This is a very versatile recipe. It calls for cream of mushroon soup but I make it with cream of chicken or cream of celery. It calls for mixed vegetables but I have made it with frozen corn, or green beans or peas. I use 2 boxes of stuffing mix because we like lots of stuffing.

1 (6 ounce) package Stove Top stuffing mix
1 1/2 cups water
1/4 cup butter or 1/4 cup margarine
4 boneless skinless chicken breast halves (about1-1/4 pounds)
1 cup frozen mixed vegetables
1 (10 3/4 ounce) can condensed cream of mushroom soup
1/3 cup sour cream (milk if you don't have sour cream)

Steps:

  • Set oven at 375F.
  • Mix stuffing according to instructions and set aside (do not cook)
  • Place chicken in 13X9 inch baking dish, or casserole dish.
  • Top with vegetables.
  • Mix soup and sour cream, pour over chicken.
  • Top with stuffing Bake for 45 minutes or until chicken is cooked through.
  • Make-Ahead: Assemble recipe as directed: cover.
  • Refrigerate overnight.
  • When ready to to serve, bake at 375F for 55 minutes or until chicken is done.

1.5 lbs. boneless chicken thighs
1 tablespoon garlic powder
1 teaspoon ground coriander
1/4 teaspoon ground black pepper
1/2 teaspoon dried oregano
1/4 teaspoon salt
3 tablespoons olive oil, divided
2 tablespoon minced garlic, divided
2 large russet potatoes, cut into 1/2-inch chunks
1/4 teaspoon salt
1/4 teaspoon ground pepper
1 large red pepper, diced
1/4 cup balsamic vinegar
1/2 chicken broth
2 tablespoons butter, cut into small chunks
1 tablespoon balsamic reduction
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • First, prepare chicken thighs by mixing together all of the spices. Then, generously rub each chicken thigh with the chicken seasoning making sure to coat both sides. Set aside.
  • Next, heat 2 tablespoons of olive oil in a large cast-iron skillet over medium/high heat. When the olive oil is fragrant, add the minced garlic. Let sizzle for one minute and then add chicken thighs.
  • Add chicken thighs to the pan, skin-side down, and cook for 2-3 minutes. Then, flip and cook for an additional 2-3 minutes. Remove from the pan and set aside.
  • Add another tablespoon of olive oil and another tablespoon of minced garlic to the same pan and then add the potatoes, onions, salt, and pepper. Saute for 4 minutes. Add in the red pepper and continue cooking for another 4 minutes.
  • Once the potatoes are al dente (almost all the way cooked), add the balsamic vinegar and chicken broth and use a wooden utensil to scrape the brown bits from the bottom. Then, place the chicken breast on top of the veggies and then cover. Let cook over medium/high for 7-8 minutes or until the chicken thighs reach an internal temperature of 160ºF.
  • Preheat your broiler. Then, place pads of butter on top of chicken thighs and then broil on high for 1-3 minutes or until the butter melts and the chicken browns. Remove from oven, let sit for 5 minutes and enjoy. Top with a balsamic reduction and more salt and pepper.

½ cup beer 125 ml (Note 3)

Steps:

  • Season: Pat the meat dry with paper towels. Add seasoning and rub well to coat all over.
  • Pan-fry: Heat the oil in a large pan on the stove top. Pan fry chicken legs for about 4-5 minutes per side on medium heat. Use tongs to flip the drumsticks.
  • Simmer: Add liquid to the pan. Cover with a tight-fitting lid, turn the heat down to medium-low or low, and cook slowly for 10 minutes.
  • Flip the drumsticks, cover again and cook gently for 7 to 10 minutes or until cooked through (Note 4).
  • Check: The internal temperature should be 165 degrees Fahrenheit/ 74 degrees Celsius. If you don't have a meat thermometer, cut one drumstick near the bone. The flesh should be white and juicy; there should be no traces of pink left.
