PANCAKE BREAD
This is our take on the popular Trader Joe's breakfast bread. We've added a little more maple syrup and brown sugar, for a sweeter version. It keeps well in the freezer; just throw a slice in the toaster to reheat.

- Position an oven rack in the center of the oven and preheat to 350 degrees F. Thoroughly grease a 9-by-5-inch loaf pan with nonstick spray, then line with parchment, leaving a 2-inch overhang on the 2 long sides of the pan. Grease the parchment with nonstick spray.
- Using the tines of a fork, smash the cinnamon, 1 tablespoon butter, 2 tablespoons flour, 2 tablespoons brown sugar and a pinch of salt together in a small bowl until combined and buttery clumps form. Set aside until ready to bake.
- Whisk together the baking soda, baking powder, remaining 2 cups flour and 1 teaspoon salt in a medium bowl until combined. Whisk together the sour cream, maple syrup and vanilla in a small bowl until completely combined and no lumps of sour cream remain. Beat the remaining 8 tablespoons butter in a large bowl with an electric mixer on medium-high speed until light and creamy, about 3 minutes. Gradually add the remaining 1 cup brown sugar and beat until light and fluffy, 3 minutes more. Add the eggs one at a time, beating until fully incorporated after each addition; continue to beat until the mixture is light and fluffy, about 1 minute more. Reduce the speed to low. Add the dry ingredients in 3 additions, alternating with the sour cream mixture in 2 additions, beginning and ending with the dry ingredients. Scrape the batter into the prepared loaf pan and smooth the top. Sprinkle with the reserved crumb mixture.
- Bake until the top is brown and a tester inserted in the center comes out clean, 1 hour to 1 hour 10 minutes. Transfer the pan to a wire rack and let the bread cool in the pan for 30 minutes. Run a paring knife around the sides to loosen and use the parchment overhang to carefully lift the bread out of the pan. Let sit on the rack until cooled, about 1 hour more. Serve with softened butter and a drizzle of maple syrup.

Steps:
- Heat milk and pour over crumbs, and let stand for 15 minutes.
- Sift flour, baking powder and salt, and add to crumb mixture, along with egg, syrup (or honey) and melted butter.
- Beat until well blended and free lumps, and drop by tablespoons onto a well-greased griddle, allowing one side to brown before turning.
- Re-grease griddle before every batch.
- Serve hot.

THIN AND LACY PANCAKES
There are no leavening ingredients in these pancakes, so they stay super thin and flat, like a crepe.

- Whisk the milk, eggs, melted butter and vanilla in a large bowl until combined. Add the flour, sugar and salt; whisk until the batter is smooth, with no lumps.
- Heat a medium nonstick skillet over medium heat; lightly brush with butter. Add 1/4 cup batter; swirl the skillet to coat the bottom with a thin layer of the batter. Cook until set on top and lightly browned around the edge, about 1 1/2 minutes. Gently lift and flip the pancake with a rubber spatula; cook until just browned on the other side, about 15 more seconds. Transfer to a plate and repeat with the remaining batter (do not brush the skillet with more butter). Fold into quarters and serve with butter and syrup or jam.
BREAD CRUMB PANCAKES (LOW FAT AND DAIRY FREE!)
This is an adaptation of a recipe from a 1950s cookbook called "500 Delicious Dishes From Leftovers". I have been looking for good things to do with leftover bread crumbs that don't involve frying! These are a somewhat bland pancake. I like to think of them as a blank canvas for maple syrup! But with no added sweetner they can be changed as you would like. My kids gobbled them up!

- Soak the breadcrumbs in the milk and oil.
- While it is sitting mix the other ingredients together.
- Add the flour, salt, and baking powder and eggs to the milk and mix.
- Pour onto a hot griddle and cook until done, flipping once.
- Serve warm with your favorite toppings.

LACY BREAD CRUMB PANCAKES

Steps:
- Sauté bread crumbs in margarine until golden add to scalded milk. Let stand until crumbs are soft and milk has cooled. Add eggs, stirring well. Sift dry ingredients together add to milk mixture, stirring until well-blended. Allow to stand for 15 minutes before baking for ease in handling. Bake on a hot griddle, using about 3 tablespoons batter and 1/2 teaspoon margarine for frying each pancake. Cakes will be very thin and lacy, so turn carefully.Note: If you do not want your pancakes to be lacy, use a teflon skillet to cook pancakes omitting the margarine for frying.

- Add the chopped bread to a blender. Blend a few times until you get finer crumbs. Now add the milk and blend the bread into a wet mixture.
- Blend it all for about 20 seconds until you end up with a fine and thick pancake batter. Make sure that there are no lumps in the batter. Then stir in the raisins or blueberries (optional). Pour a tiny drop of oil in a small pancake pan and place the pan over medium heat until hot. Scoop a good portion of the bread batter to the hot pan (depending on how large or small you want your pancakes to be). Work in batches if you like.
- Bake the pancakes for about 3 to 4 minutes on each side. Then carefully lift the pancake using a rubber spatula to see if it's golden enough and flip it over on its uncooked side. Cook the pancake for another 3 to 4 minutes until golden. Then remove the pancake and keep it warm on a plate under tinfoil. Add another drop of oil to the hot pan and another spoonful of the pancake bread batter. Repeat this until there’s no batter left anymore. Then transfer the hot pancakes onto plates, add your favorite topping and serve hot.
