JAPANESE TSUME AND TARE - NITSUME OR THICK, SWEET EEL SAUCE
This recipe is for the dark sweet sauce served over many types of sushi in restaurants, especially seafood and fish. Tsume is traditionally made with the reduced stock of boiled conger eels (anago). This abbreviated recipe tastes great and takes much less cooking time than the traditional method of preparation. Dashi is a soup and cooking stock considered fundamental to Japanese cooking. Dashi forms the base for Miso Soup, clear broth soups, Japanese noodle broths, and many Japanese simmering liquids. Most people use granulated or liquid instant substitutes found in Asian Markets. A small pastry brush or rubber spatula will allow you to apply this sauce thinly and evenly over your sushi or other choices. American sushi chefs use Tsume to dress everything from avocado-based rolls to tamago. This recipe will keep in the refrigerator for several months. Heat to ambient temperature (or warmer) before use.

- If the flounder is not cleaned, remove the guts and scales. Cut the head and the tail off and discard. Cut the flounder in half, perpendicular to the back bone (note 1).
- Make a cross incision on the right side of the fish (brown side) where the flesh is the thickest (see the photo in post). If you are using narrow strips of flounder cutlet, incision is not required.
- Add all the Simmering Sauce ingredients to a shallow saucepan or a frying pan that can just fit the flounder pieces without overlapping.

- Combine the dashi, sake, mirin, soy sauce, sugar, and ginger in a medium skillet and bring to a boil over high heat. Add the fish skin side up to the skillet in a single layer and cover with a wooden or foil otoshibuta. Reduce the heat to maintain a simmer and cook for about 12 minutes. The fish will be fully cooked after about 8 minutes; the longer cooking time is meant to infuse the fish with the flavor of the cooking liquid.
- Remove the otoshibuta, carefully transfer the fish to a plate, and increase the heat to high to bring the liquid to a boil. Add the tofu to the skillet and cook, flipping once, until the liquid reduces slightly and its flavor intensifies, 8 to 10 minutes.
- Return the fish to the skillet and continue cooking, basting constantly with a spoon, for a minute or two. Serve right away in shallow bowls with some of the cooking liquid. Or even better, remove from the heat, cover with the otoshibuta or partially with a lid, and let the fish sit for 10 to 15 minutes, so the fish absorbs even more flavor from the sauce.
