- In 10-inch skillet, cook beef over medium-high heat 5 to 7 minutes, stirring frequently, until thoroughly cooked; drain.
- Stir in hot water, milk, sauce mix and uncooked pasta (from Hamburger Helper box), onion, frozen green beans and mushrooms. Heat to boiling, stirring occasionally.
- Reduce heat; cover and simmer 10 minutes, stirring occasionally. Remove from heat; uncover and let stand 5 minutes (sauce will thicken as it stands). Stir before serving.

- Bring a pot of water to a boil and salt liberally. Drop the pasta in the water and give it a stir. Cook according to the package instructions for al dente. Reserve 3/4 cup of the pasta cooking water and then drain the pasta.
- Meanwhile, heat a large saute pan over medium heat and add the oil. Once the oil is hot, add the lunch meat and cook until crisp. Add the garlic and cook, stirring, an additional minute. Add the beans and greens and cook, stirring, 1 minute more.
- Add the pasta and reserved pasta water to the pan and simmer for 1 minute. Remove from the heat, toss in the cheese and chile flakes if using and serve.

- Heat olive oil in a large skillet, then brown the beef with chili powder and herbs for about 5 minutes over medium heat.
- Stir in beef stock and pasta sauce and bring mixture to boil.
- Reduce the heat and simmer (partially covered) for 15 minutes, stirring occasionally.
- Add beans, corn and pepper, then cook for another 5 minutes.
- While the sauce is simmering, prepare the pasta according to the package instructions.

BEANS-AND-GREENS PASTA WITH FRIED EGGS

- Bring a large saucepan filled two-thirds full of water to a boil. Add a small handful of salt and the spaghetti. Cook for 2 minutes less than the package directions recommend.
- Meanwhile, heat a large nonstick skillet over medium heat. Spoon four 1-tablepoon rounds of Parmesan into the skillet, leaving space between each. Cook until the cheese is melted and the edges are lightly browned, about 3 minutes. Using a thin spatula, flip the rounds and cook until golden and the chips start to stiffen, 1 to 3 minutes longer. Transfer the frico to a plate to cool and crisp. Do not wipe out the skillet.
- Drain the spaghetti in a colander and rinse under cool water to prevent sticking. Wipe out the saucepan the pasta was cooked in. Place over medium heat and add the oil. Add the onion, garlic and a generous pinch each of salt and pepper. Cook over medium heat, stirring occasionally, until softened and just starting to brown, 6 to 8 minutes.
- Meanwhile, heat the same skillet over medium heat. Crack the eggs into the skillet and sprinkle with salt. Immediately reduce the heat to low and cook until the whites are firm but the yolks are still runny, 5 to 7 minutes.
- Add the broth to onion and garlic in the saucepan and bring to a simmer over medium-high heat. Stir in the chickpeas and lemon zest and juice. Add the spinach, pasta and the remaining 1/4 cup of Parmesan. Cook over medium heat, tossing gently, until the spinach is just wilted and the pasta is heated through; season with salt and pepper.
- Divide the pasta among shallow bowls. Top each with a fried egg and a crumbled frico. Serve with more Parmesan.

- Cook macaroni according to package directions. In a large skillet, cook beef and onion over medium heat until meat is no longer pink. Add garlic; cook 1 minute longer. Drain. This is a hearty, rustic dish, which you can vary according to the ingredients you have on hand. It's an adaptation of a recipe from the Moosewood Restaurant Cooks at Home, to which I've added penne, but you could use your favorite chunky pasta. This dish is also one of the few in which I prefer whole-wheat pasta. Any white beans will do, such as great northern, cannellini, navy, or butter beans. Strongly flavored greens, such as escarole, endive, collard greens, etc., contrast nicely with the creamy blandness of the beans, the sourness of the lemon, and the spark of the pepper.

- If you need to, cook the pasta until al dente.
- While the pasta cooks, sweat the garlic in the olive oil until it just starts to turn golden.
- Add the red pepper and the chopped greens, and cook until the greens are wilted and bright green.

- Prepare spaetzle according to the package directions. Keeping warm until meatballs are complete, or time it where they are done at the same time.
- In medium bowl, mix the beef, sour cream, half of the onion, and the celery.
- With moistened hands, shape the mixture into 1" meatballs; flatten slightly.
- In large skillet, heat oil over medium high heat. Cook meatballs in batches turning occasionally, until browned on all sides. Using slotted spoon, remove meatballs from skillet.

- Add flour to skillet, stirring until blended with drippings.

BAKED ZITI WITH BEEF AND GREEN BEANS
I'm not a fan of green beans but I have to say that I, as well as the entire family, really enjoy this recipe. Recipe is from the American Heart Association No Fad Diet book and the recipe called for no salt tomatoes and tomato paste or other added salt. Original recipe also called for 1 TBLS bacon bits which I omitted. Nice casserole style comfort food dish that is healthy and doesn't need any else served with it except a nice salad.

- Cook pasta according to pasta directions. Omit oil and salt if required for your dietary requirements.
- Cook beef in nonstick skillet until brown, breaking up the meat while cooking. Drain meat and run under hot water. Wipe skillet with paper towels and put beef back into skillet.
- Add onions to beef and cook until onions are soft about 3-4 minutes. Stir as needed.
- Stir in tomatoes (do not drain), broth, tomato paste, oregano and garlic. Simmer for 10 minutes.
- Mix mixture with pasta and green beans and half of the cheese.
- Sprinkle top with remaining cheese and bake uncovered at 350 for 20 to 25 minutes.
- TO FREEZE: Undercook pasta slightly. Freeze fully assembled. Fully thaw dish and let come to almost room temp before putting in 350 oven. Cook until heated through.
- Serving is approx 1.5 cups.
