Skim off any foam with metal spoon. Immediately pour into sterilized jar. Cover and let stand up to 24 hours to check set of jam or jelly. Meanwhile, store remaining pectin mixture in refrigerator. Store jar of jam or jelly from trial batch in refrigerator.
- PREPARE REMAINDER OF BATCH: If Trial Batch sets satisfactorily, prepare remainder of batch in 6- to 8-qt. stockpot, remaking no more than 8 cups of jam or jelly at one time and using same directions as for Trial Batch with the above-listed measures of sugar and pectin mixture for each 1 cup of jam or jelly. Ladle into sterilized jars, filling to within 1/4 inch of tops. Wipe jar rims and threads. Cover with two-piece lids. Screw bands tightly.
- PROCESS JARS: Bring boiling-water canner, half full with water, to simmer. Place jars on elevated rack in canner. Lower rack into canner. (Water must cover jars by 1 to 2 inches. Add boiling water, if necessary.) Cover; bring water to gentle boil. Process 5 min. for jelly; 10 min. for jam. Remove jars and place upright on towel to cool completely. - Clean your jars in warm, soapy water, dry, and set aside.
- Measure out six cups of fresh or frozen berries. Rinse them and shake them dry. Pick through the fresh berries to find any stems or other impurities.
- Add the berries to the large stock or soup pot, and mash the berries thoroughly. You could use an immersion blender if you wanted, but it's not necessary. As the berries cook, they will soften and dissolve.
- Following the instructions on your pectin box, add the pectin, zest of one lemon, and the dash of freshly grated nutmeg. Bring the berries to a rolling boil, a boil that doesn't stop even when stirred. Be sure to stir constantly, so the berries don't burn.
- When the berries have come to a full rolling boil, add the sugar and stir.
- Once the fruit has returned to the boil, set the timer for one minute. Stir constantly, and when the timer goes off, remove the pot from the heat.
- Test the jam by pouring a small bit on a frozen spoon and see if it sets properly. If it does not, return the pot to the stove and boil for another minute. Remember, it often takes an entire day to fully set, so if it's a little runny, that's okay.
- While the jam is still liquid, transfer it to the hot jars and containers you want to store it in, and prepare it for canning in a hot water bath or freezer storage. Don't forget to wipe jar rims before you finish preserving them!

NO SUGAR ADDED BLACKBERRY JAM (WITH SPLENDA)
We have so many blackberries right now, and I love making jam, but without all the added sugar. You can't use regular pectin when cooking with Splenda, as it requires real sugar to set. However, there are low and no-sugar pectins available. I use Mrs. Wage's Lite Home Jell, but there are others. It turns out just as well, and is diabetic-friendly. I'm sure any berry could be used instead of blackberries. Another possibility is to use one-half chopped peaches and one-half blackberries for a twist on classic jam.

- Place blackberries in medium saucepan over medium heat and add lemon juice.
- Crush berries with a potato masher, or any other tool, until desired consistency.
- I like there to be big chunks of berries in my jam, so I only crush a little.
- Cook for about 5 minutes, or until the mixture comes to a full boil.
- Blend Splenda and the Lite Pectin in a small bowl, then add to the berry mixture.
- Bring back to a boil, and stir slowly until Splenda and pectin have dissolved.
- Mix well and allow to simmer one more minute.
- Fill clean, hot jars with the jam, leaving about 1/4 inch space, and seal with two-part lids.
- Store jam in refrigerator.
- After opening, jam can be stored for two weeks, refrigerated.
