PRETZEL HOT DOG BUNS

1 cup milk
1/4 cup light brown sugar
2 tablespoons honey
1 packet active dry yeast
2 tablespoons unsalted butter
2 small cloves garlic, grated
3 cups all-purpose flour, plus more for dusting
1 cup bread flour
1/2 cup baking soda
Pretzel salt or coarse ground sea salt, for sprinkling

Steps:

  • In a small saucepan, heat the milk, 1/2 cup water, sugar and honey to 105 to 110 degrees F. Add to the bowl of a stand mixer. Sprinkle the yeast over the water mixture and wait for at least 10 to 15 minutes until the yeast blooms.
  • In a separate saucepan over medium heat, add the butter and garlic and cook until the butter is melted and the garlic is fragrant, 2 to 3 minutes.
  • Combine the all-purpose flour and bread flour in a mixing bowl.
  • Add the flour mixture to the bowl with the blooming yeast, and then add in the melted butter and garlic mixture. Mix on medium speed until the dough has come together and is smooth and elastic in texture and pulling away from the sides of the bowl, 5 to 7 minutes.
  • Line 2 baking sheets with silicone mats. Turn the dough out onto a lightly floured cutting board and form into a ball. Cut into 4 equal pieces, and then cut those in half to form 8 equal pieces. Using your hands, roll each piece into a ball and place onto a prepared baking sheet. Cover with a dish cloth and let them rest in a warm place for 12 to 15 minutes.
  • Once rested, lightly dust your work surface again and roll the balls into 7-inch logs. Place onto the other prepared baking sheet, cover, place back in the warm spot and let rest for an additional 30 minutes.
  • Preheat the oven to 425 degrees F. Place one oven rack high and one low. Line 2 more baking sheets with silicone mats or parchment paper.
  • In a large pot, bring 8 cups water to a boil, and then add the baking soda. In batches, place the dough in the water and cook for 30 seconds on each side.
  • Using a slotted spatula, remove the logs and place onto the prepared baking sheets. Sprinkle the logs with pretzel salt as they come out of the water, to ensure the salt sticks. Then cut 3 diagonal slits on top of the bread, not too deep.
  • Bake for 10 to 13 minutes, rotating between the top and bottom racks of the oven halfway through the cooking.

This is one of those recipes that is not hard to make...but makes you feel a great sense of accomplishment when looking at the finished product. You can either make them into a tight knot, pretzel shape or simple bun shape. The recipe is a combined effort from Thorsten, his German baker friend, and myself. The dough also makes great pretzels. Hope you enjoy it as much as we did! Scoring the top with an X has some cool results as well! BEER PAIRING: Live Oak Pilz, a Bohemian-style pilsner, is perfect with these rolls!

1 1/3 cups warm water
2 tablespoons warm milk
2 1/2 teaspoons active dry yeast
1/3 cup light brown sugar

4 cups all-purpose flour
kosher salt or pretzel salt
2 quarts cold water
baking soda (1/2 cup)

Steps:

  • In a small bowl if using a bread machine, or in the bowl of a standing electric mixer fitted with a dough hook, mix a 1/3 cup of the warm water (105-115 degrees) with the yeast and let stand until foamy.
  • Add the remaining cup of warm water along with milk, sugar & melted butter and swirl to dissolve the sugar. (If using a bread machine add mixture to bread machine at this point and continue).
  • Add flour and mix on dough cycle or med-low speed.
  • Remove dough from bread machine once it forms a nice a firm, pliable dough ball.
  • Add more flour if necessary.
  • Turn dough out onto a lightly floured table and knead for 2 minutes.
  • Roll into a 2 foot long log and cut into 12 even pieces.
  • Cover dough with plastic and a damp cloth and let sit for 10 minutes.
  • Pat dough into rolls or form knots and arrange on a lightly floured surface about an inch apart and cover with lightly oiled plastic wrap.
  • Let the pretzels rest for an additional 30 minutes.
  • Preheat the oven to 425°.
  • Lightly oil 2 baking sheets.
  • In a large stockpot, bring the cold water to a rolling boil and add baking soda.
  • Drop two rolls into the boiling water and boil for no more then 30 seconds, turning once.
  • Carefully remove with tongs or slotted spoon and hold above pot and let drain.
  • Sprinkle lightly with salt.
  • Repeat with the remaining rolls.
  • Arrange rolls on the oiled baking sheets and bake on the upper and middle racks of the oven for about 8-10 minutes, or until browned all over; shift pans from top to bottom and back to front halfway through, for even baking.
  • Let rolls cool on the baking sheets for about 5 minutes, then transfer them to a rack.
  • Serve warm or at room temperature.

Steps:

  • For the dough: Combine the milk and 6 tablespoons of the butter in a pot. Stir in the sugar. Scald the milk mixture slightly by heating it almost to a boil. Turn off the heat and let cool until just warm to the touch, about 10 minutes.
  • Add the flour, yeast, baking soda and salt to the milk mixture in the pot and stir until well combined. Cover the pot with a dish towel and place in a warm spot in the kitchen. Let the dough rise for an hour or so. It should roughly double in size.
  • Divide the dough into 12 equal parts and roll each into a neat ball. Place the balls on a baking sheet sprayed with cooking spray. Cover with a dish towel and set aside in a warm place to rise for another 20 minutes.
  • For the water bath: While the dough is rising, bring a pot with 10 cups of water to a boil. Stir in the baking soda.
  • Preheat the oven to 425 degrees F. Melt the remaining 2 tablespoons butter in a small pot or in the microwave.
  • Working in 3 batches of 4 rolls each, drop the dough balls into the water and boil for 30 seconds. Transfer the boiled balls to a baking sheet lined with paper towels to drain.
  • To bake the rolls: Transfer the rolls to a parchment-lined baking sheet. Using a sharp knife, make a small "x" in the top of each roll. Brush the tops with the melted butter and sprinkle with sea salt. Bake until deep brown, about 15 minutes.

1 cup warm water
3 tablespoons brown sugar
1 teaspoon salt
1/4 cup oil
3 cups bread flour
1 tablespoon yeast
6 cups water
3 tablespoons baking soda
1 egg white
1 tablespoon kosher salt

Steps:

  • Mix together brown sugar, salt, and yeast in big bowl.
  • Mix together oil and water and add this to the sugar and yeast mix.
  • Add the flour and mix to a nice doughy (not sticky) consistency. Knead with mixer a few minutes.
  • Divide dough into 12 balls and shape into rolls (I like long oval shapes) and let rise on greased foil cover sheet for 20-30 minute until nice and puffy. (I raise mine in a warmed oven--preheat to lowest setting then turn OFF, THEN put in the dough to rise).
  • Meanwhile, bring water and baking soda to a SIMMER in a wide pan with straight sides and preheat oven to 375.
  • Place 4 rolls in the water and simmer 1 minute then flip and simmer 1 minute more.
  • Drain and place on cookie sheet. Repeat with remaining rolls.
  • Brush rolls with egg white and sprinkle generously with kosher salt. Slash decoratively with a SHARP blade.
  • Bake until 'pretzel' brown, about 12-15 minutes.

1/4 cup baking soda
1 egg
1 tablespoon water
1 (8 ounce) can crescent rolls
4 teaspoons sesame
1/2 teaspoon kosher salt (coarse)

Steps:

  • Heat oven to 400 degrees F. Spray cookie sheet with cooking spray.
  • In 5-quart Dutch oven, heat 10 cups water and the baking soda to boiling over high heat.
  • In small bowl, beat egg and 1 tablespoon water with fork until well mixed. Set aside.
  • Unroll dough onto work surface and separate into 8 triangles. Starting at shortest side of each triangle and stretching dough slightly, roll up loosely to opposite point. Bring ends of dough together and pinch lightly.
  • Place rolls, 2 at a time, in boiling soda water and cook 30 seconds. With slotted spoon, remove from water and place on paper towel. Repeat with remaining rolls.
  • Lightly brush tops with egg mixture. Sprinkle each with sesame seed and pinch of salt.
  • Using metal pancake turner, carefully transfer rolls to cookie sheet. If necessary, reshape rolls into pretzel shape.
  • Bake until deep golden brown (11-13 minutes). Immediately remove from cookie sheet.

1 teaspoon salt
3 tablespoons vegetable oil
2 teaspoons active dry yeast
2 1/2 cups milk, slightly warmed
1 cup water, slightly warmed
7 cups water
1 tablespoon salt

Steps:

  • In a small container, mix yeast with warmed milk and let rest for 10 minutes.
  • Whisk 5 3/4 cups of flour and teaspoon of salt in a large bowl.
  • Add canola oil and warmed water to yeast mixture.
  • Pour into bowl with flour and salt.
  • Knead in the bowl until dough is mostly smooth. Only add more flour if your dough cannot be easily handled. The dough will be somewhat stiff.
  • Cover the bowl with a dish towel and put in a warm place to rise for one hour.
  • Punch down dough and knead in bowl for one minute.

1 package active dry yeast
1/4 cup vegetable oil, plus more for greasing
3 cups bread flour, plus more for dusting and kneading (see Cook's Note)

1/4 cup baking soda (see Cook's Note)
1/4 cup coarse sea salt or pretzel salt

Steps:

  • Pour the water into the bowl of a stand mixer fitted with a hook attachment. Sprinkle in the sugar and yeast and mix to dissolve. Let the mixture rest until it bubbles, 4 to 6 minutes. Stir in the oil.
  • Sift the flour and kosher salt into the bowl and mix on the lowest speed until the dough comes together. Increase the speed to medium and mix until the dough is elastic and smooth, 6 to 8 minutes.
  • Coat a large bowl lightly with oil. Form the dough into a ball and place it in the prepared bowl, gently turning the dough until the surface is coated with oil. Cover the bowl with a clean, damp towel and let the dough rest in a warm place until it rises and increases about 1 1/2 times in size, 35 to 40 minutes.
  • Line a baking sheet with parchment paper and brush the paper with oil. Set aside.
  • Lightly flour a work surface. Scrape the dough onto the floured surface. Knead the dough until it is smooth and no longer sticky, 6 to 8 minutes, dusting with more flour as needed. The dough should spring back when you press it lightly with a finger. Roll the dough into a log and divide it into 8 equal pieces, then form each piece into a round. Place the rounds on the prepared baking sheet, leaving enough room between them to allow them to double in size. Snip an X across the top of each roll using kitchen scissors. Cover the rolls with a clean, damp towel and set in a warm place to rise for 20 minutes.
  • Position racks in the top and bottom of the oven and preheat the oven to 425 degrees F. Line a baking sheet with a dry towel.
  • Bring 8 cups of water to a boil in a deep, straight-sided skillet. Stir in the baking soda. Gently transfer 4 of the rolls, top-side down, to the boiling water using a slotted spatula or spoon and boil for 1 minute. Then flip and boil the rolls for 1 minute more. Transfer the rolls to the towel-lined baking sheet using the slotted spatula or spoon. Repeat with the remaining rolls.
  • Line the baking sheet the rolls rose on with a fresh sheet of parchment paper and brush the parchment with oil. Transfer the rolls to the prepared sheet and sprinkle generously with the coarse sea salt.
  • Bake the rolls on the top shelf of the oven until deep golden brown, 10 to 12 minutes. Switch the rolls to the bottom shelf and continue baking until cooked through, about 2 minutes longer.
  • Let the rolls rest 10 minutes on the baking sheet before serving.

You may not need to use all the flour depending on many different factors (see the note) - add the flour until a soft dough is formed that clears the sides of the bowl. It is similar in texture to bagel dough and should be slightly more stiff and less sticky than, say, roll dough, but definitely still soft and not overfloured.
  • Transfer the dough to a lightly greased bowl, cover it with greased plastic wrap and let it rise until doubled in size (1-2 hours).
  • Portion the dough into 16 pieces and roll each piece of dough into a lovely little round ball. Here's a great tutorial on how to do that quickly and efficiently.
  • Lay out the rolls on lightly greased parchment or a lightly floured counter. Make sure the dough balls won't stick! Let them rest for 15-20 minutes.

Place in a large greased bowl, cover tightly with plastic wrap, and allow to rise in a warm environment for 1 hour or until nearly doubled in size. (Tip: I preheat my oven to 200°F (93°C), turn it off, place the dough inside and shut the oven. This is the warm environment.)
  • Once risen, punch dough down to release any air bubbles. Turn out onto a lightly floured surface and, with a sharp knife or pizza cutter, cut dough into 1/3 cup sections. You should have about 12. Shape into balls.
