Fridays are pizza nights at our house. We do a lot of experimenting, so we don't have the same, old thing every week. With only five ingredients, this pizza is a snap to whip up, and it tastes just like a Reuben sandwich. -Nicole German, Hutchinson, Minnesota

1 prebaked 12-inch pizza crust
2/3 cup Thousand Island salad dressing
1/2 pound sliced deli corned beef, cut into strips
1 can (14 ounces) sauerkraut, rinsed and well drained
2 cups shredded Swiss cheese

Steps:

  • Preheat oven to 400°. Place crust on an ungreased or parchment-lined baking sheet. Spread with salad dressing. Top with corned beef, sauerkraut and cheese. Bake until cheese is melted, 12-15 minutes.

2 ½ cups unbleached all-purpose flour
1 cup rye flour
1 teaspoon salt
1 ½ cups water, divided
1 teaspoon brown sugar
1 (.25 ounce) package active dry yeast
2 tablespoons extra-virgin olive oil
½ cup all-purpose flour for kneading dough, or as needed

Steps:

  • Mix 2 1/2 cups all-purpose flour, rye flour, and salt together in a bowl.
  • Pour 1/2 cup water into a microwave-safe bowl; heat in microwave for 30 seconds. Stir brown sugar into water until dissolved; add yeast and stir. Let mixture stand until bubbling, about 10 minutes.
  • Pour yeast mixture into flour mixture.
  • Pour remaining 1 cup water into a microwave-safe bowl; heat in microwave for 30 seconds. Stir olive oil into the warm water; pour over flour mixture. Knead flour mixture, adding more all-purpose flour if dough is sticky, until dough is smooth and holds together.
  • Form dough into a ball and place in a bowl. Cover bowl with a damp towel and let rise until doubled in size, about 1 hour.
  • Punch dough down and transfer to a floured work surface. Roll or shape dough into desired shape.

2 slices pumpernickel rye bread, cut into 1/2-inch pieces (about 1 1/4 cups)
2 tablespoons butter, melted
1 1/2 cups shredded Swiss cheese (6 oz)
1 1/2 cups shredded mozzarella cheese (6 oz)
1 can (11 oz) refrigerated Pillsbury™ Thin Crust Pizza Crust
1/2 lb deli sliced corned beef, coarsely chopped
1 jar (16 oz) sauerkraut, drained well and squeezed dry
1/2 cup chopped fresh spinach
3 tablespoons Thousand Island dressing

Steps:

  • Move oven rack to middle position; heat oven to 425°F. Add bread pieces to small bowl; stir in melted butter until evenly coated. Spread evenly in ungreased 15x10x1-inch pan. Bake 5 minutes; stir. Continue baking 3 to 4 minutes or until toasted. Transfer toasted bread pieces to piece of waxed paper to cool.
  • In small bowl, mix cheeses. Spray large cookie sheet with cooking spray; unroll dough onto cookie sheet. Starting at center, press dough into 15x10-inch rectangle. Bake 6 to 8 minutes or until light golden brown.
  • Top partially baked crust with 1 1/2 cups of the cheese mixture, the corned beef and sauerkraut to within 1/2 inch of edges. Top with remaining 1 1/2 cups cheese mixture.
  • Bake 10 to 12 minutes longer or until cheese is melted and crust is deep golden brown. Top with spinach, and drizzle with dressing; sprinkle with toasted bread pieces. Cut into 4 rows by 3 rows.

1 1/2 cups water
1 teaspoon honey
1 1/2 teaspoons olive oil
1/2 teaspoon salt
2 -4 cups whole wheat flour
2 tablespoons vital wheat gluten
1 1/2 tablespoons yeast
1 teaspoon garlic powder (optional)

Steps:

  • Mix water, oil, honey and yeast.
  • Add wheat gluton, garlic powder (optional) and two cups of the flour.
  • If you are using a mixer like a Bosch, Dimension or a KitchenAid you add additional flour until the sides of the mixer come clean.
  • Knead about 7 minutes in your mixer.
  • If mixing by hand add one cup at a time until the right consistence and knead until smooth and elastic.
  • If you choose you can let the dough rise but I just divide the dough and half and roll out one on my pizza stone.
  • After you roll the dough out pierce the rolled out pizza dough with a fork.
  • Bake the pizza crust 450 degrees for about five minutes.
  • Add your toppings such as sauce and cheese or whatever you want on pizza and then put back into the oven at 450 for about 10 minutes.
  • Repeat for the second crust.

2/3 cup water (110 to 115 degrees F)
1/2 teaspoon salt
2 1/4 cups all-purpose flour or 2 1/4 cups bread flour
1 teaspoon sugar
1 teaspoon dried rosemary leaves
1/2 teaspoon dried oregano leaves
1/4 teaspoon black pepper, ground
1/4 teaspoon dried thyme leaves
2 teaspoons active dry yeast
1 tablespoon cornmeal (optional)

Steps:

  • Measure carefully, placing all ingredients except cornmeal in bread machine pan in order specified by owner manual.
  • Program dough cycle setting; Press start.
  • When dough is finished, remove dough from bread machine and let it rest 2 - 3 minutes.
  • Pat and gently stretch dough from edges until dough seems to not stretch anymore. Let rest 2-3 minutes more. Continue patting and stretching until dough is 12 - 14 inches in diameter.
  • Spray 12-14 inch pizza pan with cooking spray; Sprinkle with cornmeal, if desired.
  • Press dough into pan; Cover with towel and let stand in warm place for about 10 minutes *** I have added toppings with the dough from here and baked and it's great! But the recipe continues on -- ***
  • Position oven rack in lowest position; Preheat oven at 500°F Prick crust with fork at 2 inch intervals, Bake 4 - 5 minutes or until top is dry but not yet golden.

This was one of the better pizza crusts I have tried at home. The sourdough in this is used more for flavor than the rise.

1 1/2 cups sourdough starter
4 -5 tablespoons olive oil
1 teaspoon salt
1 1/2 cups flour (plus a little more or less to adjust consistency)

Steps:

  • Preheat oven to 500°F.
  • Mix starter, 1 tbsp olive oil, salt, and flour together in a mixing bowl until it blends and forms a ball (add more or less flour to adjust consistency; if you get it too dry just add a little more starter).
  • Allow dough to rest for about 30 minutes (don't look for it to rise, just to get the dough where it is easier to roll).
  • Roll out mixture on parchment paper or a lightly floured surface until it fits the size of your pan, turning the dough as you roll (if you want a more even circle).
  • Par-bake the crust on a pizza stone or pizza sheet for about 7 minutes, then remove from oven.
  • Before topping your pizza with any sauce, cheese, or toppings, brush the top of the crust all over with remaining olive oil (as needed), using a pastry brush (this helps keep soggy moisture out of the crust as it bakes).
  • Top as desired and cook until browned and cheese is melted.
  • If you use certain vegetables as a topping (onions are the first thing that comes to mind) you might want to cook those about halfway before topping the pizza with them (or they will be too crunchy).

3/4 cup rye flour (dark or light)
4 teaspoons cocoa
2 1/2 teaspoons instant yeast
2 teaspoons granulated sugar
2 teaspoons caraway seeds (optional)
1/2 teaspoon salt
1 1/2 tablespoons molasses
2/3 cup warm water
2 tablespoons cooking oil

Steps:

  • FOOD PROCESSOR METHOD: Put first 7 ingredients into food processor fitted with dough blade.
  • Stir molasses into warm water in small bowl. With machine running, pour molasses-water mixture and cooking oil through tube in lid. Process for 50 to 60 seconds. If dough seems sticky to remove, add about 1/2 teaspoons flour to make it easier to handle.
  • HAND METHOD: Put first 7 ingredients into medium bowl. Stir together well.
  • Add warm water, molasses and cooking oil. Mix well until dough leaves sides of bowl. Knead on lightly floured surface for 5 to 8 minutes until smooth and elastic.
  • TO COMPLETE: At this point you may choose to roll out and press in greased 12 inch pizza pan, forming rim around edge. Or place dough in large greased bowl, turning once to grease top. Cover with tea towel. Let stand in oven with light on and door closed for about 1 hour until doubled in size. Punch dough down. Roll out and press in greased 12 inch pizza pan, forming rim around edge.
