PRIZE-WINNING CHILI
I won a chili cook-off with this recipe in Tennessee in 1996. My family and friends all love this chili. It is requested for all family get-togethers. Great dish for a chilly day.

Steps:
- Heat olive oil in a large stock pot over medium heat; cook and stir onion, bell pepper, and jalapeno pepper until onion is translucent, about 10 minutes. Add sausage and ground beef; continue to cook and stir until meat is browned and crumbly, about 7 minutes. Drain and discard grease.
- Season meat mixture with chili powder, cayenne pepper, and salt. Add pinto beans, tomatoes, and water and bring to a simmer over medium heat. Reduce heat to medium-low and continue to simmer for 1 hour.

Steps:
- Heat olive oil in a large stockpot over medium heat; cook and stir onion and green bell pepper in hot oil until tender, 5 to 10 minutes. Add sausage and ground beef to onion mixture; cook and stir until browned and crumbly, about 10 minutes. Drain excess grease.
- Mix pinto beans, diced tomatoes, water, chili powder, jalapeno pepper, cayenne pepper, and salt into sausage-beef mixture; bring to a boil. Reduce heat to medium-low and simmer until flavors have blended, about 1 hour.

AWARD WINNING CHILI CON CARNE
This chili recipe is many years in the making and I have won several awards with it. I think you'll be pleased with it. You can alter it to your own spice levels to achieve your perfect chili. Garnish with shredded mozzarella cheese, and use corn chips for dipping.

Steps:
- Heat oil in a large saucepan over medium heat. Cook green pepper, and onion, until softened. Add the ground beef and cook until browned. Crumble over bouillon cubes, and stir in wine; continue to cook for a few minutes. Stir in chopped tomatoes, garlic, and tomato paste. Season with paprika, chili powder, cayenne pepper, basil, oregano, and parsley. Stir in salt and pepper.
- Bring to a boil over high heat. Reduce heat to medium low. Cover, and simmer for 90 minutes, stirring occasionally.
- Stir in kidney beans, and hot pepper sauce. You can add the reserved tomato juice if more liquid is needed. Continue to simmer for an additional 30 minutes.
- In a small bowl, whisk together the flour, corn meal, and water until smooth. Stir into chili, and cook for a further 10 minutes, or until chili has thickened up.

AWARD WINNING CHILI
My husband and I created this recipe together. He won a chili cook-off with this recipe at work. We always use venison, but you can use ground beef or turkey.

Steps:
- In a medium Dutch oven over medium-high heat add the olive oil. Add the ground meat and cook, breaking up into pieces, until browned. Add the onions, bell pepper and jalapeno and cook until softened. Drain excess grease.
- Add the tomatoes, tomato sauce, cumin, chili powder, salt, cayenne, paprika and 1 cup water. Mix to combine.
- Add the kidney beans and black beans, mix and bring to a simmer. Cover and cook for 1-2 hours.
- Serve with desired toppings.

- In a 13 x 9 pan, melt butter.
- Beat eggs lightly in a large bowl.
- Add flour and baking powder; combine.
- In another bowl, combine remaining ingredients, except salsa.
- Combine cheese mixture to the flour; blend well.
- Pour batter into pan and bake at 400°F for 14 minutes.
- Reduce heat to 350°F and bake 35-40 minutes longer. Cut into appetizer size squares and serve warm with salsa (May also be served as a light lunch).

- In a Dutch Oven, turn to medium-high heat. Add the diced bacon and cook until crisp. Remove bacon from the pot and set aside. Add the tablespoon of olive oil and the diced onions, bell and jalapeno peppers and cook until softened, about 5 minutes. Add minced garlic, and cook until fragrant, about 2 minutes.
- Leaving the veggies in the pot, add the ground beef and sausage, and cook until browned. Add a pinch of salt. Add the bacon back to the pot or use it as a topping for the chili.
- Leaving the fat in the pot, add the tomato sauce, drained diced tomatoes, BUSH’S® Red and Kidney Chili Beans (no need to drain the Chili Beans – it adds extra flavor!), chili seasoning, beer, dark brown sugar, and salt and pepper to taste and stir. Cover with lid and allow to simmer for at least 1 ½ hours.

- In a large saucepan, cover the beans with 2 inches of water and let soak overnight. Drain the beans, return them to the saucepan and add enough water to cover by 2 inches. Bring to a boil over moderate heat and simmer until tender, about 1 hour. Drain the beans.
- Meanwhile, put the chicken breasts in a saucepan and add the chicken stock; if necessary, add a little water to cover the chicken. Bring to a simmer and cook over low heat until the chicken is just opaque throughout, about 15 minutes. Transfer the breasts to a plate to cool, then shred. Boil the stock over high heat until reduced to 2 1/2 cups, about 4 minutes.
- Heat the oil in a large saucepan. Add the onions and cook over moderate heat, stirring, until translucent, about 4 minutes. Add the canned chiles, garlic, cumin and cayenne and cook, stirring, for 3 minutes. Add the beans, chicken, reduced stock and 4 cups of the cheese and simmer for 10 minutes. Season with salt.
- Ladle the chili into large bowls and top each serving with 1/4 cup of cheese and a generous sprinkling of the chopped jalapeños. Serve the sour cream and the remaining cheese and chiles on the side.
