SLOW COOKER VENISON CACCIATORE



Slow Cooker Venison Cacciatore image

A delicious slow cooker stew using deer meat/venison. This was caught in the woods of Rome, N.Y, in 2015. My husband hunts, I create the recipe. This is Italian style and melt in your mouth tender stew style comfort food.

Number Of Ingredients 14

1 lb sliced mushrooms (I used more like 2 lbs we love mushrooms)
2 lbs Venison Stew Meat, steak, veal, chicken, pork or any other wild game meats
1 28-ounce can Whole Canned Plum Tomatoes
1 small 12 ounces canned diced tomatoes
4 cloves garlic
2 teaspoons granulated garlic
1 tablespoon sugar
1/4 cup olive oil
salt pepper
4 sliced and cleaned Italian peppers or bell peppers
cayenne pepper optional to taste
1/2 cup Cabernet wine or more if you like
Options: cooked pasta, rice, hard-crusted bread when serving
Garnish: Grated Pecorino Romano Cheese, red pepper flakes

Steps:

  • Combine all ingredients in your slow cooker.
  • Set i on low 8 hours to 12 hours or high 6 to 8 hours.
  • Check it once in an awhile to ensure there is enough liquid.
  • Add more if needed 1/4 cup of broth, wine, water or beer.
  • The venison will melt in your mouth tender.
  • We serve this over rice or pasta, or hard-crusted Italian bread with lots of grated cheese on top and red pepper flakes..

2 onions, chopped
2 green peppers, sliced
1 red pepper, sliced
1 lb bacon
2 lbs venison, cubed about 1-inch
1 (16 ounce) can crushed tomatoes
1 (16 ounce) can peeled tomatoes
2 lbs penne pasta

Steps:

  • cook bacon remove from pan discard grease.
  • fry onions in olive oil until translucent remove from pan.
  • fry peppers until soft remove from pan.
  • fry venison until evenly brown.
  • once every thing is cooked add into deep frying pan using same oil you fried with.
  • add crushed tomatoes.
  • add peeled tomatoes that you crush by hand.
  • cook on high until boils then lower
  • cook for one half hour.

Tender roast beef cooked cacciatore-style in your slow cooker with lots of bell peppers, onions, and mushrooms in a hearty red wine tomato sauce. Serve with garlic mashed potatoes and garlic bread.

2 tablespoons olive oil
1 (2 1/2 pound) boneless beef chuck roast
3 tablespoons chopped garlic
salt and ground black pepper to taste
2 onions, cut into wedges and sliced
1 (28 ounce) can crushed tomatoes
1 (15 ounce) can diced tomatoes
1 ½ cups water
1 green bell pepper, coarsely chopped
1 cup quartered fresh mushrooms
1 cup dry red wine (such as Cabernet or Merlot)
1 tablespoon white sugar
1 teaspoon fennel seed
1 teaspoon Italian seasoning
1 teaspoon dried thyme

Steps:

  • Heat olive oil in a large skillet over medium-high heat. Add roast and garlic; season roast with salt and pepper. Cook roast until browned on all sides, about 5 minutes.
  • Transfer roast and garlic to a slow cooker; add onions, crushed tomatoes, diced tomatoes, water, green bell pepper, mushrooms, red wine, sugar, fennel seed, Italian seasoning, and thyme.
  • Cook on Low for 6 hours.
