Asparagus doesn't need any help in my opinion, but a little prosciutto and lemon juice are wonderful little touches.

- Preheat the oven to 350 degrees F (175 degrees C). Spray a baking dish with cooking spray.
- Bend asparagus spears and snap off tough ends. Wrap 3 to 4 spears with a slice of prosciutto and secure with a toothpick. Place bundles in the prepared baking dish. Drizzle some lemon juice and olive oil over the top.
- Bake in the preheated oven until asparagus is crisp-tender, 18 to 20 minutes. Turn on the broiler and broil until prosciutto is crisp, 2 to 3 minutes. Drizzle with more lemon juice after broiling.

- Heat the oven to 400°F: Line a large sheet pan with parchment paper and set aside.
- Prepare the asparagus: Rinse and pat dry the asparagus. Snap off the tough ends of the asparagus. Set asparagus spears aside. (Reserve the snapped ends for another meal, if you like.)
- Wrap the asparagus with prosciutto: Cut prosciutto slices in half down their length. Wrap each spear of asparagus with one strip of sliced prosciutto. - Preheat oven to 400 degrees.
- Trim asparagus evenly. Cut each slice of prosciutto in half lengthwise.
- Place asparagus and boiling water in a large roasting pan and cover tightly with foil.
- Stream asparagus for about 10 to 15 minutes, until tender. Remove asparagus and dry on paper towels. Drain water from roasting pan and dry.
- On a sheet of waxed paper, lay 1 strip of prosciutto. Sprinkle with about 1 t. Parmesan cheese. Place one asparagus spear at 1 end and roll up, slightly overlapping proscuitto as your roll, and covering most of the spear. Repeat with remaining asparagus, prosciutto, and Parmesan cheese.
- Place wrapped asparagus in roasting pan and roast for about 10 minutes, until prosciutto just begins to brown.

- Trim the asparagus ends and put them on a sheet pan. Add the olive oil and sprinkle with salt and pepper, to taste. Toss to coat. - Trim the ends off of the asparagus spears and place in a large bowl or pan and cover with cold water and let stand for 1 hour. This will allow the asparagus to absorb a little moisture and stay crisp & moist when grilling. Drain asparagus. Drizzle asparagus with a little olive oil and balsamic vinegar. Not too much just a little, add minced garlic and season to taste with freshly ground black pepper. Gently mix to evenly coat the asparagus. Lay a slice of prosciutto vertically (short end at the bottom) on a flat work surface. Place one seasoned asparagus spear across the middle of the prosciutto at the bottom end and roll up the asparagus tightly in the prosciutto. Repeat with remaining asparagus. Line up 4 prosciutto wrapped asparagus spears.
- Skewer the 4 spears together, 2 skewers per group of 4 wrapped asparagus.
- This will make it easier to grill the asparagus. Repeat until you have 6 skewers of 4. They end up looking like little rafts of prosciutto wrapped asparagus.
- Preheat grill to medium high 450-550° F. Cook asparagus until tender and prosciutto crisps, about 3-4 minutes per side.
- Remove from grill, drizzle with a little extra olive oil and balsamic vinegar and serve immediately with grilled Tony Roma's BBQ Baby Back Ribs.

- Preheat the oven to 400 degrees.
- If the asparagus are thick, peel them halfway up the stalks. Cut off and discard the bottom third of the asparagus. Place the asparagus in a single layer on a sheet pan, drizzle with olive oil, and sprinkle with 1 teaspoon salt and 1/2 teaspoon pepper. Roast for 10 minutes, until the stalks are just tender. Meanwhile, place the prosciutto in a single layer on another sheet pan and roast in the same oven for 5 minutes.
- Melt the butter in a medium (10-inch) saute pan over medium heat and wait until the bubbles almost subside. Crack the eggs into the skillet, keeping them separate, if possible. Sprinkle the eggs generously with salt and pepper and cook over medium heat until the whites are cooked but the yolks are still runny. Don't turn them over!
- Arrange the asparagus on 3 plates. Place 2 slices of prosciutto on top of each pile, drizzle with hollandaise, and place a fried egg on top of the prosciutto. Serve hot.
- Place the egg yolks, lemon juice, salt, black pepper, and cayenne pepper in the jar of a blender and process on low for 15 seconds. Melt the butter in a small saucepan until it is sizzling hot. Remove the small clear insert in the top of the blender. With the blender on low, slowly add the hot butter to the egg and lemon mixture and blend for 30 seconds, until the sauce is very thick. Use immediately.

PROSCIUTTO WRAPPED ASPARAGUS
I came up with this dish last night while looking for a prosciutto wrapped asparagus recipe. I prefer to roast my asparagus and I don't care for raw prosciutto, so here's my creation! I wouldn't salt the asparagus because the prosciutto is salty enough. Feel free to season the asparagus with whatever you like: thyme, rosemary, etc. This doesn't just have to be a side dish, it could be finger-food too!

- Toss asparagus in evoo, and pepper.
- Wrap prosciutto half around 2 or 3 asparagus at a time, depending on how many prosciutto slices and asparagus spears you have.
- Lay bundles seam side down on foil-lined baking sheet.
- Roast at 425 degrees for 10-15 minutes or until asparagus is done to your liking. We like it crunchy, so I roast for only 10 minutes.

I had seen this a few times before and I thought that I would give it a try. I don't like a asparagus, but with some good prosciutto, the asparagus is excellent. Prosciutto is already pretty salty, so just to be safe, I wouldn't salt the asparagus until its on your plate. Prosciutto is basically fancy Italian bacon.

- Break the ends off of the asparagus, keeping the tips.
- Wrap about 7 or 8 of the asparagus in each strip of prosciutto, repeating with each group of asparagus.
- Drizzle some olive oil into a ten-inch skillet, and turn it up to medium-high.
- Place three of the bunches into the skillet and cook for about 5 minutes on each side.
- Repeat with the rest of the bunches, drizzling in some olive oil in-between batches.
- Hit it with a little olive oil and pepper.

- Fill a large bowl with ice and cold water. Bring a large pot of lightly salted water to a boil. Add asparagus and briefly cook uncovered until just beginning to soften, about 1 minute. Drain in a colander and immediately immerse in ice water for several minutes to stop the cooking process. Drain and season with salt and pepper.
- Bunch the spears into groups of 5. Place a slice of provolone cheese over the top of each bunch. Wrap a slice of prosciutto, starting at the base of the spears, around the spear-cheese package and secure with a toothpick.
