SKINNY PUMPKIN CAULIFLOWER GARLIC MASH RECIPE
A simple, healthy and delicious side dish the entire family gobbled up. This is definitely a new favorite.

Steps:
- Place the cauliflower and garlic in a microwave safe dish. Cover and cook on high until tender, about 10 minutes.
- Drain and transfer to a food processor.
- Add the cream cheese, pumpkin, thyme, salt, cayenne and pepper. Process until smooth.
- Return to the microwave safe dish. Cover and cook until heated through, 1 to 3 minutes, stirring occasionally.

GARLIC MASHED CAULIFLOWER
This recipe is so easy and healthy. I love mashed potatoes, and when I started the South Beach Diet® and couldn't have them, I had to find an alternative. This is an awesome alternative, and people who hate vegetables love it. I do recommend using a large food processor for this recipe.

Steps:
- Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add cauliflower, cover, and steam until tender, about 10 minutes.
- Meanwhile, heat olive oil in a small skillet over medium heat; cook and stir garlic until softened, about 2 minutes. Remove from heat.
- Transfer half the cauliflower to a food processor; cover and blend on high. Add remaining cauliflower florets, one at a time, until vegetables are creamy. Blend in garlic, Parmesan cheese, cream cheese, salt, and black pepper.

- Place 1 in. of water in a large saucepan; add cauliflower and garlic. Bring to a boil. Reduce heat; simmer, covered, until tender, 10-15 minutes, stirring occasionally. LOW CARB BASIL AND GARLIC CAULIFLOWER MASH
When I first made this recipe, I couldn't wait to have my friends who aren't on a low carb diet try it - because you literally can't taste that it's not potatoes! And I was right! They didn't believe me that it was cauliflower and kept on trying to steal more bites of it at lunch. It's SO rich and creamy, and with a bite from the garlic and fresh basil, I guarantee you're going to be making this every night (I do!) You don't even need salt or pepper.

Steps:
- Clean and cut up cauliflower and add into a pot of boiling, salted water.
- Boil for about 15 minutes but don't let the cauliflower get too soggy. It should still be firm when you take it out.
- Drain very well.
- In a food processor add in the basil, garlic cloves (2 if you like a nice bite!), parmesan and course until well blended.
- Then add in the neufchatel cheese and the cooked cauliflower.
- Pulse until smooth and serve!
- (Optional: I like to run a knife through a few sundried tomatoes and add for taste and color - makes a very Italian low carb meal!).
CAULIFLOWER MASH WITH CARAMELIZED ONIONS AND ROASTED GARLIC
I am always looking for new and interesting recipes. This one certainly fit the bill...plus it's Weight Watcher friendly at 3 points. Bonus!!! I make this up ahead of time and gently reheat before serving.

Steps:
- Preheat oven or toaster oven to 425.
- Wrap the garlic in aluminum foil. Bake for 25 minutes or just until tender. Cool then squeeze out the garlic. Set aside.
- In a skillet, heat the oil over medium high heat and cook the onions for 5 minutes. Stir in the brown sugar, vinegar and cinnamon. Reduce the heat to medium low and cook until the onions are golden, about 10 minutes.
- Steam or broil the cauliflower just until tender about 5 - 7 minutes. Drain and place in a food processor with the stock, olive oil, salt and pepper. Puree until smooth. Stir in the onions and garlic until combined.
- Garnish with parsley.
