8 slices crusty sourdough bread, cut on the diagonal from a 1-pound loaf
Extra-virgin olive oil
1 clove garlic
8 thin slices fresh mozzarella
8 thin slices prosciutto
8 fresh basil leaves

Steps:

  • Preheat the broiler.
  • Brush the bread on both sides generously with oil and place on a baking sheet. Broil until golden and crispy, 2 minutes per side.
  • Remove, let cool slightly, and rub the garlic all over one side of each slice. Place a slice of cheese on each piece of bread, then top each with a slice of prosciutto. Return to the oven until the cheese is melted and golden, 2 minutes.
  • Garnish with a basil leaf and serve.

8 ounces Brie cheese
2 tablespoons honey
4 ounces thinly sliced prosciutto, cut crosswise into 1/3-inch-wide ribbons (about 6 slices),
Finely chopped fresh thyme leaves, for serving (optional)

Steps:

  • Preheat the broiler. Line a baking sheet with foil.
  • Arrange the baguette slices on the prepared baking sheet. Cut the Brie into 1/4-inch-thick slices and put 1 slice on each piece of baguette. Broil until the cheese is melted, 1 to 2 minutes.
  • Drizzle the toasts with the honey and then top with some prosciutto and a sprinkle of thyme leaves if using.

1 baguette
1/4 cup extra virgin olive oil
Salt and pepper
8 ounces Brie
4 ounces prosciutto (thinly sliced)
1/2 cup fig jam
2 cups baby arugula
1 tablespoon extra virgin olive oil
Salt and pepper

Steps:

  • Begin by diagonally slicing the baguette. Then, place the slices in a single layer on a baking sheet. Brush them with olive oil and sprinkle with salt and pepper. Place the baking sheet on the top rack of your oven and broil the bread 4-5 minutes until it is golden brown. Set aside to cool.
  • In a small bowl, gently toss together the arugula, olive oil, and a little salt and pepper.
  • Begin by spreading the toast with fig jam. Top with a slice of brie and prosciutto. Finish it off with a few pieces of arugula.

1 gluten-free (or regular) French style rustic baguette, sliced slightly on the diagonal into 1/2 inch slices (*see notes below)
olive oil
6 oz. soft or semi-soft cheese (like Port Salut or Brie)
1/3 cup fig spread
3 oz. thinly sliced prosciutto
2 cups arugula
balsamic glaze

Steps:

  • Preheat griddler to 400 F degrees.
  • Generously brush bread slices with olive oil and lay face down on the griddler for 10 minutes, or until lightly toasted and slightly golden brown.
  • Spread some cheese on each crostini. Spread about a teaspoon of fig jam on top of the cheese. Add folded pieces of prosciutto (I place half of a slice of prosciutto on each crostini). Top with several arugula leaves. Lightly drizzle top of each crostini with balsamic glaze. Eat and relax. : )

4 slices of good crusty bread (sliced 1/2 inch thick)
2-3 ounces soft goat cheese (chevre)
6-8 dried figs (sliced)
6 slices prosciutto
fresh ground pepper
1 tablespoon olive oil
1 clove garlic (sliced in half.)

Steps:

  • Brush the bread slices with the olive oil and place under the broiler in the oven until they start to get golden, a few minutes. Watch carefully that they don't burn.
  • Remove from oven. Use the flat side of the garlic to rub on to the toasted side of the bread, which will give it a garlic flavor. Discard the garlic when done.
  • Allow the bread to cool slightly, then spread goat cheese evenly on each slice of bread.
  • Cover the goat cheese with slices of dried fig.
  • Lay 1-2 pieces of prosciutto on top of the figs (I cut some in half so that each bruschetta had an even layer).
  • Sprinkle a pinch of fresh ground pepper on top.
  • Slice into thirds if desired, then serve right away.

6 slices dense Italian bread
2 large cloves garlic cut in half, lengthwise
1/2 cup olive oil
4 figs, sliced vertically into fourths
2 Tbsp. olive oil
12 thin slices prosciutto
Arugula

Steps:

  • For the bruschetta, prepare a medium-hot fire in a charcoal grill or barbecue for direct grilling.
  • Arrange the slices in a single layer on the grill rack.
  • Once they are golden crispy and a little bit charred around the edges, flip them. (3 - 4 minutes per side.)
  • Transfer bread to a platter and immediately rub the garlic halves over one side of the bread and brush lightly with olive oil.
  • Build the bruschetta by layering the arugula, prosciutto and figs.
  • Drizzle with a bit more olive oil and serve.

Steps:

  • Preheat oven to 375°.
  • Cut the baguette into 24 slices, about 1/4" thick, and brush lightly with olive oil. Arrange on a baking rack.
  • Bake at 375° for 5-6 minutes, until light golden. Let cool.
  • Spread each slice with a thin layer of fig jam. Dollop a spoonful of mascarpone in the center. Fold a slice of prosciutto in half and press into the mascarpone.

Bake the prepared bread on a baking tray at 200’C/400’F for 10 minutes or until golden brown. Cut 2 ripe figs into quarters or eighths depending on their size. Season and toss in olive oil and balsamic vinegar. Add a large handful of rocket. Drape a thin slice of prosciutto onto the bruschetta and arrange the fig and rocket on top.
