My mother-in-law came up with these tender treats by combining a few of her favorite muffin recipes. Chock-full of pumpkin, they feature both a sweet cream cheese filling and crunchy praline topping. -Lisa Powelson, Scott City, Kansas

Number Of Ingredients 18

3 cups all-purpose flour
2 cups sugar
2 teaspoons baking soda
2 teaspoons baking powder
1 teaspoon salt
1 teaspoon ground cinnamon
4 large eggs
1 can (15 ounces) solid-pack pumpkin
1-1/2 cups canola oil
CREAM CHEESE FILLING:
1 package (8 ounces) cream cheese, softened
1/2 cup sugar
1 large egg
1 tablespoon all-purpose flour
PRALINE TOPPING:
2/3 cup chopped pecans
1/3 cup packed brown sugar
2 tablespoons sour cream

Steps:

  • Preheat oven to 400°. In a large bowl, combine first six ingredients. In another bowl, whisk eggs, pumpkin and oil. Stir into dry ingredients just until moistened. Fill greased or paper-lined muffin cups one-third full. , For filling, beat cream cheese, sugar, egg and flour until smooth. Drop by tablespoonfuls into center of each muffin. Top with remaining batter. , For topping, in a small bowl, combine pecans, brown sugar and sour cream; spoon over batter. Bake 15-18 minutes or until a toothpick inserted in the muffin comes out clean. Cool 5 minutes before removing from pans to wire racks. Serve warm. Refrigerate leftovers.

1 cup pumpkin puree
1 cup white sugar
½ cup vegetable oil
2 tablespoons vegetable oil
2 large eggs

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a muffin tin.
  • Combine pumpkin puree, 1 cup sugar, 1/2 cup plus 2 tablespoons vegetable oil, and eggs in a bowl.
  • Combine 1 1/2 cups flour, pumpkin pie spice, salt, baking soda, nutmeg, and 1/2 teaspoon cinnamon in a large bowl. Make a well in the center of the mixture; pour pumpkin mixture in and mix thoroughly. Add about 1 tablespoon batter to each muffin cup.
  • Mix 1/2 cup sugar, 5 tablespoons flour, and 1 teaspoon cinnamon together in a separate bowl. Cut in cold butter with 2 knives or pastry blender until crumb mixture resembles small peas.
  • Beat cream cheese, 1/4 cup sugar, and 2 tablespoons flour together in a bowl using an electric mixer until creamy. Add 1 tablespoon of cheesecake filling to each muffin cup. Pour in batter until muffin cups are 3/4-full. Top with crumb mixture.
  • Bake in the preheated oven until tops spring back when lightly pressed, 18 to 20 minutes.

1 cup pumpkin
2/3 cup brown sugar, packed
1 cup milk
1/2 cup vegetable oil
2 eggs
3 cups all-purpose flour

1/2 teaspoon clove
1/2 cup pecans or 1/2 cup raisins
1 (8 ounce) package cream cheese
1/2 cup sugar
2 tablespoons unbleached flour
1 egg
1/4 cup sour cream
1 teaspoon vanilla

Steps:

  • Mix all filling ingredients in a bowl.
  • Set aside while making muffin mix.
  • Works easier if you refrigerate while preparing muffin batter.
  • Heat oven to 400ºF.
  • Grease 24 muffin cups, or line with paper baking cups.
  • Beat pumpkin, brown sugar, milk, oil and eggs in a large bowl.
  • Stir in remaining ingredients, except walnuts, just until flour is moistened.
  • Fold in walnuts.
  • Fill muffin cups 2/3 full.
  • Fill a piping bag with the cream cheese mixture, and using a wide tip, push the piping tip into the muffin batter.
  • Gently squeeze the cream cheese mixture out of the piping bag.
  • Then lift the piping bag out and repeat for all 24 muffins.
  • Bake 20 to 22 minutes or until lightly golden brown.
  • Immediately remove from pan.

Celebrate autumn with this seasonal baked cheesecake. With a moreish, lightly spiced, creamy filling and crunchy ginger base, it's well worth the effort

80g butter, melted, plus extra for the tin
275g digestive or ginger biscuits
1 large egg white (use the egg yolk in the filling, below)
800g full-fat soft cheese
425g can pumpkin purée
200g light brown soft sugar
50g plain flour
5 large eggs, plus 1 large yolk
400ml whipping cream
ground cinnamon or pumpkin spice, for dusting
25g pecans, chopped
3 tbsp caramel sauce

Steps:

  • Heat the oven to 220C/200C fan/gas 7. Butter a deep 22cm loose-bottomed cake tin and line with baking parchment. Wrap the base and side of the tin with three layers of cling film, followed by three layers of foil (this helps keep it waterproof during baking). Fold a clean tea towel and put it in the base of a large roasting tin.
  • Blitz the biscuits to crumbs in a food processor. Add the melted butter and pulse to coat the crumbs. Tip the mixture into the prepared cake tin, spreading up to the side and pressing down with the back of a spoon. Bake for 10 mins. Remove from the oven, brush with the egg white and bake for another 3 mins (this will help stop the base from becoming soggy).
  • To make the filling, put the soft cheese in a bowl or the bowl of a stand mixer, and beat with an electric whisk or the mixer until loosened. Add the pumpkin purée, sugar and flour and beat again until combined. With the motor running, gradually add the eggs and egg yolk until the mixture is smooth and creamy. Pour the filling over the baked biscuit base, then sit the cake tin on the tea towel in the roasting tin. Pour a kettleful of just-boiled water into the roasting tin so the water comes halfway up the side of the cake tin.
  • Bake for 10 mins, then reduce the oven temperature to 110C/90C fan/gas ¼. Bake for a further 1 hr 30 mins until the cheesecake is set with just a slight wobble in the middle when you gently shake the tin. Turn off the oven, then open the oven door slightly and leave the cheesecake to cool inside for 2 hrs until completely cool. Remove from the oven and chill overnight.
  • Carefully remove the cold cheesecake from the tin and transfer to a cake stand or serving plate. Whip the cream to soft peaks using an electric whisk, and spoon in big dollops over the cheesecake. Dust with a little cinnamon or pumpkin spice, sprinkle over the chopped pecans and drizzle with the caramel sauce before serving.

1/4 cup vegetable oil
2 large eggs
1 cup sugar
1 teaspoon vanilla

1/2 teaspoon ground ginger
1/2 teaspoon ground nutmeg
1/8 teaspoon ground cloves
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper
8 ounces cream cheese, at room temperature
1 large egg yolk
5 tablespoons sugar
1/8 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 F (180C).
  • PUMPKIN MIXTURE:.
  • Mix canned pumpkin, oil, and sugar together, either by hand or with a mixer on low.
  • Add in eggs, one at a time, combining thoroughly after each.
  • Add vanilla.
  • Whisk together flour, baking powder, baking soda, salt, and spices.
  • Slowly add flour mixture to liquids, combining thoroughly and scraping the sides of the bowl with a spatula until well combined.
  • CREAM CHEESE MIXTURE:.
  • Mix together cream cheese, sugar, egg yolk and vanilla until well combined.
  • ASSEMBLY:.
  • Grease muffin tins or line with paper cups.
  • Fill each muffin mold with spoonfuls of pumpkin mixture (this is not explained clearly in the text but the accompanying photos look as if the muffin molds are filled to nearly full with the pumpkin mixture).
  • Add smaller spoonfuls of cream cheese mixture on top.
  • Swirl with a skewer.
  • Optional: top with crushed nuts - can also use pumpkin seeds (pepitas).
  • Bake as follows, turning the tins half way through baking times:.
  • mini muffins: 20-25 minute.
  • standard muffins: 25-30 minute.

  • Place pumpkin mixture in muffin cups about 1/2 full. Then add one tablespoon of the cream cheese mixture right in the middle of the batter. Try to keep cream cheese from touching the paper cup. Sprinkle on the streusel topping.
