OUR FAVORITE BANANA BREAD
The Epicurious test kitchen baked up the most popular versions of banana bread on our site to discover what we like (or didn't like) about each one. Then we made our ultimate version: a sweet, nutty, and supremely moist loaf that is everything we could ever want in this classic quick bread.

Steps:
- Preheat oven to 350°F. Grease a 9x5" loaf pan with butter and dust with flour, tapping out any excess.
- Combine banana, sour cream, and vanilla in a medium bowl. Sift together flour, baking powder, baking soda, and salt in a large bowl.
- Using an electric mixer, beat butter and brown sugar on medium speed in another large bowl until light and fluffy, about 3 1/2 minutes. Add eggs one at a time and beat on medium speed until fully combined, about 1 minute each. Add banana mixture and beat until just combined, about 30 seconds. Add dry ingredients in 2 batches, beating on low after each addition and scraping down sides of bowl if necessary, until fully incorporated, about 20 seconds per batch. Fold in walnuts. Transfer batter to prepared pan and smooth top with a spatula.
- Bake, rotating halfway through, until batter is set, top is dark golden brown and starting to crack, sides are starting to pull away from pan, and a tester inserted into center of bread comes out clean, 60-65 minutes. Cool in pan on a wire rack at least 15 minutes. Run a butter knife around perimeter of pan to loosen loaf, then tap pan gently on its side until loaf releases. Transfer to a cutting board or plate and let cool completely before slicing.
OUR FAVORITE BANANA BREAD
I've had some very blah banana breads, but this one is wonderful. My husband found this one to use one day when we had a bunch of bananas that weren't getting any younger. My co-workers loved it recently when I made it for a breakfast at work. This is from a cookbook called "America's Best Recipes". In the book, the recipe is called "Banana, Sour Cream and Walnut Loaf".

Steps:
- Cream butter; gradually add sugar, beating with a mixer at medium speed.
- Combine flour with baking powder, baking soda, and salt, stirring well.
- Combine eggs, banana, and sour cream; stir well.
- Add flour to creamed mixture, alternately with banana mixture, beginning and ending with flour mixture. Mix until blended after each addition; stir in walnuts.
- Pour batter into greased and floured 9 x 5 x 3-inch loaf pan.
- Bake at 350 degrees for 1 hour and 15 minutes or until a wooden pck inserted in center comes out clean. (Shield with aluminum foil to prevent excessive browning.).
- Let cool completely on a wire rack. Yield 1 loaf.

OUR FAVORITE HEALTHY BLUEBERRY BANANA BREAD
A delicious breakfast bread that's made with white whole wheat flour and sweetened with pure maple syrup and banana, so you can feel good about eating it. You'll definitely want a second slice of this Favorite Healthy Blueberry Banana Bread, warm from the oven!

- Preheat oven to 350 degrees F.
- In a large bowl, whisk together the white whole wheat flour, baking powder, baking soda, cinnamon, and salt.
- In a medium microwave-safe bowl, melt the butter in the microwave. Add the mashed banana and stir to combine. Add the maple syrup, eggs, and vanilla. Stir until well combined.
- Pour the wet ingredients into the dry and stir until just combined, being careful not to overmix. Gently fold in the blueberries.
- Spray a loaf pan with cooking spray. Pour the batter into the pan and bake for 50-60 minutes, until a tester inserted in the center comes out clean. Let cool in the pan on a wire rack for 10 minutes; remove bread from pan to a cooling rack. Let cool for at least 20 minutes before slicing and serving. Bread is best the day it is made, but still delicious on the second and third day.

OUR FAVORITE WHEAT BREAD
This bread is the best bread I've ever eaten, hands down! I have a neighbor who always tells me when he does me a favor that this is what he wants as "payment"! Really good fresh from the oven along with "Aunt Gin's Vegetable Soup" recipe #91938.

Steps:
- Dissolve yeast in warm water.
- Combine butter, molasses, honey, and salt.
- Mix well.
- Add yeast mixture.
- Gradually add flour.
- Turn onto floured surface and knead until smooth.
- Place in greased bowl and let rise until double.
- Punch down.
- Let dough rest a few minutes.
- Shape into 2 loaves.
- Place in greased bread pans.
- Let rise about 1 hour.
- Bake at 375° for 35-40 minutes.

- Add all ingredients to bread machine pan in the order suggested by the manufacturer.
- Add 2-3tbs of water or flour if dough is too wet or dry.
- I usually use the dough cycle then form loaf, rise until doubled, and bake in the oven at 350 degrees for 25-30 minutes.

HEALTHY WHOLE WHEAT CORN BREAD
Steps:
- Preheat the oven to 350 degrees. In a large bowl, mix the cornmeal, whole wheat pastry flour, baking powder, baking soda, and salt.
- In a small bowl or cup, mix the ground flax seed and water and set aside. In another small bowl, mix the plant milk and the splash of lemon juice and let sit for a few minutes.
- In a sauce pan or a bowl in the microwave, heat the almond butter until it is thin and pourable.
- Add the almond butter, ground flax seed mixture, plant milk mixture, and liquid stevia or maple syrup to the large bowl and mix until combined.
- Pour into a greased or nonstick 8x8 square pan or 8 inch cake pan and bake for about 30 minutes or until a toothpick in the center comes out clean.

- I usually put the water in the microwave for about a minute to warm it up. You don’t want it too hot, just enough to warm up the bowl and the rest of the ingredients so the yeast will be nice and happy.
- Mix it all together! You may have to adjust the amount of flour and water depending on how it feels. You want it to be a little bit sticky still, but not wet.
- Turn the dough onto a floured surface and kneed your little heart out. Due to the grain in the whole wheat, it won’t be a smooth dough but you should feel the gluten start to do it’s thing.

- Take the time to proof your yeast first. In a bowl, pour the water and the sugar. Mix until dissolved. Add the yeast. Again, mix until dissolved. Set it aside for 10 minutes.
