- Whisk powder drink mix, flour, baking soda, baking powder, and salt together in a medium bowl.
- Whisk applesauce, yogurt, sugar, egg, and vanilla extract in a separate large bowl. Add the flour mixture; mix until just combined. Fold in chocolate chips.

- Preheat the oven to 180C/350F. Line a muffin tin with 8 muffin liners and set aside.
- In a large mixing bowl, add your dry ingredients and mix well. Add your peanut butter and unsweetened applesauce and mix until fully combined. Fold through your chocolate chips.
- Divide the batter amongst the muffin liners and bake for 10-12 minutes, or until a skewer comes out mostly clean.
- Remove the muffins from the oven and allow them to cool for 5 minutes, before transferring to a wire rack to cool completely.

- Preheat your oven to 350 degrees F. Line a 6-cup muffin tin with liners and lightly spray them with oil.
- In a large bowl, whisk the eggs, yogurt, melted butter, stevia, and vanilla.
- Mix in the almond flour, followed by the protein powder, and finally the baking powder. Whisk until very smooth.
- Fold in the chocolate chips, reserving 24 chocolate chips to sprinkle on top of the muffins.
- Spoon the batter into the prepared muffin cups, filling them almost full. Top each muffin with 4 chocolate chip.
- Bake until a toothpick inserted in one of the muffins comes out clean, 17-19 minutes. They will not brown even when ready.

- Lightly grease muffin liners or muffin tin with cooking spray.
- In a large mixing bowl whisk together flour, protein powder, pumpkin pie spice, sweetener, salt and baking powder.
- In a separate bowl mix the pumpkin puree, coconut oil, eggs, yogurt and vanilla extract together until well combined.
- Form a well in the middle to the dry mixture and pour the wet mixture in the center.
- Fold all ingredients together with a rubber spatula. Don't over mix.
- Add 1/4-1/3 cup to each prepared muffin liner.
- Bake at 325°F for 15-20 minutes or until a toothpick comes clean when placed in the center of the muffin.

Nobody EVER believes what these are actually made of. - Preheat oven to 350 degrees and line 12 muffin cups with paper liners.
- In a large bowl combine the applesauce, tea, and cereal and leave to soak for 10 minutes. Stir occasionally. Cereal should start to feel heavy and squishy.
- In a stand mixer or with a hand mixer on a low-to-medium speed mix the cereal mixture until it is fairly mushy, much like the consistancy of mashed potatoes. If you are shorter on time or your hand mixer gets bogged down, try throwing the lot in the blender or food processor.
- Add the ground flax and mix well.
- Add the egg and vanilla and blend well.
- Add the remaining ingredients one by one leaving the cottage cheese until last. Mix well. Batter should be thick and fairly lumpy with a fibrous texture.
- Transfer batter to muffin pans and bake at 350 for about 25 minutes Adjust time according to humidity and altitude (+/- 5 minutes. As an indication, in the summer (humid/hot) in Toronto (elevation 600ft) I bake these for 22-23 minutes.
