CINNAMON COOKIES

Cinnamon Cookies image

These are one of the best cookies I have ever eaten. They make up easily, and they disappear fast. I make these every year when we put up our Christmas Tree. I serve them with hot Cocoa while we decorate our tree. I swear the cookies are anticipated as much as the tree!

CINNAMON SHORTBREAD COOKIES

Cinnamon Shortbread Cookies image

My ex M-I-L had this recipe scribbled on the flyleaf of one of her family cookbooks and no one knew what it was, one year we made it and it was her mom's infamous shortbread cookies. I thought I'd lost the recipe when I divorced, but I found it online (with food processor instructions no less!) and wanted to share. I like bigger cookies so I don't get as many out of the recipe, some friends can get 5 dozen out of theirs. Prep time includes chilling, and it can vary.

Yield Makes about 6 dozen

Number Of Ingredients 14

For cookies:
2 cups sifted all-purpose flour (sift before measuring)
2 1/2 teaspoons cinnamon
1/2 teaspoon salt
1 cup walnuts (4 ounces)
1 cup granulated sugar
1 stick (1/2 cup) unsalted butter, softened
2 large eggs, beaten
For icing and decoration:
2 teaspoons powdered egg whites
2 tablespoons warm water
1 1/4 cups sifted confectioners sugar (sift before measuring)
1 drop of fresh lemon juice
1/2 cup finely chopped walnuts (2 ounces)

Steps:

  • Make cookies:
  • Sift together flour, cinnamon, and salt.
  • Pulse walnuts with 2 tablespoons sugar in a food processor until finely ground (be careful not to grind to a paste).
  • Beat together butter and remaining sugar with an electric mixer until pale and fluffy. Beat in eggs until combined. Mix in flour mixture and nuts at low speed just until blended. Form dough into a disk and chill, wrapped in plastic wrap, until firm, about 1 hour.
  • Preheat oven to 325°F.
  • Keeping remaining dough chilled, roll out half of dough 1/4 inch thick on a lightly floured surface. Cut out cookies with a 2 1/2- to 3-inch floured cookie cutter. Chill scraps.
  • Arrange cookies 1 inch apart on greased baking sheets.
  • Bake cookies in batches in middle of oven until firm but not browned, about 10 minutes. Transfer cookies to a rack to cool. Make cookies with remaining dough in same manner, rerolling scraps no more than twice.
  • Ice and decorate cookies:
  • Whisk together powdered egg whites and water, then stir in confectioners sugar and lemon juice until smooth and spreadable.
  • Spread a thin layer of icing on 1 cookie with a metal spatula or knife and sprinkle lightly with walnuts. (Use your imagination and decorate more elaborately if you like.) Decorate remaining cookies in same manner. Let icing harden, about 1 hour, before storing cookies.

CHILI-CINNAMON COOKIES

Chili-Cinnamon Cookies image

Ready for something different, something addictive? You like it spicy and you like cookies not overhelming sweet? Are you looking for a surprising treat? Then try these cookies. They have a wonderful texture. On the first bite you will have the taste of buttery cinnamon with a delicate crunch. Then of roasted almonds and hatzel nuts and then the highlight, the pepperiness of cayenne (or chili). I use cayenne for these cookies and I like this spicy, almost hot ending taste of these cookies. The shape of these cookies is in Germany known for cookies called "Kipferl" (shaped like a "C" or like a "half-moon"). The cookies will rise just a very little during baking. For the texture of the cookies, it is important that the cookies are "cooled", so that the butter inside is firm enough. If you like it a bit sweeter dust the cookies with powdered sugar (instead of dutch processed cacao). Hope you will enjoy this different treat as much as I do.

Time 1h40m

Yield 40 cookies

Number Of Ingredients 10

1 1/4 cups flour
1/2 cup powdered sugar (sifted)
1/2 cup ground hazelnuts
1 1/2 teaspoons cinnamon
1/4 teaspoon ground cayenne pepper or 1/2 teaspoon ground dried chile
1 pinch salt
1/4 cup ground almonds
3 1/2 ounces butter
1 egg yolk
Dutch-processed cocoa powder

Steps:

  • If you are using dried chili crunch them as fine as possible and measure then 1/2 teaspoon.
  • In the bowl of your food processor add the first six ingredients.
  • Heat a pan over medium high heat and roast the grounded almonds until golden. Immediately remove from heat and add to the other ingredients.
  • Cut butter into pieces and add to flour mixture. Add egg yolk.
  • Mix in your food processor until dough is formed. Take dough out of the bowl, knead once or twice and then form a roll (this will make it easier to divide dough later).
  • Wrap dough roll into cling film a put it into fridge for 30 minutes. Line out baking tray(s) with parchment paper.
  • Take dough out of the fridge and cut roll into 10 slices. Cut each slice into 4 pieces. You should now have 40 little dough pieces.
  • Roll each pice into a roll of about 3 to 4 inches in lenght. The middle of each roll should be a bit thicker and let the roll taper off towards the ends. Put the rolls onto the baking tray forming a "C" (half-moon shape).
  • Put the baking tray(s) in a cold place for about 30 to 60 minutes.
  • Meanwhile preheat oven (390 F, 200 C).
  • Bake the cookies for 10 minutes. Let them cool completely on a cooling rack. Dust them with (unsweetened) cacao powder.
  • NOTE: cooking time is given for one baking tray. Time to make includes 60 minutes for cooling the dough.
  • NOTE: I put the cookies on the baking tray into the fridge for 30 minutes. It is important to keep the formed cookies for 30 minutes in a cold place. The butter in the cookies has to be cooled completely.
  • NOTE: these cookies are very spicy. If you don't like them spicy reduce the amount of cayenne pepper / dried chili pepper.

  • Put the butter in a saucepan and allow it to melt over medium heat. Once it’s almost fully melted, add the milk and water. Bring mixture to a simmer, then remove from heat and let cool to 125 degrees F. Add the vanilla.
  • Meanwhile, combine 1 cup of the flour, yeast, sugar, egg and salt in a bowl. Add the warm milk mixture, then add remaining flour 1/4 cup at a time, stirring to make a soft, slightly sticky dough.
  • Put the ball of dough into a food processor fitted with a kneading hook and let the processor knead the dough until smooth and elastic. Note: The processor works pretty quickly. My dough is done in less than 3 minutes. Check dough, scraping it a bit, every 40 seconds or so to make sure it’s not too warm from friction of processor.
  • Scrape the dough into a well-oiled bowl and roll it around so it’s coated with a thin layer of oil. Cover and let rise until doubled in bulk (about 45 minutes with the quick rising yeast).
