This cake is most, delicious, and it has a perfect texture. You can top it with powdered sugar or icing, if you like. We don't think it needs anything else.

1 cup prune, pitted and chopped
1 teaspoon baking soda
1 cup boiling water
1 cup butter, softened
1 cup sugar
2 eggs
1 3/4 cups flour
2 teaspoons cocoa

Steps:

  • Preheat oven to 350°F.
  • Prepare bundt pan.
  • Sprinkle soda on prunes.
  • Pour boiling water over and allow to cool.
  • Cream butter and sugar in food processor.
  • Add eggs.
  • Add prune mixture and process for 15 seconds.
  • Gradually add flour sifted with cocoa.
  • Mix until blended with on/off motion.
  • Pour into pan.
  • Bake 45-55 minutes.
  • When cool, turn out.
  • Sprinkle with powdered sugar.

Decadent (Gluten-Free!) Chocolate Cake image

This chocolate cake is a perfect dessert option when a guest needs to avoid gluten: No one else at the party will have a clue that it's gluten-free! My secret weapon is Thomas Keller's "Cup4Cup" gluten-free flour. I substitute it, literally cup for cup, for the flour in most recipes, and trust me, no one can tell the difference! Happy guests and a happy host!

Number Of Ingredients 9

1 pound plus 3 ounces bittersweet chocolate, such as Lindt, broken into chunks
10 tablespoons (1 1/4 sticks) unsalted butter, cut into pieces, at room temperature
1 tablespoon Cup4Cup gluten-free flour
1 1/2 tablespoons sugar
1 teaspoon instant coffee granules
1/4 teaspoon kosher salt
4 extra-large eggs, at room temperature, separated
1/4 cup heavy cream
Vanilla or coffee ice cream, for serving

Steps:

  • Preheat the oven to 425 degrees F. Grease an 8-inch springform pan and line the bottom with parchment paper.
  • Place the one pound of chocolate in a large heatproof bowl set over a pan of simmering water and stir occasionally until the chocolate is melted. Off the heat, immediately stir in the butter, flour, sugar, coffee granules and salt with a rubber spatula. Whisk in the egg yolks until smooth.
  • Place the egg whites in the bowl of an electric mixer fitted with the whisk attachment and beat until they form soft peaks. Scrape the egg whites into the chocolate mixture and fold them in very carefully with a rubber spatula, just until combined. Scrape the mixture into the prepared pan, smooth the top and bake for 15 minutes exactly. (Be sure your oven temperature is accurate!)
  • Turn the oven off and leave the cake in the oven, leaving the door slightly ajar. Allow the cake to cool in the oven for 1 hour. The cake will sink in the middle.
  • Carefully release the sides of the pan and slide the cake onto a flat serving plate or cake stand. Place the 3 ounces of chocolate and the heavy cream in a heatproof bowl set over a pan of simmering water and heat just until the chocolate melts, stirring occasionally. Add a drop of cream if the mixture is too thick to pour. Pour the chocolate onto the sunken part of the cake, leaving the edge unfrosted. Allow to cool and serve warm or at room temperature with a scoop of ice cream.

Steps:

  • Preheat oven to 350°. Grease and flour a 10-in. fluted tube pan, using 3 tablespoons gluten-free flour., In a large bowl, whisk the remaining 2 cups flour and next 9 ingredients. In another bowl, combine water, almond milk, oil and vanilla until well blended. Gradually beat flour mixture into milk mixture., Transfer to prepared pan. Bake until a toothpick inserted in center comes out clean, 50-55 minutes. Cool in pan 15 minutes before removing to wire rack to cool completely. Dust with confectioners' sugar before serving.

I got the basic recipe for this from the Pioneer Woman. I re-created it into a gluten-free dairy-free version of her delicious cake. (I confess to a couple of other "tweaks" as well:))My whole family really enjoyed it and these are people who would never have touched it had I actually CALLED it "prune cake". What they don't know...

1 c prunes
1/2 c sugar(i used sucanat)
1/2 c honey
1 c oil(i used light olive oil-could also use melted butter)
1 tsp vanilla extract
1 c oat flour(easily make your own by grinding oats in blender or food processor)
1/2 c brown rice flour(or favorite gf flour)
1 tsp baking soda
2 tsp cinammon
1 c soured non-dairy milk-i used almond milk(could also use buttermilk)**

Steps:

  • 1. Preheat oven to 300F(yes, that low). Grease a 9x13 baking dish.
  • 2. Place the prunes in a small saucepan and cover with water. Bring to a boil and cook until soft...about 8 min. Drain the water and mash the prunes. You can just mash them up with a fork, or you can puree them, as I did. Set aside.
  • 3. Thoroughly combine the honey, sugar, eggs, oil and vanilla.
  • 4. In a separate bowl, whisk together the dry ingredients.
  • 5. Add the wet to the dry, along with the buttermilk and stir just enough to combine.(don't overmix)
  • 6. Pour batter into the pan and bake for 35-40 min. Watch carefully toward the end so as to not overbake.
  • 7. Top with your choice of glaze, powdered sugar, or sweetened whipped cream.
  • 8. **To make soured milk, put 1T of lemon juice or vinegar in a measuring cup and add your non-dairy milk to the 1c line.

250g no-soak prunes , halved
4 tbsp brandy
25g cocoa powder
100g plain chocolate (at least 70% cocoa solids), in pieces
50g butter
175g golden caster sugar
4 large egg whites
85g plain flour
1 tsp ground cinnamon
lightly whipped cream or crème fraîche , to serve

Steps:

  • Put the prunes and brandy in a small bowl and leave to steep for about 30 minutes until most of the brandy has been absorbed.
  • Preheat the oven to 190C/Gas 5/fan oven 170C. Grease a 23cm/9in loose-bottomed cake tin or springform tin. Put the cocoa, chocolate, butter and 140g/5oz of the sugar in a pan, add 100ml/31⁄2fl oz hot water and gently heat until the mixture is smooth. Leave to cool slightly.
  • Whisk the egg whites to soft peaks, then gradually whisk in the remaining sugar. Sift the flour and cinnamon over and gently fold in with a metal spoon, until almost combined. Add the chocolate mix and fold in until evenly combined.
  • Pour the mixture into the tin and arrange the prunes over the top (they will sink into the sponge during baking). Sprinkle over any remaining brandy and bake for about 30 minutes until just firm. Serve with cream or crème fraîche.
