combine the egg, pumpkin, milk and oil; add to the dry ingredients just until moistened. Stir in oats and raisins. , Fill 12 greased or paper-lined muffin cups two-thirds full. In a small bowl, combine the brown sugar, flour and pie spice; cut in butter until crumbly. Sprinkle 1 rounded teaspoon over each muffin. Bake at 375° for 15-20 minutes or until a toothpick comes out clean., Cool for 5 minutes before removing from pan to a wire rack. Serve warm.

These prizewinning muffins, created by Best Pumpkin Recipe Contest Winner Victoria Meacham of Albany, Ore. This was published in Quick and Simple Magazine. Makes a nice yummy moist muffin. The recipe says to add 1/2 cup raisins and 1/2 cup of walnuts, but if you want you can reduce the amount and just add 1/4 cup raisins and 1/4 cup walnuts.

  • In a medium bowl, combine egg, oil, milk and pumpkin, blending well.
  • Stir pumpkin mixture into dry ingredients until just moist. Fill muffin tins with batter and bake for 22 to 25 minutes, until tops spring back when lightly touched.

1 1/2 cups unprocessed oat bran
1/2 cup firmly packed brown sugar
1/2 cup all-purpose flour
2 teaspoons baking powder
1 teaspoon pumpkin pie spice
1/4 teaspoon salt
1 cup mashed pumpkin, , cooked
1/2 cup skim milk
2 egg whites, lightly beaten
2 tablespoons vegetable oil
vegetable oil cooking spray

Steps:

  • Combine first six ingredients in a large bowl; stir well.
  • Make a well in center of mixture.
  • Combine pumpkin and next three ingredients; stir well.
  • Add to dry ingredients, stirring just until moistened.
  • Spoon into muffin pans coated with cooking spray, filling ¾ full.
  • Bake at 425 degrees for 20 minutes.
  • Remove from pans immediately; serve warm or at room temperature.
  • Banana Oat Bran Muffins: Substitute ¾ cup mashed ripe banana for pumpkin.
  • Apple-Oat Bran Muffins: Substitute 1/2 cup minced apple for pumpkin.
  • Substitute apple pie spice for pumpkin pie spice.
  • Add 1 Tsp ground cinnamon to dry ingredients.

½ cup whole wheat flour
½ cup white sugar
1 teaspoon salt
1 teaspoon pumpkin pie spice
¾ teaspoon baking powder
½ teaspoon baking soda
½ teaspoon ground cinnamon
½ teaspoon ground nutmeg
1 ¼ cups pumpkin puree
½ cup milk
2 eggs, beaten
¼ cup maple syrup
¾ cup quick-cooking rolled oats

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Spray 6 muffin cups with cooking spray.
  • Whisk all-purpose flour, whole wheat flour, sugar, salt, pumpkin pie spice, baking powder, baking soda, cinnamon, and nutmeg together in a large bowl until thoroughly combined. Stir pumpkin puree, milk, eggs, and maple syrup into the dry ingredients until batter is smooth; fold oats into batter. Scoop batter into prepared muffin cups, filling them to the top.
  • Bake in the preheated oven until a toothpick inserted into the center of a muffin comes out clean, 20 to 30 minutes; set aside to cool 5 to 10 minutes before serving.

2 teaspoons baking powder
1 teaspoon pumpkin pie spice
1/4 teaspoon baking soda
1/2 teaspoon salt
3/4 cup pumpkin, Canned, Mashed
1/2 cup brown sugar, Packed
1 large egg, Slightly Beaten
1/4 cup milk
1/4 cup vegetable oil
1 cup quick-cooking oats
1/2 cup raisins
crumb topping

Steps:

  • Sift together flour, baking powder, pumpkin pie spice, baking soda and salt; set aside.
  • Combint pumpkin, brown sugar, egg, milk, oil, oats and raisins in bowl; blend well.
  • Add dry ingredients all at once, stirring just enough to moisten.
  • Spoon batter into grease 3-inch muffin-pan cups, filling 2/3rds full.
  • Sprinkle with crumb topping.
  • Bake in 400 degree F. oven 18 to 20 minutes or until golden brown.
  • Serve hot with homemade jelly or jam.
  • CRUMB TOPPING:
  • Combine 1/2 c brown sugar (packed), 1 T unbleached flour, 1/4 t pumpkin pie spice and 2 T butter or regular margarine in bowl.
  • Mix until crumbly.

Steps:

  • Preheat oven to 350.

  • Add the rest of the ingredients and stir until just moistened.
  • Divide into 12 muffins and bake for 15-20 minutes until cooked in centre.
  • Remove from pan after 5-10 minutes and let cool.

  • To begin, preheat your oven to 350 and line a muffin tin with non-stick spray (or line with cupcake liners).
  • To a large mixing bowl, add your butter, sugar, applesauce and pumpkin and mix together using a hand mixer. Add your vanilla and eggs and mix in briefly.
  • To a small mixing bowl, add your flour, cocoa powder, baking powder, baking soda, salt and pumpkin spice seasoning and whisk them together. Add a fine mesh strainer over the bowl of your wet ingredients, pour your dry ingredients into it, and sift them through the mesh strainer into the bowl. Remove the strainer and stir your wet and dry ingredients together. Add your chocolate chips and fold them into your batter.
  • Fill each muffin tin about 2/3 way full with muffin batter. Bake in the oven for 20-22 minutes, or till the tops are springy to touch and a toothpick inserted comes out clean.
