Delicious spiced rubbed chicken cooked to tender and juicy perfection. It gets glazed with the most amazing honey lime sauce and is sure to be a huge hit!

1 1/2 pounds boneless skinless chicken thighs (chicken breasts will also work)
2 Tablespoons olive oil
1 teaspoon ground cumin
1 teaspoon chili powder
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 cup honey
Juice of one lime
zest of one lime
2 Tablespoons soy sauce
1 garlic clove (minced)

Steps:

  • In a medium sized skillet over medium heat add olive oil. In a small bowl combine cumin, chili powder, salt and pepper. Rub on chicken and place in skillet. Cook for 3-4 minutes on each side or until chicken is no longer pink and 165 degrees. Remove chicken and set aside on plate.
  • Add honey, lime juice and zest, soy sauce and garlic. Bring to a boil over medium high heat and reduce heat and whisk until it starts to thicken. About 2 minutes.
  • Add the chicken back to the skillet and coat in the sauce. Garnish with lime wedges if desired.

2 1/2 pounds (1.13kg) boneless skinless thighs, trimmed and cut into 2 inch/5.1cm pieces, Note 1
Garnish: 2 tablespoons chopped cilantro or parsley; lime wedges
3 tablespoon soy sauce (low sodium is good if you have)
6 tablespoon honey or maple syrup
1 teaspoon lime zest (from one lime)
3 tablespoon fresh lime juice (from 1 1/2 to 2 limes)
4 garlic cloves, minced or grated ((or 1/2 tsp garlic powder))
1 1/2 tablespoon grated fresh ginger ((about 1 1/2 inch of fresh ginger))
1 tablespoon vegetable oil
1 1/2 tablespoon Sriracha sauce for pretty spicy ((use more or less to taste))
1 1/4 teaspoon kosher salt
1/2 teaspoon cornstarch (to thicken to glaze consistency) (Optional)

Steps:

  • MAKE MARINADE/SAUCE: Whisk all marinade ingredients together in a small bowl. Or blend them in a food processor.
  • MARINATE CHICKEN: Pour half the marinade (about 1/2 cup) into a sealed zipper bag or container and add chicken. Marinate for 30 minutes at room temperature or 6-12 hours in fridge. Tip: if marinating overnight, I leave out lime juice and increase zest so it doesn't 'cook' the chicken. Glaze: The reserved 1/2 cup marinade will be used for glazing/basting. (Optional but suggested: Mix 1/2 teaspoon cornstarch into reserved marinade and microwave for 1 minute to make a glaze-like consistency. I do this). Set aside.
  • PREPARE GRILL: Scrape grill and spray grill with oil (or dip paper towel in oil and rub on grill). Heat grill to medium-high heat. If using wood skewers, soak them for 30 minutes beforehand to avoid burning. Note 3.
  • GRILL CHICKEN SKEWERS: Skewer marinated chicken pieces onto skewers and pat dry (important). Discard the marinade used for marinating. Lightly spray chicken with oil to further avoid sticking. Grill on all sides until chicken cooks to a golden brown (you'll need to turn chicken a couple of times), for 9-12 minutes in total (depending on thickness and how tightly packed the skewers are), basting once or twice with the honey lime glaze. Instant thermometer will read 160F/71C. Rest chicken, loosely covered for 5 minutes.
  • SERVE: If you have any leftover sauce, drizzle it on the chicken or warm it in microwave for 30 seconds and pass it around. Sprinkle chicken with cilantro or parsley and serve with lime wedges if desired. Serve hot or at room temperature.

1/3 cup KRAFT Zesty Lime Vinaigrette Dressing
2 Tbsp. honey
6 chicken drumsticks (1-1/2 lb.)
4 slices OSCAR MAYER Bacon, chopped
1 cup long-grain white rice
1 yellow pepper, chopped
2 cups water
3/4 cup frozen peas
1 green onion, sliced

Steps:

  • Heat oven to 400ºF.
  • Mix dressing and honey until blended. Pour half over chicken in shallow dish. Refrigerate 15 min.
  • Place chicken in single layer on foil-lined rimmed baking pan. Bake 30 to 35 min. or until done (165°F), turning and brushing with remaining dressing mixture every 10 min.
  • Meanwhile, cook bacon in medium skillet until crisp. Remove bacon from skillet with slotted spoon, reserving 1 Tbsp. drippings in skillet. Drain bacon on paper towels. Add rice and peppers to reserved drippings in skillet; cook and stir on medium heat 3 min. Add water; bring to boil. Cover; simmer 20 min., stirring in peas to the rice mixture for the last 5 min. Steps:

  • Heat oven to 375°F Arrange chicken, skin side-up, in cingle layer in shallow casserole dish or 11x7-inch baking dish.

1 small bunch fresh thyme
Juice of 2 limes
4 cloves garlic, smashed
3 jalapeno peppers, halved, seeded and thinly sliced
1/2 cup extra-virgin olive oil
2 tablespoons honey
Kosher salt
3 half chickens (about 1 1/2 pounds each)
3 tablespoons unsalted butter, cut into pieces

Steps:

  • Strip the thyme leaves from the stems; combine the leaves and stems with the lime juice, garlic, jalapenos, olive oil, honey and 1 teaspoon salt in a large bowl. Add the chicken and turn to coat. Cover and marinate 30 minutes to 1 hour at room temperature.
  • Position a rack in the upper third of the oven; preheat to 425 degrees F. Put the chicken, skin-side up, on a foil-lined rimmed baking sheet and tuck the wing tips underneath. Pour the marinade on top, season with salt and dot with the butter.
  • Roast the chicken, basting with the pan juices halfway through, until the skin is amber and a thermometer inserted into the thigh registers 160 degrees F, about 45 minutes. Transfer to a platter and top with the pan juices.

This recipe came from Weber and the original recipe used Cornish Hens but DH used a fryer that we had in the freezer. We loved the distinctive flavor of the lime and rosemary. If you want to use Cornish Hens you will need two for this recipe.

1/4 cup fresh lime juice
3 tablespoons vegetable oil
4 tablespoons honey
2 teaspoons dried thyme leaves
3 teaspoons dried rosemary leaves
1 teaspoon garlic, minced
1 teaspoon kosher salt
1/2 teaspoon paprika
1/2 teaspoon black pepper
1 (3 1/2-4 lb) roasting chickens (3 1/2 to 4 1/2 pounds)
cajun seasoning, such as tony chacherie

Steps:

  • Combine all marinade ingredients, mixing well.
  • Remove the giblets from the fryer.
  • Rinse the fryer, inside and out, under cold running water.
  • Pat dry with paper towels.
  • Using a sharp cleaver or poultry shears split the fryer in half.
  • Place the split fryer in a large zippered bag and pour marinade over meat.
  • Press the air out of the bag and seal.
  • Place the bag in the refrigerator for a minimum of 3 hours, turning occasionally.
  • Remove the bag from the refrigerator and take the halves out and discard the marinade.
  • Season the halves well with Tony Chacherie seasoning.
  • Preheat gas grill on high.
  • Turn fire down to low and sear skin-side of chicken over low direct heat.
  • After seared turn one burner to high and turn the fire off completely on other burner.
  • Place halves on the burner with no heat and cook on indirect high heat for 1 1/2 hours (350-375 degrees).

2 chicken breasts
half a lemon
1 tbsp honey
1 tbsp dark soy sauce

Steps:

  • Put 2 chicken breasts, skin side up in a small baking dish and season.
  • Squeeze the lemon into a bowl and stir in the honey and soy sauce. Spoon the mixture over the chicken, then tuck the squeezed-out half of lemon between the pieces (this will moisten and add flavour to the chicken).
  • Roast the chicken breasts in a baking dish, uncovered, for 30-35 minutes in a preheated oven (190C/gas 5/fan oven 170C). Cook until done and richly glazed, basting with the juices at least twice. To check if they are done, prod the chicken with your finger - if it's still a bit soft, give it a bit longer.
  • Serve with salad and potatoes roasted with herbs and garlic.

1 chicken
1 onion, quartered
3 garlic cloves, peeled
1 lime, quartered
1/2 lime, juice of
1 teaspoon paprika
2 tablespoons honey
1 tablespoon olive oil
salt and pepper, to taste

Steps:

  • Preheat your oven to 200°C/400°F/Gas 6.
  • Rinse your chicken well, inside and out and dry thoroughly with a paper towel.
  • Stuff the cavity with the quartered lime, onion and the garlic.
  • Rub the olive oil all over the chicken and season with salt and pepper.
  • Place the chicken in a roasting tin and place in the middle of your preheated oven.
  • Roasting time depends on size of chicken.
  • Roast for 20 mins per lb plus an extra 20 minutes for the whole chicken (example: 4 lb chicken: 4x20+20=1hr40mins).
  • Using the juices from the roasting tin, baste the chicken every 30 mins to stop it from drying out.
  • While the chicken is roasting mix the lime juice, honey and parika in a small bowl.
  • 30 mins before your chicken will be done take it out of the oven and brush with the lime& honey glaze.
  • Return to the oven to finish roasting, at the end of the roasting time make sure all juices run clear by inserting a skewer into the thickest part of the thigh.

2 pounds bone-in, skin-on chicken thighs or drumsticks (6 to 8 pieces)

2 tablespoons neutral oil, such as grapeseed or canola
1 pound shallots (about 8), peeled and halved, quartered if large

Uncover, raise the heat to high and cook until the sauce is thickened, about 2 minutes more.
  • Toss the shallots with the sherry vinegar and parsley, and season with salt. Serve the chicken with the dressed shallots and spoon the pan sauce over everything.
