- Preheat oven to 425 degrees F (220 degrees C).
- Whisk together pumpkin puree, egg yolks, and egg in a large bowl until smooth. Add sweetened condensed milk, cinnamon, ginger, salt, nutmeg, and Chinese 5-spice powder; whisk until thoroughly combined.
- Fit pie crust in a 9-inch pie plate and crimp edges.
- Pour filling into the pie shell and lightly tap on the work surface to release any air bubbles.

- In the bowl of a food processor fitted with the steel blade, process the flour sugar, cinnamon and salt. Add the frozen butter and process until it is the size of large peas, about 5 seconds. For such a seemingly simple dessert, pumpkin pie can be tricky to make. This recipe promises a tender, flaky crust and gently spiced pumpkin filling that won't crack as it cools.

- Preheat the oven to 375°F and set an oven rack in the middle position.
- If using a homemade crust: Cover the chilled crust with a piece of parchment paper. Fill the crust about three-quarters full with dried beans or pie weights. Bake for 20 minutes. Take the crust out of the oven; remove the parchment paper and beans/pie weights and tent the edges with a few strips of foil folded in half lengthwise (this will protect the edges from getting too dark). Bake for another 20 minutes, until the dough is dry and golden. Don't worry if the bottom puffs up; just press it down gently with a flat spatula, such as a pancake turner, taking care not to puncture it. Remove the foil but don't throw it away; you may need it again.
- If using a frozen crust: Follow the instructions for blind-baking on the package.
- After blind-baking the crust, reduce the oven temperature to 325°F.
- Make the Pumpkin Pie Filling: In a large bowl, combine the pumpkin, egg, egg yolks, granulated sugar, brown sugar, flour, salt, cinnamon, ginger, nutmeg, cloves, pepper, and evaporated milk. Whisk until smooth, then pour the filling into the pre-baked crust.
- Bake the pie for 50 to 60 minutes, until the filling is just set. It should look dry around the edges, but the center should jiggle just slightly if you nudge the pan. Keep a close eye on the pie as it bakes; if ever the crust looks like it's browning too quickly, tent the edges again with the foil strips. Let the pie cool on a rack (leave it on the baking sheet) to room temperature, a few hours. Slice or refrigerate until ready to serve.

- Freezer-Friendly Instructions: The dough can be made ahead, wrapped in plastic, and refrigerated for up to 2 days, or frozen for up to 1 month. - Place the pumpkin in a large saucepan, cover with water and bring to the boil. Cover with a lid and simmer for 15 mins or until tender. Drain pumpkin; let cool.
- Heat oven to 180C/160C fan/gas 4. Roll out the pastry on a lightly floured surface and use it to line a 22cm loose-bottomed tart tin. Chill for 15 mins. Line the pastry with baking parchment and baking beans, then bake for 15 mins. Remove the beans and paper, and cook for a further 10 mins until the base is pale golden and biscuity. Remove from the oven and allow to cool slightly.
- Increase oven to 220C/200C fan/gas 7. Push the cooled pumpkin through a sieve into a large bowl. In a separate bowl, combine the sugar, salt, nutmeg and half the cinnamon. Mix in the beaten eggs, melted butter and milk, then add to the pumpkin purée and stir to combine. Pour into the tart shell and cook for 10 mins, then reduce the temperature to 180C/160C fan/gas 4. Continue to bake for 35-40 mins until the filling has just set.
- Leave to cool, then remove the pie from the tin. Mix the remaining cinnamon with the icing sugar and dust over the pie. Serve chilled.

Okay, so this takes a little more than 5 minutes, but I think the title refers to the ease of preparing the pie filling. This recipe comes from "Heather Cooks!" with Heather Van Vorous, although I changed the spices slightly to fit my tastes. It's low-fat and dairy-free, so it's great for people with IBS or anyone looking for a delicious and healthy alternative to the usual fatty pumpkin pie! I took it to my family's Thanksgiving dinner this year, and it was a huge success.

- Preheat oven to 350 degrees F.
- Spray a 9-inch pie plate lightly with cooking oil spray.
- For the crust: Combine the crumbs and oil in a small bowl until well blended.

- If using a ready made pie crust that is fine but if not you need to make the pie crust first.
- For filling, in a mixing bowl combine pumpkin, sugar, cinnamon, ginger, and nutmeg.
- Add eggs.

- Gradually stir in evaporated milk and milk; mix well.

- Adjust an oven rack to lowest position and heat oven to 400°F.
- Prepare pie crust for blind baking (prick bottom with a fork, line crust with parchment and fill with dried rice or beans). Bake crust for 15 minutes.
- (Have all your ingredients measured out and start your filling when the crust goes into the oven). Remove parchment from crust, prick any bubbles with a sharp fork and bake shell for 8 to 10 minutes longer, or until bottom just begins to color.
- Remove crust from oven and brush lightly with egg white while still hot.
- Process pumpkin, sugar, spices and salt ingredients in a food processor fitted with steel blade for 1 minute.
- Transfer mixture to a 3-quart heavy saucepan.
- Bring it to a sputtering simmer over medium-high heat.
- Cook pumpkin, stirring constantly, until thick and shiny, about 5 minutes.
- As soon as pie shell comes out of oven, whisk heavy cream and milk into pumpkin and bring to a bare simmer.
- Process eggs in food processor until whites and yolks are mixed, about 5 seconds.
- Gradually pour hot pumpkin mixture through feed tube while still running.
- Process 30 seconds.
- Pour warm filling into hot pie shell.
- Put a crust shield on completed pie and bake about 25 minutes.
- Filling will be dry-looking and lightly cracked around the edge.
- The center will wiggle when pie is gently shaken.
- Cool on a wire rack to a warm room temperature.
- Serve with slightly sweetened whipped cream.
PUMPKIN PIE - PRIZE RECIPE
I thought this pumpkin pie had such a great flavor and so did the other members of my group. This pie was over liked over Sam's Club pie which wasn't bad. I had a piece of this at a gathering and I thought it tasted so great! When the lady who made this pie made this she said she used evaporated milk. Which gave this pie such a custard texture. When I made this pie I used a premade pie crust.
