1 tablespoon canola oil
1 medium onion, chopped
3 garlic cloves, minced
1 pound boneless skinless chicken breasts
1 carton (32 ounces) reduced-sodium chicken broth
1 can (15 ounces) black beans, rinsed and drained
1 can (14 ounces) fire-roasted diced tomatoes
1-1/2 cups frozen corn
1 tablespoon chili powder
1 tablespoon ground cumin
1 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 cup minced fresh cilantro
Optional: Crumbled tortilla chips, chopped avocado, jalapeno peppers and lime wedges

Steps:

  • Select saute setting on a 6-qt. electric pressure cooker and adjust for high heat; add oil. Add onion; cook and stir 6-8 minutes or until tender. Add garlic; cook 1 minute longer. Add the next 10 ingredients. Stir. Lock lid; close pressure-release valve. , Adjust to pressure-cook on high for 8 minutes. Allow pressure to naturally release for 12 minutes, then quick-release any remaining pressure., Remove chicken from the pressure cooker. Shred with 2 forks; return to pressure cooker. Stir in cilantro. If desired, serve with toppings.

2 tablespoons vegetable oil
2 large onions, chopped
1 (12 ounce) jar roasted red peppers, drained and chopped
1 (4 ounce) can roasted jalapeno peppers, diced
1 clove garlic, minced
1 tablespoon ground black pepper
salt to taste
4 cups diced tomatoes
1 (32 fluid ounce) container chicken stock
1 cup heavy whipping cream
1 cup chopped fresh cilantro
1 (14.5 ounce) package tortilla chips
1 cup sour cream
1 (8 ounce) package shredded queso quesadilla (white Mexican cheese)

Steps:

  • Heat vegetable oil in pressure cooker over medium heat; cook and stir onions until slightly softened, 5 to 8 minutes. Add red peppers, jalapeno peppers, garlic, black pepper, and salt; cook until garlic is fragrant and onions are softened, about 5 more minutes. Stir tomatoes into onion mixture and cook until warmed, about 1 minute.
  • Transfer tomato mixture to a blender. Cover and hold lid down; pulse a few times before leaving on to blend. Puree in batches until smooth. Transfer tomato puree back to pressure cooker.
  • Stir chicken stock into tomato puree; cook and stir over high heat until just boiling, about 5 minutes. Cover and lock pressure cooker. Cook over high heat until steam begins to build and steadily escapes. Lower heat to medium-low; cook for 20 more minutes. Remove from heat; allow all the steam to naturally release. Remove lid.
  • Bring soup to a boil; stir in cream and cilantro. Remove from heat. Let cool for 5 minutes.
  • Crush tortilla chips into serving bowls; pour soup over tortilla chips. Top with sour cream and queso quesadilla.

Steps:

  • Preheat oven to 350°F. Spray 6-quart electric multicooker pot with avocado oil spray. Select sauté function and heat until hot. Add corn to pot and cook undisturbed 5 minutes, until it starts to brown. Stir in spices and cook until fragrant, about 1 minute. Turn multicooker off.
  • Add onion, bell pepper, garlic, chicken thighs, undrained tomatoes, black beans, broth, salt and pepper to pot. Lock lid in place and close pressure release valve. Select high pressure cook function and set timer for 12 minutes.
  • Meanwhile, spray a large baking sheet with avocado oil spray. Spread tortilla strips out in a single layer on baking sheet. Spray top of tortilla strips lightly with avocado oil spray. Bake until crisp and lightly browned, 14 to 16 minutes, turning once.
  • When time is up on the multicooker, carefully open the valve to quick release steam. Carefully remove lid. Use tongs to shred chicken into bite-sized pieces. Serve chicken tortilla soup with avocado, cilantro and tortilla strips.

1 tablespoon olive oil
2 chicken breasts, boneless, skinless, uncooked, thinly sliced
8 cups chicken broth
2 carrots, peeled and chopped
1 (15 ounce) can diced tomatoes (undrained)
1 (3 1/2 ounce) can diced green chilies
1 (12 ounce) can corn (drained)
2 potatoes, peeled and cubed
1/2 cup white rice, uncooked
tortilla chips
shredded cheese

Steps:

  • Pre-heat rice cooker. Place Olive Oil, Onions and Garlic in the inner pot and saute for 3-5 minutes, stirring frequently. Add chicken and brown on all sides, stirring occassionally. Add broth, carrots, tomatoes, chiles, corn and rice. Close rice cooker and cook until rice is done (approximately 20 minutes).
  • To serve:.
  • Break up a handful of chips into bowl. Ladle soup over top and sprinkle with cheese. Makes 8 servings.

3 garlic cloves
1½ lbs. (750 g) boneless, skinless chicken breasts
2 cups (500 mL) frozen corn
2 tbsp (30 mL) Carnitas Slow Cooker Seasoning
1 tsp (5 mL) salt
1 can (14.5 oz./411 g) fire-roasted diced tomatoes
1 can (15 oz./425 g) reduced-sodium black beans, drained and rinsed
1 large zucchini
4 cups (1 L) low-sodium chicken broth
Optional: lime, sour cream or Greek yogurt, cilantro, green onion, avocado, tortilla strips

Steps:

  • Select Sauté and add olive oil to the pressure cooker pot. When oil is hot, add the onion and cook, stirring occasionally until the onion is tender, about 5 minutes. Add the garlic and cook for an additional minute.
  • Add remaining ingredients, except beans and corn. Lock lid in place, select High Pressure and 8 minutes cook time. (It will take about 20 minutes to come to pressure because there is so much liquid.)
  • When the cook time ends, turn off pressure cooker. Allow the pressure to release naturally for 10 minutes, then use a quick pressure release.
  • Remove chicken breasts from the pressure cooking pot and dice or shred. Return chicken to the soup and stir in black beans and corn.

  • Heat the olive oil in the pressure cooker on its “Sauté” setting. Add the ground beef, onions, and salt, and sauté for about 3 minutes, breaking up the meat with a spoon or spatula. It’s fine if the meat does not fully cook through.
  • Stir in the chicken broth, diced tomatoes, and their liquid, black beans, kidney beans, green chiles, corn, spices, and salt.
  • Secure the lid on the pressure cooker and make sure it is set to its “Sealing” position. Select the “Soup,” “Manual” or “Pressure Cook” setting, and set the time to 20 minutes at high pressure. The pot will take about 15 minutes to come up to pressure, and then the cooking time will begin.
  • When the cooking program ends, let the pressure release naturally for at least 15 minutes. At this point, either perform a quick pressure release by moving the pressure vent to its “Venting” position or let the pressure release naturally the rest of the way.
