Number Of Ingredients 9

2 teaspoons canola oil
4 ounces thin slices prosciutto, chopped
2 large sweet onions, chopped (4 cups)
1 carton (8 ounces) egg substitute
2-1/2 cups 2% milk
1/4 teaspoon ground mustard
1/8 teaspoon pepper
8 cups cubed French bread
1-1/2 cups shredded Gruyere or Swiss cheese, divided

Steps:

  • In a large skillet, heat oil over medium-high heat. Add prosciutto; cook and stir until crisp. Remove from pan with a slotted spoon. Add onions to the same pan; cook and stir until tender., In a large bowl, whisk egg substitute, milk, mustard and pepper. Stir in bread and onions. Reserve 2 tablespoons cooked prosciutto for topping; stir remaining prosciutto into bread mixture. , Transfer half of the mixture to a greased 13x9-in. baking dish; sprinkle with half of the cheese. Top with remaining bread mixture. Separately cover and refrigerate strata and reserved prosciutto overnight., Preheat oven to 350°. Remove strata from refrigerator while oven heats. Bake, uncovered, 20 minutes. Sprinkle with remaining cheese; top with reserved prosciutto. Bake 15-20 minutes longer or until a knife inserted in the center comes out clean. Let stand 5-10 minutes before serving.

Marked vegetarian because it tastes amazing even when you take out the Prosciutto. I LOVE THIS DISH. I have a series of recipes I got out of what I thought would be a useless magazine full of ho-hum recipes that I was given for free at the Check out stand at my local grocery store. The magazine is called "Dan's real food Spring 2008" Turns out, they are some of the best recipes I have ever come upon. This is one of those recipes. By the way, I made this one time on a camping trip inside a dutch oven and it just came out WONDERFULLY. Seriously, one of my favorite recipes ever.

18 slices firm white bread
8 ounces thinly sliced prosciutto
8 ounces crumbled feta cheese
4 ounces grated provolone cheese (mozzarella is fine too)
1/4 cup finely minced green onion
4 ounces fresh spinach
1/2 cup finely julienned basil
5 extra-large eggs
2 cups half-and-half
1/2 teaspoon hot sauce (the recipe says Sriracha, but the system wouldn't let me type it in. I actually use Valentina.)
3 tablespoons unsalted butter (salted is fined too. Preferred if not using prosciutto)

Steps:

  • You can assemble the night before so that the layers of bread, cheese and spinach soak up the egg-and-milk base, but it is not necessary.
  • Remove crusts from bread. Spray an 11x7 inch glass baking dish with cooking spray. Cover bottom of dish with layer of bread.
  • Use half of the prosciutto to cover bread in an even layer. Sprinkle with half of the feta and half of the provolone. Sprinkle with half of the green onions, half spinach, and half basil.
  • Repeat with second layer of bread and the remaining ingredients in the same order.
  • Cut remaining bread into 1/4 inch cubes and scatter evenly on top.
  • Beat together eggs, half-and-half, and hot sauce until well blended. Pour mixture over layers. Press down firmly with a spatula. Melt butter and drizzle over top.
  • Cover and refrigerate overnight or for at least 5 hours (optional).
  • Preheat oven to 375 Farenheit. Uncover dish and bake until golden, about 1 hour.

This is a Sarah Foster recipe. You could double this recipe to fill an entire 12 cup muffin tin. Fontina would also be great! You might even try a pesto before putting in the egg. Remember prosciutto is salty. Extra pies are delicious the next day. And if you substitute in pre cooked bacon, go ahead.

6 slices prosciutto, thinly sliced
6 large eggs
1 cup spinach, loosely chopped and packed
1/4 cup cheddar cheese, shredded
12 cherry tomatoes, halved
sea salt
black pepper

Steps:

  • Preheat the oven to 350 degrees.
  • Lightly spray a 6 cup muffin tin.
  • Line the muffin cups with the prosciutto slices, pressing the prosciutto into the bottom and sides of each cup (the prosciutto slices will overlap each other on top of the tin).
  • Crack 1 egg into each cup.
  • Sprinkle the spinach over the eggs, then the Cheddar cheese, dividing them evenly.
  • Top each serving with 4 tomato halves and season with salt and pepper. Bake the pies for 18 to 20 minutes, until the egg whites are firm and the yolks are starting to set but are still soft in the center. Timing might vary due to oven differences and preferences.
  • Set them aside to cool for about 5 minutes.
  • Run a knife around the edges of each cup to loosen, then lift the pies out of the tin. Serve warm or at room temperature.

MAKE-AHEAD CHEESY SPINACH AND EGG STRATA



Make-Ahead Cheesy Spinach and Egg Strata image

If you are a spinach lover, then you will have to try this recipe! I have made this many times to serve at a brunch get together (I always make two of these to serve at a brunch!) Plan ahead this dish needs to chill for a minimum of 8 hours or up to 24 hours or until the custard is absorbed in the bread. You can really use any cheese that you wish I find that either asiago or Gruyere are the best! If you don't want a strong spinach taste then use only one box of frozen spinach. To save time make the spinach/mushroom filling up to 1 day in advance and refrigerate, just warm slightly in the microwave before layering in the strata. You will LOVE this!

2 (10 ounce) boxes frozen spinach (well drained, squeeze out any excess moisture with hands)
6 tablespoons butter
1 lb fresh button mushroom, sliced (can use more or less)
1 large onion, finely chopped
2 tablespoons fresh minced garlic (or to taste)
2 teaspoons seasoning salt (or use white salt)
1/4 teaspoon cayenne pepper (or to taste or use black pepper)
1/4 teaspoon nutmeg
8 cups French bread (cut into 1-inch cubes)
3 cups asiago cheese (or to taste) or 3 cups gruyere cheese, shredded (or to taste)
1 cup grated parmesan cheese
1 cup half-and-half cream
1 3/4 cups full-fat milk (or use 2-3/4 cups all half and half cream)
9 large eggs
2 tablespoons Dijon mustard

Steps:

  • Squeeze out as much of the moisture as possible from the spinach, then chop finely.
  • Heat butter in a large skillet over medium heat.
  • Add in the fresh mushrooms and saute for about 10-12 minutes, or until they loose their moisture completely; remove to a bowl.
  • Add in onion with nutmeg, salt and cayenne and saute for 5 minutes (adding in the garlic the last few minutes) then stir in the chopped spinach; saute for 2 minutes.
  • Transfer the mixture to the bowl with the mushrooms; mix to combine slightly.
  • Butter a 4-quart casserole dish.
  • Spread 1/3 of the cubed bread into the prepared baking dish.
  • Top with 1/3 of the spinach/mushroom mixture.
  • Sprinkle with 1/3 of BOTH cheeses.
  • Repeat layering twice (ending with the cheeses).
  • In a bowl whisk together half and half, milk, eggs, mustard.
  • Pour the milk mixture evenly over the strata in the baking dish.
  • Cover with plastic and chill for about 8 hours or up to 24 hours or until the bread is absorbed in the milk.
  • When ready to bake, let the dish stay out at room temperature for about 40 minutes before baking.
  • Set oven to 350°F (second-lowest oven rack).
  • Bake uncovered for about 45 minutes, or until puffed and golden brown.
  • Delicious!
