When you're looking for comfort food, nothing beats a classic shepherd's pie. Simple to make, easy to stock & frugal to boot - as low as $1.73 per serving!!

3 pounds Russet potatoes, chopped into 1″ pieces (I leave peels on for added nutrition, but you can peel the potatoes before chopping if you prefer)
8 Tbsp butter
1/2-1 cup milk or cream (I use raw), to your liking
Sea salt and black pepper to taste
2 Tbsp butter
1 cup chopped yellow onion
3 large cloves garlic, minced or pressed
1/2 cup chopped celery
2 medium carrots, peeled and sliced into rounds
2 pounds ground beef (can reduce to 1 pound)
1/2 cup beef broth/stock
2-4 Tbsp flour (I like more for a thicker, gravy-like consistency)
8 oz cheddar cheese, shredded (about 2 1/4 cups)
Sea salt and black pepper to taste

Steps:

  • Preheat oven to 350 degrees.
  • Place potatoes in a large pot and cover with water. (Start chopping your vegetables while the potatoes cook)
  • Bring to a boil over medium-high heat and allow to cook until soft (about 10 minutes). Drain.
  • Slice butter into several pieces and add to the hot potatoes, allowing it to melt.
  • Add the milk/cream and use an electric mixer to beat the potatoes just until smooth.
  • Season with sea salt and black pepper to taste, then beat on high until the texture is to your liking.
  • Melt butter in a large saucepan.
  • Add garlic, onion, celery, and carrot, and beef and saute, stirring often.
  • Turn heat down to low and season with sea salt and pepper to taste.
  • Heat 1/2 cup beef broth and whisk in 2-4 Tbsp flour until smooth. Pour over the meat/vegetable mixture, stirring well. Continue to cook on low heat until sauce thickens slightly.
  • Transfer meat mixture to a 13×9″ casserole dish or divide evenly into 6 smaller bowls/bakers.
  • Sprinkle shredded cheddar evenly across the top of the meat mixture.
  • Spoon mashed potatoes on top and spread evenly across the surface with the back of a spoon.
  • Cook for about 20 minutes or until mixture is heated through and the surface begins to firm slightly.
  • I usually broil for 1-2 minutes to get a nice, light crisp and golden brown on the surface of the potatoes.

4 ounces mushrooms
1 large vidalia onion, minced
7 ounces corn
7 ounces peas
7 ounces green beans
4 ounces sharp cheddar cheese
3 cups instant mashed potatoes
3 garlic cloves, minced
chives, chopped
salt
pepper
paprika
1 beer, of your choice
cumin

Steps:

  • brown ground beef adding salt, pepper, and cumin to taste, add minced onion and garlic. drain off fat. when beef has browned and onion,mushrooms, and garlic have softened remove from heat. prepare instant potatoes. layer the bottom of a casserole dish with ground beef mixture. top ground beef with corn,green beans, and peas. top the whole shebang with the mashed potatoes.sprinkle potatoes with paprika. top potatoes with the shredded cheddar. bake at 350 degrees for 40 minutes. broil for 2 minutes to brown. crack your beer and enjoy this tasty old school dish!

1 tablespoon olive oil
2 onions, finely chopped
3 garlic cloves, finely chopped
2 lbs ground veal (or lean beef)
2 carrots, minced
1/2 red pepper, minced
1/2 celery rib, minced
1/2 teaspoon paprika
1 teaspoon garlic powder
1 teaspoon salt (or to taste)
3 -4 dashes Worcestershire sauce
ground pepper (to taste)
3 tablespoons flour (or more if needed)
1 cup stock (chicken or beef)
1/2 cup red wine
8 cups potatoes, diced (I use 5 large russet potatoes)
2 tablespoons butter
1/4 cup milk (or cream)
salt and pepper (to taste)
1 (12 ounce) can corn niblets
1 (14 ounce) can peas

Steps:

  • Preheat oven to 350°F.
  • Heat oil in large frying pan and saute the onions until softened, then add the garlic and heat for 2 minutes.
  • Raise the heat and add the ground beef. Cook quickly to brown, stirring occasionally. Once browned, add the carrots, celery, and pepper, paprika, garlic powder, worchestershire sauce, salt & pepper and cook several minutes.
  • Stir in the flour, then add the stock and wine. Heat until simmering and thickened.
  • Transfer the meat to a large casserole dish and cook in the oven for about 1 hour. Check the consistency from time to time and add a little more stock or wine if required. The meat mixture should be quite thick but not dry. Taste and season with more salt and pepper if required.
  • While meat is cooking, make the mashed potatoes. Cook the peeled potatoes in salted water for approximately 15 - 20 min or until tender. Drain well and mash with a potato masher until smooth. Add the butter and milk. If the mixture is too dry, add milk a little at a time.
  • On top of the meat mixture, spread the peas on half of the casserole and the corn on the other half (or whichever vegetables you prefer). Pipe or spread the potatoes on top of the vegetables.
  • Increase the oven to 400F and cook for 15 - 20 minutes until till golden brown. You can choose to finish it off under the broiler for a few minutes for a really crisp brown topping.

It is GREAT and a regular request by the kids, especially my SIL. (Yes, yes, I know... shepherd's pie has lamb and cottage pie has beef.. but SL named this recipe, not me).

1 (22 ounce) package frozen mashed potatoes (or make your own, I do)
1 lb ground beef
1 onion, chopped
1/2 cup chopped carrot
1/2 cup frozen peas
1 tablespoon tomato paste
2 tablespoons all-purpose flour
2 teaspoons salt, divided
1/2 teaspoon pepper, divided
1 cup beef broth
1 large egg
1/2 cup grated cheddar cheese

Steps:

  • If you're making your own, prepare mashed potatoes; set aside.
  • Brown beef and onion in lg skillet over med-high heat for 5 to 6 minutes, stirring til beef crumbles and is no longer pink; drain and return to skillet.
  • Add carrots and peas; stir in flour, 1 t salt, 1/4 t pepper,& tomato paste.
  • Add broth, and cook, stirring constantly, 3 minutes or until slightly thickened.
  • Spoon mixture into lightly greased 7x11" baking dish.
  • Stir together mashed potatoes, egg, and remaining 1 t salt and 1/4 t pepper; spoon over beef mixture.
  • Bake at 350 degrees for 25 minutes; top w/ grated cheddar and bake for an additional 5 minutes.
  • NOTE: I use condensed beef broth for a beefier/heartier flavor. ;).
