Great-Grandma's Prune Roll image

Here's an old-fashioned favorite that's sure to bring back memories of home cooking. The vanilla glaze adds a perfect hint of sweetness.-Marci Kulla, Brush Prairie, Washington

Yield 2 loaves (12 slices each).

Number Of Ingredients 19

1 package (1/4 ounce) active dry yeast
1 cup warm milk (110° to 115°)
1/2 cup butter, softened
1/2 cup shortening
3 large egg yolks
3 tablespoons sugar
1 teaspoon salt
4 cups all-purpose flour
FILLING:
2 cups pitted dried plums (prunes)
1/2 cup water
1/2 cup sugar
2 tablespoons lemon juice
1/4 cup butter
1/2 teaspoon ground cinnamon
GLAZE:
1 cup confectioners' sugar
1/4 teaspoon vanilla extract
2 to 3 tablespoons water

Steps:

  • In a large bowl, dissolve yeast in warm milk. Add the butter, shortening, egg yolks, sugar and salt and 3 cups flour. Beat until smooth. Stir in enough remaining flour to form a soft dough. Cover and refrigerate overnight., In a large saucepan, cook plums in water 12-15 minutes or until liquid is absorbed. Mash; add sugar and lemon juice. Cook for 8-10 minutes over low heat until thickened. Cool and refrigerate., Turn dough onto a lightly floured surface; divide in half. Roll each portion into a 3-in. x 9-in. rectangle. Dot with butter; sprinkle with cinnamon. Spread about 1/3 cup plum filling down the center of each. , Fold a third of the dough lengthwise over filling. Fold remaining dough over top; pinch seams to seal and tuck ends under. Place seam side down in two greased 15x10x1-in. baking pans. Cover and let rise in a warm place for 2 hours or until doubled. , Bake at 350° for 25-30 minutes or until golden brown. Remove from pans to wire racks to cool. Combine the glaze ingredients; drizzle over loaves.

1 cup sorghum flour
2 teaspoons baking powder
½ teaspoon baking soda

2 eggs, beaten
1 cup dried pitted prunes, finely chopped
1 cup white sugar
1 cup lemonade
1 cup water
¼ cup dry whole-grain hot breakfast cereal

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Grease 12 muffin cups.
  • Combine all-purpose flour, sorghum flour, baking powder, baking soda, and salt in a bowl. Set aside.
  • Beat eggs in a bowl using an electric mixer until light and frothy. Add prunes, sugar, lemonade, water, and cereal to beaten eggs; mix well. Stir in flour mixture until just combined. Pour batter into the prepared muffin cups.
  • Bake in the preheated oven until a toothpick inserted into the center of a muffin comes out clean, about 20 minutes. Remove from the oven and let muffins cool completely before removing from cups.

2 cups brown sugar
2 ½ cups rolled oats
4 cups all-purpose flour
1 tablespoon baking soda
1 teaspoon baking powder
1 teaspoon salt
1 ½ teaspoons ground cinnamon
¼ cup canola oil
½ cup prune puree
2 tablespoons water
5 egg whites
1 ½ teaspoons vanilla extract
¾ cup raisins
¼ cup chopped walnuts
⅓ cup chopped dried apricots

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets or line with parchment paper.
  • In a large bowl, stir together the brown sugar, oats, flour, baking soda, baking powder, salt and cinnamon. Make a well in the center and pour in the canola oil, prune puree, water, egg whites and vanilla. Mix until well blended. Stir in the raisins, walnuts and apricots. Scoop cookies using an ice cream scoop, or roll into golf ball sized balls. Place cookies 2 inches apart onto the prepared cookie sheets and flatten to 1/2 tall with wet hands. These cookies do not flatten very much while baking.
  • In the preheated oven, bake 8 minutes for chewy cookies 10 to 12 minutes for dry cookies. Cookies will not get crisp. Remove from cookie sheets to cool on wire racks.

In an effort to find clean, healthy treats, I fell upon a few recipes about a year ago that inspired me. So I started playing around with ingredients and tweaking it each time. I finally produced something that my kids and husband love. In fact, I make a batch at least two times a week. I call them breakfast cookies because they are healthy enough to eat in the morning! No sugar added, naturally sweetened with honey and chocolate chips to lure the kids. No preservatives or additives, just wholesome goodness!

2 cups rolled oats
1 cup whole wheat pastry flour
¼ cup flax seed meal
2 ½ teaspoons ground cinnamon
½ teaspoon sea salt
1 teaspoon baking soda
1 cup honey
2 egg whites
4 teaspoons almond butter
½ teaspoon vanilla extract
4 ounces semisweet chocolate chips

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Spray 2 baking sheets with cooking spray.
  • Whisk oats, pastry flour, flax meal, cinnamon, salt, and baking soda together in a large bowl. Stir honey, egg whites, almond butter, and vanilla extract into oats mixture until dough is well-blended; mix in chocolate chips. Scoop dough into 36 balls and place on prepared baking sheets.

These cookies come from the (now deceased) mother of a friend. My copy of the recipe is in her handwriting and is very much a treasure. Most people believe that the cookie contains dates, not prunes. I don't bother to correct most. They are so good; why spoil it for them? (hehe)

1 cup butter
2 cups brown sugar, packed
2 eggs
3 1/2 cups flour
1 teaspoon baking soda
1 teaspoon nutmeg
1 teaspoon cinnamon
1/2 teaspoon clove
1/2 cup milk
2 cups chopped prunes
1 cup chopped walnuts

Steps:

  • Preheat oven to 350F.
  • Cream sugar, eggs and butter.
  • Mix flour, soda, salt and spices.
  • Add to creamed mixture.
  • Add milk, prunes and nuts.
  • Chill one hour.
  • Drop by teaspoonful on cookie sheet.
  • Bake for 10-12 minutes.

4 cups whole wheat flour
1 tablespoon baking soda
1 teaspoon baking powder

2 -3 tablespoons cinnamon
1/4 cup canola oil
5 egg whites
1 cup approximately prune puree (*)
1 cup walnuts (optional)
1/2 cup raisins (optional) or 1/2 cup craisins (optional)

Steps:

  • Preheat oven to 325°F.
  • Mix all ingredients together.
  • Drop by 1/4 cup measuring cup or large ice cream scoop on a baking sheet, about 2 inches apart.
  • Flatten to 1/2-inch tall with DAMP hands.
  • The cookies do not flatten much while baking.
  • Oven temperature is 350*.
  • Bake 8 minutes for chewy cookies, 10 minutes for dry cookies (chewy is best!).
  • Cool.
  • *I use 4 or 5 boxes of pureed baby prunes.
